Steps:
- Prepare mason jars, lids and rings; if you are unsure on how to do this, consult a preserving manual.
- In a heavy saucepan, begin to brown ground beef, then add onion and garlic; continue cooking until meat is browned.
- Drain off fat.
- In a mixing bowl, stir together the brown sugar and mustard, then add remaining ingredients to brown sugar mixture.
- Stir into beef and heat thoroughly.
- Now, carefully spoon this hot mixture into hot jars, leaving a one-inch headspace.
- Remove air bubbles with a (nonmetallic) spatula and wipe the rims of the jars clean of any food residue.
- Place lid on jar with sealing compound next to glass; screw band down evenly and firmly just until a point of resistance is met; this is called being fingertip-tight.
- Process for 75 minutes at 10 pounds pressure.

- Prepare 3 pints, lids, and rings. Sterilize the jars and keep them in the hot water till its time for processing. Make sure to fill your pressure canner with the recommended amount of water and bring it to a simmer.
- In a large stainless steel Cook beef and onion over medium heat and drain. Add all ingredients and bring to a boil, stirring often. Continue, reducing heat for 20 minutes. Remove from heat.
- On a dishtowel place your hot jars and using your funnel in each jar using a ladle then fill the jars leaving 1” headspace. Remove air bubbles and refill to the proper headspace if necessary.
- Make sure your rack is on the bottom of the canner and place the jars in the pressure canner. Lock the lid and turn up the heat bring the canner to a boil.

- Prepare Pressure Cooker: Heat up your pressure cooker over medium high heat (Instant Pot: press Sauté button and Adjust button once to Sauté More function). Ensure your pot is as hot as it can be (Instant Pot: wait until indicator says HOT).
- Brown Ground Beef: Season ground beef generously with kosher salt and freshly ground black pepper. Add 1 tbsp (15ml) olive oil in pressure cooker. Ensure to coat oil over whole bottom of the pot.Add ground beef in pressure cooker. The ground beef will begin to release moisture. At the 5-minute mark, drain & discard the ground beef juice.Allow ground beef to brown. Stir occasionally until they are slightly crisped and browned (~5 – 7 minutes).

- Deglaze: Add 1 tbsp (12.5g) brown sugar, 1 tbsp (15ml) regular soy sauce, 1 tbsp (15ml) Worcestershire sauce, and ½ cup (125ml) water, then fully deglaze bottom of the pot by scrubbing all the flavorful brown bits with a wooden spoon. Mix the brown bits with the liquid mixture.
