When my kids were little they loved these snacks they could eat with their fingers. It makes a great quick meal, tailgate food or "pig out" dish. -Janet Rhoden, Hortonville, Wisconsin

1 pound ground beef
1 can (15-1/2 ounces) sloppy joe sauce
1 package (12 ounces) tortilla chips
3/4 cup shredded cheddar cheese
1/4 cup sliced ripe olives, optional

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink; drain. Add sloppy joe sauce; cook, uncovered, for 5 minutes or until heated through. , Arrange tortilla chips on a serving plate. Top with meat mixture, cheese and, if desired, olives.

Need a game day snack? My Sloppy Joe Nachos are a fun change of pace to usual nacho recipes.

Frito-Lay TOSTITOS® Original Restaurant Style Tortilla Chips (13 ounce bag)
1 1/2 pounds lean ground beef
1 onion (chopped)
1/2 green bell pepper (chopped)
8 ounces tomato sauce
3 ounces tomato paste (1/2 of a 6 ounce can)
1/4 cup water
2 tablespoons brown sugar
1 teaspoon chili powder
1/2 teaspoon garlic powder
1 tablespoon Worcestershire sauce
1 tablespoon red wine vinegar
1 teaspoon red pepper flakes
1 pound cheddar-jack cheese (shredded)
Optional toppings: sliced green onions (chopped tomatoes)

Steps:

  • In a large skillet over medium heat, cook ground beef, onions, and bell pepper until meat is brown and cooked thoroughly. Drain off any fat.
  • While heating over low to medium heat, stir in tomato sauce, tomato paste, and water into the meat until combined. Stir in brown sugar, chili powder, garlic powder, Worcestershire sauce, vinegar, and red pepper flakes. Stir until all ingredients are combined with the meat and mixture is hot. Remove from heat.
  • Heat oven to 400 degrees F. In a metal pie plate, place a layer of TOSTITOS, then a couple scoops of the sloppy joe mixture, followed by shredded cheese. Repeat layers. Place pan in oven and cook until cheese is hot and melted (about 5 minutes). Remove from oven and top with sliced green onions and chopped tomatoes, if desired.

  • Note: I like to make this recipe best when I have LEFTOVER sloppy joes!! This recipe will yield a large portion of sloppy joes, so I suggest sticking it in the fridge for sandwiches per this recipe.
  • Heat a large skillet over medium-low heat and add the olive oil. Stir in the onion, peppers and garlic. Cook until the onions soften, about 5 to 6 minutes. Increase the heat to medium and add in the turkey and beef with the salt and pepper, using a wooden spoon to break it apart and combine it. Cook until browned. Stir in the tomato paste, paprika and brown sugar. Stir in the tomato puree, Worcestershire and apple cider vinegar.
  • Cover and cook for 15 to 20 minutes, stirring often. Taste and adjust to your preferences – more salt or pepper, more sugar if it’s too tangy, more vinegar if it’s too sweet.
  • Bake the tater tots according to the directions. This will most likely be around 425 degrees F for 20 minutes or so.
