"I copied this recipe from my mom before my husband and I were married," recalls Nancy Carpenter, Sidney, Montana. "These moist burgers are still a favorite after more than 20 years." They're economical, too, at 39 cents a patty.

1 egg, beaten
1/4 cup milk
2 tablespoons finely chopped onion
1 teaspoon chili powder
1/4 teaspoon salt
1/4 teaspoon Worcestershire sauce
1 cup coarsely crushed saltines (about 20), divided
1 pound lean ground beef
1 tablespoon vegetable oil
1/3 cup ketchup

Steps:

  • In a bowl, combine egg, milk, onion, chili powder, salt and Worcestershire sauce. Mix in 1/2 cup cracker crumbs. Add beef; mix well. Shape into six patties, about 1/2 in. thick. Coat with remaining crumbs. In a large skillet over medium heat, cook patties in oil for 5 minutes on each side or until meat is no longer pink. Serve with ketchup.

1 egg, lightly beaten
1 slice soft bread, blended into crumbs
½ teaspoon salt
½ teaspoon ground black pepper
1 pound lean ground beef
1 (8 ounce) can tomato sauce
3 green onions, chopped
2 ¼ tablespoons brown sugar, or to taste
2 teaspoons Worcestershire sauce
2 teaspoons prepared yellow mustard

Steps:

  • Mix egg, bread crumbs, salt, and black pepper together in a large bowl. Break ground beef into small pieces and add to the bowl; mix well with your hands until beef is evenly moistened. Shape the beef mixture into four patties.
  • Heat a skillet over medium heat. Cook patties in hot skillet until completely browned, 2 to 3 minutes per side; remove to a platter and drain grease from skillet.
  • Return skillet to medium heat. Stir tomato sauce, green onions, brown sugar, Worcestershire sauce, and yellow mustard together in the skillet. Gently lie the patties into the sauce; bring liquid to a boil, reduce heat to medium-low, and simmer until the patties are very firm, hot, and grey in the center, about 10 minutes more. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C).

I made this trying to lighten up a traditional meatloaf recipe. Be sure to finely chop the vegetables. You can go so far as to cook them and then put them in a food processor for a few pulses. It makes a real difference in the texture.

8 ounces 95% lean ground beef
1 teaspoon olive oil
1/2 cup onion, finely chopped
1/2 cup celery, finely chopped
1/2 cup carrot, finely chopped
1/2 cup green pepper, finely chopped
1 tablespoon garlic, finely chopped
2 egg whites
1/4 cup whole wheat bread crumbs
1/4 cup rolled oats
1 tablespoon spicy brown mustard
1 tablespoon Worcestershire sauce
2 teaspoons black pepper
1 teaspoon italian seasoning
1 teaspoon parsley, finely chopped
2/3 cup canned tomato sauce
salt

Steps:

  • Preheat the oven to 375°F
  • In a nonstick skillet, sweat the onion, carrot, celery, peppers, and garlic with the olive oil over low to medium heat. Approximately 5 minutes.
  • Turn off the heat and add bread crumbs and rolled oats, allowing them to absorb any moisture in the pan.
  • In large bowl, combine ground beef, egg whites, mustard, Worcestershire sauce, black pepper, Italian seasoning, parsley, and 3 tablespoons of tomato sauce. Add salt as desired.
  • Add the mixture from the pan and combine well.
  • Transfer mixture to a loaf pan, coated in nonstick spray. Top with remaining tomato sauce.
  • Bake for 45 minutes or until internal temperature reaches 165°F.
