HAM AND CHEESE SLIDERS

1 (12 count) package Hawaiian sweet rolls
1 (6 ounce) package thinly sliced deli ham
¾ pound shredded Swiss cheese
½ cup unsalted butter
1 tablespoon Dijon mustard
1 tablespoon poppy seeds
2 teaspoons Worcestershire sauce
2 teaspoons dried minced onion
¼ teaspoon salt, or to taste
¼ teaspoon ground black pepper, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a 9-inch square baking pan with aluminum foil and spray with cooking spray.
  • Slice attached rolls in half widthwise with a serrated knife, keeping rolls connected, into a bottom and top 'slab.' Place bottom slab in the prepared pan.
  • Layer about half the ham evenly over the bottom slab of rolls. Layer Swiss cheese evenly on top, and arrange remaining ham over the cheese. Cover with the top slab.
  • Place butter in a microwave-safe bowl. Heat in the microwave until melted, about 1 minute. Add mustard, poppy seeds, Worcestershire sauce, onion, salt, and pepper. Whisk to combine.
  • Pour butter mixture evenly and slowly over the rolls. Spread over the tops using a spatula; some of the mixture will pool at the base of the rolls. Cover with aluminum foil and let stand at room temperature for 5 to 10 minutes.
  • Bake in the preheated oven until cheese has melted, about 20 minutes. Uncover and continue baking until browned as desired, 3 to 5 minutes more. Slice into individual sliders.

That's why we're bringing you these fun cheeseburger sliders instead! Baked on a single tray, these are an easy way to impress a crowd - and they definitely don't skimp on the flavor.

2 lb ground beef
1 teaspoon salt
2 teaspoons pepper
2 teaspoons garlic powder
½ white onion, diced
6 slices cheddar cheese
12 dinner rolls, or hawaiian sweet rolls
2 tablespoons butter, melted
1 tablespoon sesame seeds

Steps:

  • Preheat the oven to 350°F (175°C).
  • Combine the beef, salt, pepper, and garlic powder in a 9x13-inch (23x33-cm) rimmed baking dish, mixing thoroughly, then pressing into a flat, even layer. Bake for 20 minutes. Drain the liquid and set the cooked beef aside.
  • Slice the rolls in half lengthwise. Place the bottom half in the same baking dish. Place the cooked beef on the rolls, followed by the onions and cheese. Top with the remaining rolls.
  • Brush the tops of the rolls with melted butter and sprinkle the sesame seeds on top. Bake for 20 minutes, or until the bread is golden brown and the cheese is melted.
  • Slice into individual sliders, then serve.

½ onion, chopped
2 tablespoons ketchup
3 teaspoons Dijon mustard, divided
3 teaspoons Worcestershire sauce, divided
½ teaspoon garlic powder
salt and ground black pepper to taste
1 (12 count) package Hawaiian bread rolls
1 (8 ounce) package shredded Monterey Jack cheese
¼ cup butter
1 tablespoon brown sugar

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease an 11x7-inch baking dish.
  • Heat a large skillet over medium-high heat. Cook and stir ground beef and onion in the hot skillet until meat is browned and crumbly, 5 to 7 minutes. Drain and discard grease. Stir in ketchup, 2 teaspoons Dijon mustard, 2 teaspoons Worcestershire, and garlic powder. Season with salt and pepper to taste.
  • Cut rolls in half horizontally without separating each roll from one another. Place bottom halves in the prepared baking dish. Spread meat mixture on rolls, top with Monterey Jack cheese, and cover with roll tops.
  • Combine butter, brown sugar, remaining Dijon mustard, and remaining Worcestershire in a microwaveable bowl; cover loosely and microwave until butter is melted, about 1 minute. Mix and pour mixture over the top of the rolls.
  • Bake, covered, in the preheated oven for 15 minutes. Uncover and bake until cheese is melted and rolls are golden brown, about 10 minutes more.

BURGER
2 medium red onions
olive oil
6 Jacob's crackers, or 4 slices of bread
500 g quality lean minced beef
1 large free-range egg
30 g Parmesan cheese
SPICY MAYO
2 teaspoons low-fat mayonnaise, made with free-range eggs
2 teaspoons fat-free natural yoghurt
1 teaspoon tomato ketchup
1 good pinch of smoked paprika or cayenne pepper
½ a lemon
TO SERVE
6 rashers of higher-welfare smoked streaky bacon
6 large burger buns, or 18 small burger buns
1 soft round lettuce
4 tomatoes
6 gherkins
a few pickled chillies

Steps:

