Over the years, I've found the trick to serving this tender pork with its mild onion-and-mushroom-flavored gravy is to fix enough- people tend to come back for seconds!

2 pork tenderloins (about 1 pound each)
3 tablespoons butter
1 teaspoon salt
1/4 teaspoon pepper
1 medium onion, thinly sliced
1-1/2 cups sliced fresh mushrooms
1/2 cup thinly sliced celery
2 tablespoons all-purpose flour
1/2 cup chicken broth
Hot wild rice or noodles, optional

Steps:

  • In a skillet, brown pork in butter. Transfer meat to an ungreased shallow 1-1/2-qt. baking dish. Sprinkle with salt and pepper; set aside. In the pan drippings, saute the onion, mushrooms and celery until tender. Combine flour and broth until smooth; add to skillet. Bring to a boil; cook and stir for 2 minutes. Pour over meat. Cover and bake at 325° for 1 hour or until a thermometer reads 160°-170°. Let stand 5 minutes before slicing. Serve with rice or noodles if desired.

2 teaspoons canola oil, divided
2 garlic cloves, minced
2 tablespoons brown sugar

  • Cut tenderloin into 8 slices; pound each with a meat mallet to 1/2-in. thickness. In a nonstick skillet, heat 1 teaspoon oil over medium-high heat; brown pork on both sides. Remove from pan., In same skillet, heat remaining oil over medium-high heat; saute garlic 1 minute. Stir in remaining ingredients. Add pork, turning to coat; cook, uncovered, until a thermometer inserted in pork reads 145°, 3-4 minutes. Let stand 5 minutes before serving.

2 tablespoons butter
1 tablespoon oil
1 boneless rib end pork loin roast, cut into 6 generous 1-inch thick chops, each chop pressed lightly with fingertips to flatten
Salt and ground black pepper
1/4 cup flour measured into a pie plate or other shallow pan
A pan sauce

Steps:

  • Heat the butter and oil in an 11 to 12-inch skillet over low heat. While the pan is heating, sprinkle the chops on both sides with salt and pepper, then dredge them in flour.
  • A couple of minutes before sauteing, increase the heat to medium-high. When the butter stops foaming and starts to smell nutty brown, arrange the chops in the skillet. Cook, turning only once, until they are a rich golden brown, about 3 minutes per side. Remove from skillet.
  • Serve with an uncooked relish. Recipe follows.

Store-bought pork tenderloin usually about 2lb
bell peppers
olive oil
white wine
chicken broth
garlic
pepper
parsley
lemon

Steps:

  • Cut the tenderloin into slices about 1/3 inch thick. Mash the garlic and spread over the pork, then add pepper to taste. Let sit for half an hour. Slice bell peppers. Add olive oil to pan and heat up over medium-high. Add Peppers and cook/stir for 5-10 minutes. Remove peppers and add a little more oil to pan. Put pork slices in single layer - do not pile. Cook 2-3 minutes on each side. If your skillet wasn't big enough for all the slices, you probably want to add more oil before putting in another batch of pork slices. Remove pork; add chicken wine and broth and boil/reduce for about 6-8 minutes. Pour gravy over pork and peppers. Add parsley and sliced lemon and serve.

2 lbs pork tenderloin
1 1/2 Tbsp. sliced ginger
5 garlic cloves, crushed
1/2 thinly sliced chili pepper (or more to taste)
4 whole star anise
1/2 cup brown sugar (lightly packed)
3/4 cup rice wine vinegar
1/2 cup oyster sauce
1 teaspoons chinese five spice

Steps:

  • In a small bowl, mix the ginger, garlic cloves, chili pepper, star anise, brown sugar, rice wine vinegar, oyster sauce, and Chinese five spice together.Place the pork tenderloin in a large resealable plastic bag and pour the marinade in.Marinate in the refrigerator for at least 1 hour before cooking.Preheat oven to 425°F. Prepare a baking pan (either non-stick or oiled).Heat a cast iron pan at medium high heat and add a 1/2 tbsp oil. Take the pork tenderloin out of the bag, while letting the excess marinade drip back into the bag. Season all around the pork tenderloin with salt to taste.Place the pork into the pan to sear until brown (about 2-4 mins). After 2-4 min flip the tenderloin to sear the other side until brown for another 2-4 mins.Now transfer the tenderloin onto the prepared baking pan and bake in the oven for about 15-20 min, or if you have a meat thermometer, until the internal temperature reaches 145°F.While the pork cooks in the oven, pour the remaining marinade into a small saucepan and simmer for about a minute, then salt to taste to make sauce.Once you remove the pork from the oven, allow it to rest for about 10 mins before cutting into medallions. 2 teaspoons olive oil, divided
2 cloves garlic, minced
1/2 cup dry white wine (for non-alcoholic, substitute low-sodium chicken broth)
1/2 cup low-sodium chicken broth
Grated zest and 1 tablespoon juice from 1 lemon
1 tablespoon chopped fresh parsley or 1 1/2 teaspoons chopped fresh sage or rosemary*

Steps:

  • Cut pork into 12 slices, about 1-inch thick. Sprinkle pork on all sides with 1/8 teaspoon of the salt and 1/4 teaspoon of the pepper. Heat 1 teaspoon of the oil in a large heavy skillet over medium-high heat. Add the pork and cook, turning once, until the pork is well browned and internal temperature reaches 145 degrees F, about 1 1/2 minutes on each side. Transfer pork to serving platter and cover to keep warm. Add the remaining 1 teaspoon oil to skillet. Add garlic and cook, stirring constantly, until garlic is fragrant, about 30 seconds. Add the wine and broth. Increase heat to high and cook, stirring to scrape up the browned bits from the bottom of the skillet, until the liquid is reduced by two thirds, about 5 minutes. 16 ounce pork tenderloin, trimmed of fat; silverskin removed and cut into 3/4inch medallions
2 scallions, thinly sliced into rounds
1 teaspoon ground cumin
1/2 teaspoon turmeric
2 large tomatoes, seeded and chopped (3 cups)
Salt and crushed red pepper

Steps:

  • In a large skillet heat the oil. Add the medallions and saute them over high heat for 2 minutes a side to brown them. Lower the heat and continue to cook slowly for about 5 minutes or until just cooked through. Don't overcook or they will toughen. When done, remove the medallions to a serving plate.
  • To the remaining oil add the cumin, turmeric and tomatoes and stir for a few seconds just to heat the tomatoes; season to taste with salt and crushed red pepper and spoon over the medallions.
