- In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in the ketchup, water, brown sugar, Worcestershire sauce, mustard, garlic powder, onion powder and salt. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes. Serve on buns.

CHICKEN SLOPPY JANES
Chicken Sloppy Janes, like Sloppy Joes, but made with tender, juicy chicken instead of beef. This recipe is quick and easy, and healthy!

- Heat oil in a nonstick pot or skillet over medium-high heat. Lightly salt and pepper the chicken breast. Carefully place the chicken breasts in the pan starting with one end closest to you to avoid splattering hot oil on yourself. After about 6 to 7 minutes, flip the chicken. Cook the second side for about an additional 6 to 7 minutes.Check the thickest part of the breasts with an instant-read thermometer. The chicken is ready when the temperature has reached 165 degrees F.
- Meanwhile, chop up the garlic, onion, red pepper and jalapeno. Set aside.
- Once the chicken has cooled to touch, begin to cut it into bite-size chunks and then shred the chicken using two forks, pulling in opposite directions.
- Next, add the onion, garlic, jalapeno, and red pepper into the same pot used to cook the chicken, cook 5 minutes, stirring occasionally.
- Once the onions and peppers are soft and begin to wilt, add the shredded chicken back into the pot and stir.
- Pull the veggies and shredded chicken to one side of the pot, then add the tomato paste directly to the bottom of the pot and allow it to brown. Once the paste is a nice rust color, stir it around with the chicken mixture until well-distributed.
- Stir in the tomato sauce and the rest of the ingredients, reduce heat to low, and simmer for 30 minutes, stirring occasionally. As the mixture simmers it will begin to loosen up a bit and form a nice sauce-like texture.
- Serve the Chicken Sloppy Janes on a bun or on open face sandwich bread.

- Start by browning the ground beef in a large pot over medium-high heat. Drain off the fat.
- Add in the green peppers and onions. Stir, and then add 1 cup water, the ketchup and garlic. Stir it around to combine, and then add the brown sugar, chili powder, dry mustard, red pepper flakes, and hot sauce, Worcestershire, salt and pepper to taste. Stir to combine, and then cover and simmer over medium-low heat, about 20 minutes.
- To serve, spread the rolls with the butter and brown them on a griddle or in a skillet. Spoon a good amount of the meat mixture onto the bottom roll, and then top with the other half. Serve with chips, salad or just enjoy it by itself.

- Place ground beef and onion in a large skillet. Turn heat to medium and cook and stir the mixture constantly until the beef is browned and forms small crumbles, about 10 minutes.
- Stir in garlic and green bell pepper; cook and stir until softened, 2 to 3 minutes. Add 1 cup water and stir, scraping the pan to dissolve any brown flavor bits from the bottom of the skillet.

SLOPPY JANE'S
This is a vegan version of Sloppy Joe's from the cookbook La Dolce Vegan by Sara Kramer. Quick and simple and tastes fantastic! L picked this recipe totally at random, and I am SO glad she did! I substituted 1 TBSP tamari and 1 TBSP of Bragg's Liquid Aminos for the Vegan Worcestershire sauce. The original simmering time for the recipe is listed below, I probably simmered mine closer to 25-30 minutes before the rice was tender.

- In a large saucepan or Dutch oven over medium-high heat, combine beef and onion. Cook until the meat is mostly browned, about 5 minutes. Drain well.

- In a very large skillet set over medium-high heat, heat the oil. Add the ground turkey, garlic powder, onion powder and paprika, and sprinkle with salt and pepper. Cook, breaking up the turkey with a wooden spoon, until browned through, about 5 minutes. Add the garlic, bell peppers and onions, and season with salt and pepper. Cook until the vegetables soften, about 5 minutes.

- Spray a large skillet with nonstick spray and bring it to medium-high heat on the stove. Add turkey and sprinkle with steak seasoning and salt. Cook and crumble until it's mostly cooked, about 8 minutes.
- Reduce the heat to medium. Add onion, bell pepper, Worcestershire sauce, and vinegar. Mix it well and continue to cook and crumble until the meat is fully cooked, about 5 minutes.
- Reduce the heat to low. Add tomato sauces, tomato paste, and sugar. Stir well. Stirring occasionally, cook until it's hot, about 5 minutes.
- Toast the buns, if desired. Evenly distribute the mixture among the bottom buns and then finish off with the tops of the buns. Enjoy!