  • You can make these burgers or sliders in an oven at full whack, on the barbecue or in a hot pan. If you're using the oven or barbecue, preheat it now.
  • Peel and finely chop the onions. Put a splash of olive oil into a large frying pan on a low heat and add your onions. Fry for 10 minutes or until the onions have softened, then put to one side to cool completely.
  • Blitz your crackers or bread (remove the crusts first) in a food processor until you get a fine consistency. Oil a clean baking tray and put aside.
  • Put the cooled onions into a large bowl with the rest of the burger ingredients. Use clean hands to scrunch the mixture together really well, then divide into 6 equal balls for burgers and 18 equal balls for sliders.
  • Wet your hands and roll the balls into burger-shaped patties about 2cm thick. Place your burgers or sliders on the oiled baking tray and pat with a little olive oil. Cover them with clingfilm and put the tray into the fridge for at least an hour, or until the patties firm up.
  • This is a good time to make your spicy mayo, so put mayo, yoghurt, ketchup and smoked paprika into a bowl, squeeze in the lemon juice, mix well and put to one side.
  • If using a frying pan or griddle pan, put it on a high heat now and let it get really hot. However you decide to cook your burgers, they'll want around 3 or 4 minutes per side - you may have to cook them in batches if your pan isn't big enough.
  • When your burgers or sliders are nearly cooked on one side, add the rashers of bacon - whichever way you're cooking them - then flip the burgers and cook the bacon until golden and crisp.
  • When the burgers are cooked to your liking and it's all looking really good, halve your burger buns and warm them through. Put the bacon on a plate lined with kitchen paper to drain.
  • Click off the lettuce leaves, wash and spin dry. Slice the tomatoes and gherkins.
  • When everything comes together, pop your burgers or sliders on to their buns, add all your lovely toppings and your spicy mayo (you know how to put a burger together!), then tuck in with a lovely fresh salad, baked potato or potato wedges.

1 pound thinly sliced deli roast beef
1 (8 ounce) package thinly sliced provolone cheese
1 tablespoon vegetable oil
1 small onion, diced
1 green bell pepper, diced
½ cup sliced mushrooms
2 tablespoons unsalted butter, melted
¼ teaspoon garlic powder
¼ teaspoon adobo seasoning
¼ teaspoon Italian seasoning
12 slider buns

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Slice the rolls in half vertically, leaving each roll attached as a sheet. Peel off the top layer and set aside; place the bottoms of the rolls in the prepared dish. Layer roast beef and cheese across the rolls.
  • Heat oil in a a small skillet over medium-high heat. Cook onion, bell pepper, and mushrooms until soft, about 5 minutes. Spread pepper mixture over cheese and beef. Place the tops of the rolls back on.
  • Mix melted butter, garlic powder, adobo seasoning, and Italian seasoning together. Brush seasoned butter on the tops of the rolls, pouring any extra over the sides.
  • Bake in the preheated oven until cheese starts to melt, about 15 minutes. Separate each roll into a sandwich using a serrated knife. Serve hot.

2 pounds premium ground beef (80 percent lean and 20 percent fat)
1 tablespoon good Dijon mustard
3 tablespoons good olive oil, plus extra for brushing the grill
1 teaspoon chopped thyme leaves
3 teaspoons chopped garlic
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
6 ounces grated Gruyere
12 small Brioche buns
4 ounces baby arugula
3 medium tomatoes, sliced in 1/8-inch-thick rounds
2 small red onions, sliced in 1/8-inch-thick rounds
Ketchup, for serving

Steps:

  • Build a charcoal fire or heat a gas grill.
  • Place the ground beef in a large bowl and add the mustard, olive oil, thyme, garlic, salt, and pepper. Mix gently with a fork to combine, taking care not to compress the ingredients. Shape the meat into 12 (2-inch) patties of equal size and thickness.
  • When the grill is medium-hot, brush the grill grate with oil to keep the sliders from sticking. Place the sliders on the grill and cook for 4 minutes. Turn the sliders over with a spatula and cook for another 4 to 6 minutes, until medium-rare, or cook longer if you prefer the sliders more well done. For the last 2 minutes of cooking time, place 1/2-ounce Gruyere on the top of each burger and close the grill lid. Remove the sliders to a platter and cover with foil.
  • Slice the buns in half crosswise and toast the halves cut side down on the grill.
  • Divide the baby arugula among the 12 bottom buns, top each with a slider, and finish with a slice of tomato and red onion. Cover with the top of the bun and serve hot with ketchup.

1 cup sliced fresh mushrooms
1 tablespoon canola oil
1-1/2 cups pizza or marinara sauce
1 package (12 ounces) Hawaiian sweet rolls
1 cup sliced pepperoni
2/3 cup chopped ripe olives
1-1/2 cups shredded mozzarella cheese
2 tablespoons grated Parmesan cheese
2 tablespoons Italian salad dressing

Steps:

  • Preheat oven to 375º. In a large skillet, cook green pepper and mushrooms in oil over medium-high heat until tender, 6-8 minutes. Pour in pizza sauce and stir to combine. Set aside. , Without separating rolls, cut package in half horizontally; arrange bottom halves on a greased baking sheet. Spread with pizza sauce mixture and layer with pepperoni, olives and mozzarella; replace top halves of rolls. Brush dressing over rolls and sprinkle with Parmesan. , Bake, uncovered, until rolls are heated through and mozzarella is melted, 12-15 minutes. Cover with foil if top browns too quickly. Remove and let stand 5 minutes before slicing.
