1/4 cup coconut oil, melted
1/2 cup plain greek yogurt
1/2 cup pitted dates (soft)
1 egg
1/2 Tbsp. honey
3/4 cup spelt flour
1 cup old-fashioned rolled oats
1/2 cup flax seed
1/4 tsp. sea salt
1/2 tsp. cinnamon
1/4 tsp. ground ginger
1/8 tsp. cardamom
1/2 cup walnuts, chopped
1/3 cup dried cherries
1/4 cup white chocolate chunks

Steps:

  • Preheat the oven or toaster oven to 350 degrees F.Combine all wet ingredients, including dates, in the blender and blend until smooth.Combine all dry ingredients including walnuts, flax seed, and cherries in a large mixing bowl.Combine wet and dry ingredients to form dough.Fold in white chocolate chunks.Scoop about 2 tbs of dough and place on parchment-lined cookie sheets. Press down dough with your fingers to about ½ inch thick rounds.Place in oven and bake for 20 minutes.Remove from oven and let cool on cooling rack.

3/4 cups old fashioned rolled oats made into oat flour
1 cup old fashioned rolled oats
1/2 cup chopped cashews
1/2 cup sesame seeds
1/4 tsp sea salt
1/2 tsp cinnamon
1/8 tsp cardamom
1/4 tsp ground ginger
1/2 cup pitted dates (if hard then soaked in hot water for 5 minutes and then drained)
1 egg
1/4 cup coconut oil (melted)
1/2 cup unsweetened apple sauce
1-2 Tbsp honey

Steps:

  • Preheat oven to 350 F.
  • Add 3/4 cups old-fashioned rolled oats to the blender and pulse to create a coarse oat flour. Then add to a large bowl.
  • Add whole old-fashioned rolled oats, chopped cashews, sesame seeds, and spices to the bowl.
  • Put dates, apple sauce, coconut oil, honey, and egg in a blender and blend until smooth.
  • Combine wet and dry ingredients.
  • Scoop out 1/4 measuring cup of dough per cookie and place on a parchment-paper-lined baking sheet flattening the cookie to about 1/2 inch thickness.
  • Bake for approximately 18-22 minutes or until golden. Beware of not burning the bottoms.
  • Cool on a cookie sheet and store in an airtight container preferably in the fridge.

I found this recipe in a collection of recipes from a ladies group cookbook. I looked very interesting in that you preheat your oven and when you have panned your cookies you put them in the oven and turn off the oven for the night or during the day until the oven is cold.

2 egg whites
2/3 cup sugar
1 dash salt
1 cup walnuts, chopped
1 cup chocolate chips or 1 cup butterscotch chips

Steps:

  • Preheat your oven to 350 degF.
  • Beat the egg whites until stiff, then gradually add the sugar and salt.
  • Beat until sugar is dissolved.
  • Stir in walnuts and chocolate or butterscotch bits.
  • Drop by teaspoon on oiled, foil covered cookie sheet.
  • Put into oven and turn off oven.
  • Leave in all night- (DO NOT PEEK)-or during the daytime and left in the oven until it is cold.

1 cup of organic rolled oats
1 medium-sized banana, mashed
1/2 cup oat flour
1/3 cup goji berries
1/3 cup organic coconut oil
1/3 cup pumpkin seeds
1 tablespoon chia seeds
1 tablespoon flaxseeds ground (linseeds)
1/4 cup oat milk or a plant-based milk alternative of your choice
1 teaspoon cinnamon
1/2 teaspoon baking soda
A dash of Agave syrup (optional)

Steps:

  • Instructions Preheat the oven to 150c or 302°F. In a large bowl, mash your banana. Then add the rest of the ingredients and stir until you have a cookie cough. The dough should be a little bit wet. If it is more on the dry side, try adding some more oat milk or plant-based milk of your choice. Use a tablespoon to make small scoops of the dough, spacing them well apart on the baking trays. This dough mixture should make about 9 cookies. Bake at 150c or 302°F for 17-20 minutes, until edges, become slightly browned. Leave on the tray for a couple of minutes to set and then lift onto a cooling rack. 12 oz semi-sweet chocolate chips

Steps:

  • 1. Preheat oven to 400 degrees. Butter cookie sheets. This is an old recipe, I have updated, using parchment paper here.
  • 2. In large bowl, making sure there is no greasy residue to keep eggs from whipping, beat egg whites, sugar, salt, white vinegar and vanilla until egg whites are stiff.
  • 3. Gently fold in nuts and chocolate chips. Drop mixture by teaspoonsful onto prepared cookie sheets. Put cookie sheets in oven and turn oven OFF. DO NOT OPEN for at least 5 hours, or overnight.
