MUST-TRY, SUPER-MOIST ZUCCHINI BREAD
Notes: Baking by weight is always a good idea. Regarding flour, if you have a scale (this one costs $9!), weigh out 227 g flour. If you are using cups, use 2 cups, but fill them lightly. Loaf pans come in all different sizes. I love these Chicago Metallic standard 8.5 x 4.5-inch loaf pans and these Chicago Metallic mini loaf pans, which are so handy to have on hand around the holidays. If you use as much as a pound of zucchini, I highly recommend baking this bread in a 10x5-inch baking pan - it's only slightly larger than the 8.5x4.5-inch pan, but it makes a difference. My quick breads bake so much more evenly in this larger-size pan. To freeze: Be sure to let zucchini bread cool completely. Wrap in foil; then tuck into an airtight bag. Freeze up to 3 months. Thaw overnight at room temperature. To make muffins: Simply, line a 12-cup muffin pan with liners or grease with butter or nonstick spray. Fill cups no more than two-thirds full. Bake for 18-22 minutes, or until a toothpick inserted comes out clean.

- Preheat the oven to 350˚F. Grease a 8.5 x 4.5-inch loaf pan or a 10 x 5-inch loaf pan if using as much as a pound of zucchini (see notes above). For easy removal, line the pan with a sheet of parchment paper that hangs over the edges.
- Whisk together first five ingredients. In a separate bowl, whisk remaining ingredients except zucchini. Add zucchini to the flour mixture and toss to coat. Add dry to wet and stir till until combined. Pour into pan. Bake until toothpick comes out clean, about 45 minutes to 1 hour. If you have an instant read thermometer, it should register 205ºF or above. (Note: Every oven is different, and different pans conduct heat differently - be patient with the cooking. It may take 20-30 minutes more. With the longer cooking time, the bread shouldn't burn, but if you are noticing the bread getting too brown, cover it with foil.)
- Let bread cool for 15 minutes in pan, then transfer to a cooling rack to cool completely before slicing.
GRAIN FREE ZUCCHINI BREAD

- Preheat oven to 180 C. Line a loaf tin* with baking paper.
- Combine all the dry ingredients (coconut flour, ground flaxseed, baking powder, bicarb and salt) in a large bowl, ensuring no lumps are in the flour. Add in any herbs/nutritional yeast/other dry seasonings, if you are using them (see recipe notes below).
- Grate the zucchini and add the to the dry ingredients.
- In a separate bowl, whisk together all of the wet ingredients (oil, eggs, vinegar, honey).
- Pour the wet ingredients into the dry ingredients and combine everything evenly. You should have a thick, wet kind of "dough."
- Scoop the batter into the loaf tin and press it in so the surface is smooth and even.
- Bake for approximately 55-60 minutes or until the top is a deep golden brown, slightly crunchy and the centre of the loaf feels firm to touch.
- Allow the loaf to cool in the tin for about 15 minutes, then remove and allow to cool completely before slicing.
BREAD MACHINE ZUCCHINI BREAD

- Unplug the bread machine.
- Remove the bread pan from the unplugged bread machine.
- Grate the zucchini into small shreds.
- Lightly beat the eggs.
- Pour the vegetable oil & eggs into the bread pan and then add the other ingredients (except the grated zucchinis & chopped walnuts which are added later). Try to follow the order of the ingredients listed above so that liquid ingredients are placed in the bread pan first and the dry ingredients second.
- Put the bread pan with all of the ingredients (except zucchinis & walnuts) back into the bread machine and close the bread machine lid.
- Plug in the bread machine.
- Enter the bread machine settings (Sweet Quick Bread, Light Color, 2 lb) and press the start button. FYI - Before making this recipe, please read the tips section below for more information regarding the sweet quick bread setting used to make zucchini breads. The setting may be called "quick bread", "quick bread/cake", "cake", etc. However, some manufacturers use the "quick bread" setting are for rapid sandwich-type breads that use yeast (and not for quick breads such as zucchini bread that use baking powder/soda). Therefore, this setting can be very confusing... but the tips section below will help you to find the right setting to use on your machine. You need to enter the correct zucchini bread setting used by your SPECIFIC bread machine model or the zucchini bread could be under or overcooked.
- After the first bread machine mixing cycle and before the second mixing (final mixing), add the grated zucchini & chopped walnuts (or mini chocolate chips). This is when the machine "pauses" and the mixing paddle stops for several minutes between mixing cycles. Some bread machines will also give off a "beep" to tell you when to add extra ingredients (i.e. nuts) to the mixing process. Read your bread machine manual for more details.
- When the bread machine has finished baking the zucchini bread, unplug the bread machine.
- Remove the bread pan and place it on a wooden cutting board (without removing the zucchini bread from the bread pan). Use oven mitts when removing the bread pan because it will be very hot!
- Optional - Use a long wooden skewer to test if the zucchini bread is completely cooked. Wear oven mitts as the bread pan will be hot. See the tips section for more details on this classic "toothpick" test.
- After removing the bread pan from the bread machine, you should let the zucchini bread stay within the warm bread pan on the wooden cutting board for 10 minutes (as this finishes the baking process). Wear oven mitts.
- After the 10 minute "cooldown", you should remove the zucchini bread from the bread pan and place the zucchini bread on a wire cooling rack to finish cooling. Use oven mitts when removing the bread.
- Don't forget to remove the mixing paddle if it is stuck in the bread. Use oven mitts as the mixing paddle could be hot.
- You should allow the zucchini bread to completely cool before cutting. This can take up to 2 hours. Otherwise, the zucchini bread will break (crumble) more easily when cut.

- Mix eggs, oil, white sugar, brown sugar, and vanilla until well blended. (I mix this by hand but an electric mixer can also be used.).
- In separate bowl, combine dry ingredients (flour, baking soda, baking powder, cinnamon and nutmeg).
- Add dry ingredients to the egg mixture and mix well.
- Add the coconut and zucchini and mix well. (I use my food processer rather than grating the zucchini, and I just make sure it is chopped very fine -- much easier than hand grating.).
- Pour into greased pan. This recipe originally called for using a 9x5 bread loaf, but I tend to use the mini loaf pans because we can't eat an entire 9x5 loaf that quickly.
- Bake at 350 degrees for approximately 60 minutes if using the 9x5 pan (or until toothpick or cake tester comes out clean when inserted near the middle). When I use the smaller bread/loaf pans, I use 4 of the pans and bake for 35-45 minutes depending on which oven I am using (one oven bakes faster/hotter than the other).
- I have found this bread is even better the next day, and it can easily be frozen.
