- Start by browning the ground beef in a large pot over medium-high heat. Drain off the fat.
- Add in the green peppers and onions. Stir, and then add 1 cup water, the ketchup and garlic. Stir it around to combine, and then add the brown sugar, chili powder, dry mustard, red pepper flakes, and hot sauce, Worcestershire, salt and pepper to taste. Stir to combine, and then cover and simmer over medium-low heat, about 20 minutes.
- To serve, spread the rolls with the butter and brown them on a griddle or in a skillet. Spoon a good amount of the meat mixture onto the bottom roll, and then top with the other half. Serve with chips, salad or just enjoy it by itself.
CLASSIC SLOPPY JOES

- In a large skillet, heat oil over medium-high heat. Add onion, bell pepper, celery, and garlic; season with salt and pepper. Cook, stirring frequently, until vegetables are softened, 5 to 7 minutes.
- Add ground beef to skillet. Cook, breaking up meat with a wooden spoon, until it is no longer pink, 6 to 8 minutes.
- Stir tomato sauce, ketchup, and Worcestershire sauce into beef mixture in skillet. Simmer until thickened, stirring occasionally, 6 to 8 minutes.
- Season the mixture with more salt and pepper, as desired. Spoon onto buns, and serve immediately.
HOMEMADE SLOPPY JOES

- Place ground beef and onion in a large skillet. Turn heat to medium and cook and stir the mixture constantly until the beef is browned and forms small crumbles, about 10 minutes.
- Stir in garlic and green bell pepper; cook and stir until softened, 2 to 3 minutes. Add 1 cup water and stir, scraping the pan to dissolve any brown flavor bits from the bottom of the skillet.
- Mix in ketchup, Worcestershire sauce, brown sugar, Dijon mustard, salt, and black pepper. Add 1 more cup water and return mixture to a simmer. Reduce heat to low and simmer, stirring occasionally, until the liquid has evaporated and the mixture is thick, about 40 minutes.
- Season with salt , black pepper, and cayenne pepper to taste.

SLOPPY JOES

- In a saucepan over low heat combine the sauce ingredients. Season to taste with salt and pepper. Mix well, and simmer while preparing the meat.
- Heat a heavy nonstick or cast-iron skillet, at least 10 inches in diameter, over medium-high heat. Add the ground sirloin, and saute, stirring occasionally, for 4 to 5 minutes, or until the meat is no longer pink. Turn the meat into a strainer or colander lined with paper towels, allowing the fat to drain off.
- Add the onion to the pan, and sauté, stirring frequently, for about 5 minutes, or until the onion is translucent. Return the meat to the pan, and add the sauce. Heat for 3 minutes, stirring occasionally. Taste and season with salt, pepper or more hot sauce, if desired. Spoon 1/2 cup of the mixture over each bun. Serve immediately.

I love sloppy joes just not out of the can. It's fall here in Michigan and getting out my recipes for weekly meal planning. These juicy morsels will feed even the pickiest eaters. My youngest son will not eat anyone else's sloppy joes. The flavors melt together to create a perfect harmony. Perfect for tailgating.

- 1. Brown meat in a dutch oven pan, drain and set aside. In the drippings cook the onion and green peppers until soft and drain. Discard oil in pan.
- 2. Combine meat, onions and green peppers with other ingredients. Pour into the dutch oven. Bake covered 325 degrees for 1 1/2 hours stirring every 1/2 hour.
- 3. Serve over hamburger buns.

If the sauce is too thick, gradually stir in a small amount of warm water or beef broth. If the sauce is too thin, gradually sift in a small amount of flour while stirring vigorously to thicken.

- Spread the onion, celery, and bell pepper evenly on the baking sheet. Drizzle the olive oil over them and drop the tablespoon of tomato sauce on the baking sheet. Lightly toss the veggies with the tomato paste (the oil will help it spread around) until they are evenly coated.
- Carefully slice off the very top of the garlic so that most of the cloves are exposed. Drizzle a 1/2 tablespoon of olive oil over the top and then wrap the garlic in tin foil. Place it on the baking sheet with the rest of the veggies. Roast all of it for about 40 minutes or so. Remove them from the oven to cool.
- While the veggies are cooling, heat another tablespoon of olive oil in a large pan over medium heat. Add the ground beef and Italian seasoning and cook, breaking the beef apart with a spatula, until browned. Add the red wine and boil until most of the liquid has evaporated.
