SKINNY BANANA BREAD OR MUFFINS



Skinny Banana Bread or Muffins image

This Skinny Banana Bread is perfectly sweet, buttery, and very flavorful. Perfect for a side dish, breakfast, or even as a dessert!

Number Of Ingredients 9

1 1/2 cup self rising flour (I use Gold Medal)
1 tsp baking powder
1 tsp baking soda
3 ripe bananas, medium-large
1 egg
2 tsp vanilla extract
2 Tbsp brown sugar substitute ( I use Lakanto Golden Sweetener)
3 Tbsp white sugar substitute ( I use Lakanto Classic Sweetener)
2 Tbsp. Land o' lakes made with canola oil light butter melted or 3 Tbsp of unsweetened applesauce

Steps:

  • Preheat oven to 350 degrees and spray bread pan (9x5 or 8x4)or a 12 muffin tin with non stick cooking spray
  • In a large mixing bowl add bananas and use a fork to mash well.Whisk in the egg, vanilla, brown sugar and white sugar substitute. Stir well.
  • In a separate bowl combine, self rising flour, baking powder and soda. Stir until well incorporated.
  • Gradually add dry ingredients into the wet ingredients as you stir. Before the two are completely incorporated add in melted butter. Stir just until barely combined.
  • DO NOT OVER MIX. (The number one tip is to not over mix or it will ruin the texture)
  • Pour into pan and bake for 30-45 minutes or (18-20 minutes if making muffins) or until an inserted knife or toothpick comes out clean.

3 ripe bananas (medium-large)
1 egg
1 Tbsp. vanilla extract
3 Tbsp. brown sugar
3 Tbsp. granulated sugar
1 1/2 C. flour (AP or whole wheat)
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
3 Tbsp. butter (melted)

Steps:

  • 1. Preheat oven to 350 degrees and prep a loaf pan (9x5 or 8x4) by greasing it or lining it with parchment paper.
  • 2. In a medium bowl add bananas and use a fork to mash well.
  • 3. Add egg, vanilla, brown sugar and granulated sugar. Stir well.
  • 4. In a separate bowl combine flour, baking soda, baking powder and salt.
  • 5. Add dry ingredients into the wet slowly as you stir. Before the two are incorporated add in melted butter. Stir just until barely combined, DO NOT OVER MIX.
  • 6. Pour into pan and bake for 30-45 minutes or until an inserted knife or toothpick comes out clean.
  • 7. Serve warn or cooled. As with any banana bread/cake, it always tastes better the next day! Store in an airtight container.

4 ripe bananas
3 eggs
½ cup oil
½ cup granulated sugar
1 tablespoon ground cinnamon
2 cups all-purpose flour
½ cup butter
1 cup brown sugar
2 bananas, sliced
vanilla ice cream

Steps:

  • Preheat oven to 350°F (175°C).
  • In a large bowl, mash the ripe bananas. Add the eggs, oil, sugar, and cinnamon, mixing until evenly incorporated.
  • Add the flour and mix until the batter has no large pockets of flour. Set aside.
  • In a pot over medium-low heat, melt the butter, then mix in the brown sugar until dissolved.
  • Bring up the heat to medium-high, cooking until the mixture starts bubbling and the sugar has melted.
  • Remove the caramel from heat and pour into a greased 9x9-inch (23x23 cm) baking pan.
  • Lay the banana slices evenly on top of the caramel.
  • Spread the banana bread batter on top.
  • Bake 40-50 minutes.
  • Cool until the bottom is barely warm and use a knife to loosen the edges from the pan.
  • Place a plate upside-down on top of the pan, then invert the pan, flipping the banana bread onto the plate.
  • Slice, then serve with vanilla ice cream.
  • Enjoy!

2 tablespoons butter, softened
3/4 cup sugar
1 egg
1 egg white
2 cups mashed ripe bananas (about 4 medium)
1/4 cup unsweetened applesauce
1/4 cup honey
1 teaspoon vanilla or rum extract
1-1/3 cups all-purpose flour
2/3 cup whole wheat flour
1 teaspoon baking soda
1/2 teaspoon salt
1/4 cup chopped pecans

Steps:

  • In a large bowl, beat butter and sugar for 2 minutes or until crumbly. Beat in egg, then egg white, beating well after each addition. Beat on high speed until light and fluffy. Stir in the bananas, applesauce, honey and extract. Combine the flours, baking soda and salt; gradually add to banana mixture just until moistened., Pour into a 9x5-in. loaf pan coated with cooking spray. Sprinkle with nuts. Bake at 325° for 60-65 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool.

2 cup(s) all purpose flour
1 cup(s) sugar
1 tablespoon(s) baking powder
1/2 teaspoon(s) baking soda
1 teaspoon(s) cinnamon
1/2 teaspoon(s) salt
2 large eggs
2 1/2 cup(s) mashed bananas

Steps:

  • Grease 2 loaf pans and preheat the oven to 350.
  • Combine flours, sugar, baking powder, baking soda, cinnamon and salt in a mixing bowl.
  • In a separate bowl combine bananas and eggs.
  • Add egg/banana to the dry ingredients all at once, stirring gently just to combine. Do not over mix or it'll be tough.
  • Divide the batter between the two loaf pans as evenly as you can, smoothing the top. Bake at 350 for about 55 minutes or until a toothpick comes out clean if you poke the bread with it.
  • Let cool in pan. You can serve the same day, but the flavor improves if you wrap tightly and store overnight. Banana bread keeps well and also freezes well.
