Provided by Mel Lockcuff

Categories     Dinner Ideas     Main Dish - Casserole

Time 1h30m

Number Of Ingredients 11

1 tablespoon bacon grease ((or olive oil))
1 clove garlic (minced)
1/2 medium yellow onion (minced)
1 pound ground beef
1/4 cup ketchup
1 tablespoon Worcestershire sauce
1/2 tablespoon light brown sugar
2 cups frozen corn
4 cups mashed potatoes
3/4 cup cheddar cheese (shredded)
3/4 cup Monterey Jack cheese (shredded)

Steps:

  • Pre-heat the oven to 350° F.
  • Heat the bacon grease, or olive oil, in a large skillet over medium heat.
  • Then add in the garlic and sauté for 1-2 minutes.
  • Add the onion in with the garlic and sauté for another 2-3 minutes.
  • Add the ground beef into the skillet, stirring the onions and garlic into the meat. Cook on medium heat for 15 to 20 minutes, or until the meat is well cooked. Drain off any excess oil when the meat has finished cooking.
  • Mix the ketchup, Worcestershire sauce, and brown sugar into the meat, stirring until combined. Let this mixture simmer for at least 5 minutes.
  • Layer the sloppy joe meat in the bottom of the skillet or a 9x13 baking dish.
  • Next add a layer of corn.
  • Now add a good thick layer of mashed potatoes.
  • Finally, add the shredded cheese as the top layer.
  • Bake the casserole at 350° F for 20 to 30 minutes, or until the mixture is heated through and bubbly, and the cheese is melted.

SLOPPY JOE PIE

Sloppy Joe Pie image

Not really a pie, more of a casserole, but yummy on a cold night. Have been making this for so long I couldnt begin to tell you where I found the recipe. I think originally on the Busquick box and later changed to using cresents for a time saver. Nonetheless, it has been well tested by my 5 children, now all grown. When this was...

Provided by Julia Miller

Categories     Savory Pies

Time 1h5m

Number Of Ingredients 9

1 Tbsp vegetable oil
1 1/2 lb ground beef
1/2 green pepper - diced
1/2 onion - medium sized to preference - diced
1 can(s) sloppy joe sauce
1 can(s) chili beans
2 can(s) crescent rolls - the bigger ones work best
1-2 c mexican blend shredded cheese
1 pinch sesame seeds or poppy seeds

Steps:

  • 1. In a medium sauté pan, put in your oil and the ground beef. Sauté on medium to brown the beef, chopping it up and stirring as it browns. When it's half way browned add the onion and the green pepper. Continue sautéing until no more pink shows in the meat.
  • 2. Add the sloppy Joe sauce and the beans. Stir until heated through.
  • 3. While this is heating, get out an 11 X 13 ovenproof pan. Open one can of the crescent rolls and gently unroll it into the bottom of the long pan. You are forming the bottom crust. You can pat the dough and stretch it a bit to get it to fit in the pan and come partially up the sides. If you have a few small holes where the seams are that is fine. It is not an exact science. Don't mess with the dough more than you have to. Working with it too long makes it tough.
  • 4. Pour in the heated mixture. Top with the grated cheese.
  • 5. Next, open the other roll of crescent rolls and do the same thing to form a top crust. Sprinkle sesame seeds or poppy seeds on top if you want it to look like a "bun". This is an option but cute-looking.
  • 6. Bake 30 to 35 minutes. You'll watch for a wonderful, light-golden crust. Let the pie sit on the counter for a few minutes before cutting it.

To be honest, I don't hear many compliments on this dish...folks are always too busy eating! I developed the recipe by grabbing ingredients from my refrigerator and cupboards one "crunch time" when I needed an easy dish fast. -Kathy McCreary, Goddard, Kansas

Time 50m

Yield 7 servings.

Number Of Ingredients 11

1 pound ground beef
1/2 cup chopped onion
1 can (8 ounces) tomato sauce
1 can (8-3/4 ounces) whole kernel corn, drained
1/4 cup water
1 envelope sloppy joe mix
2 tubes (6 ounces each) refrigerated buttermilk biscuits
2 tablespoons whole milk
1/3 cup cornmeal
1 cup shredded cheddar cheese, divided
Minced fresh parsley, optional

Steps:

  • Preheat oven to 375°. In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Stir in tomato sauce, corn, water and sloppy joe seasoning; cook over medium heat until bubbly. Reduce heat and simmer for 5 minutes; remove from heat and set aside. , Separate biscuits; flatten each to a 3-1/2-in. circle. Place milk and cornmeal in separate shallow bowls; dip both sides into milk and then into cornmeal. Place seven biscuits around the sides and three on the bottom of an ungreased 9-in. pie plate. , Press biscuits together to form a crust, leaving a scalloped edge around rim. Sprinkle with 1/2 cup cheese. Spoon meat mixture over cheese. , Bake until crust is deep golden brown, 20-25 minutes. Sprinkle with remaining cheese and, if desired, fresh parsley. Let stand 5 minutes before serving.

SLOPPY JOE HAND PIES

Sloppy Joe Hand Pies image

It's a sloppy joe without as much mess! Neatly contained in a pastry packet, this take on a sloppy joe recipe is a fun one-handed entree.

Provided by BHG Test Kitchen

Time 1h15m

Number Of Ingredients 9

8 ounce ground beef
0.5 cup chopped red sweet pepper
0.5 cup chopped onion
1.5 teaspoon chili powder
0.5 cup canned tomato sauce
0.5 cup chopped dill pickle slices
1 14.1 ounce package rolled refrigerated unbaked pie crust (2 crusts)
Milk
Grated Parmesan cheese

Steps:

  • In a large skillet cook beef, sweet pepper, and onion over medium heat until beef is no longer pink. Drain off fat. Stir in chili powder. Cook and stir for 1 minute. Stir in tomato sauce. Bring to boiling; reduce heat. Simmer, uncovered, for 5 minutes. Stir in pickles. Remove from heat. Let filling cool to room temperature, about 30 minutes, or transfer to a shallow dish and chill in the refrigerator 15 minutes.
  • Preheat oven to 375°F. Line a large baking sheet with parchment paper. Let pie crusts stand at room temperature according to package directions.
  • Unroll pie crusts. Use a 10-ounce custard cup as a guide to cut 8 rounds from the pie crusts with a paring knife. Or, use a 4 1/2-inch round cutter. Brush edges of rounds with milk. Spoon 3 to 4 tablespoons filling onto each round. Fold pastry over filling. Use a fork to seal edges together. Brush tops with milk and sprinkle with additional chili powder and Parmesan. Cut small slits in each hand pie to allow steam to escape. Arrange on prepared baking sheet.
  • Bake for 20 minutes or until bottom of pastry is golden. Cool slightly; serve warm.
