FRESH GARLIC CILANTRO STEAK SAUCE (PERFECT FOR SKIRT STEAK!)



Fresh Garlic Cilantro Steak Sauce (Perfect for Skirt Steak!) image

2 lbs Skirt Steak (cut into narrow slices)
4 cloves Minced garlic
1 cup Fresh cilantro leaves (chopped)
1/2 tsp Salt
1 tbsp Fresh Lemon Juice
1/4 tsp Cayenne pepper
1/2 cup Chopped fresh basil leaves
1/2 cup EVOO Extra Virgin Olive Oil

Steps:

  • Mash minced garlic together with salt until it forms a paste. Place in a blender with the remaining liquid ingredients and spices.
  • Blend until all spices and ingredients are incorporated and the sauce is smooth.
  • Place a small amount of olive oil in a skillet and allow the pan to come to temperature over medium heat.
  • Place skirt steak in the pan without overcrowding the slices. Cook for 2-3 minutes on each side for very thin pieces, or about 4-5 minutes on each side for larger pieces.
  • Allow the steak to rest for about 10 minutes after cooking.
  • Serve with the garlic cilantro steak sauce drizzled over the steak.
  • Alternatively, you can thread the skirt steak onto skewers, broil them for about 3 minutes on each side, and use the sauce as a dipping sauce!

1 medium garlic clove
1/2 teaspoon salt
1 cup coarsely chopped fresh cilantro
1/4 cup olive oil
2 tablespoons fresh lemon juice
1/8 teaspoon cayenne
For steak
1 teaspoon ground cumin
1/2 teaspoon salt
1/2 teaspoon black pepper
2 pound skirt steak, cut crosswise into 3- to 4-inch pieces

Steps:

  • Make sauce:
  • Mince garlic and mash to a paste with salt. Transfer to a blender and add remaining sauce ingredients, then blend until smooth.
  • Grill steak:
  • Stir together cumin, salt, and pepper in a small bowl. Pat steak dry, then rub both sides of pieces with cumin mixture.
  • Heat an oiled well-seasoned ridged grill pan over high heat until hot but not smoking, then grill steak in 2 batches, turning over occasionally, about 2 minutes per batch for thin pieces or 6 to 8 minutes per batch for thicker pieces (medium-rare). Serve steak drizzled with sauce.

  • Heat up grill to 500F / 260C. Clean grates and brush with some oil. Add steak to heated grill. Grill steak for ~3 minutes on each side with the cover closed. Continue cooking until it reaches desired level of doneness. Medium-rare: 130F / 54C degrees (~3 minutes); Medium: 140F / 60C degrees (~6 minutes); Well-done: 160F / 71C degrees (~10 minutes).
  • Heat up a grill pan over high heat. Brush with some oil, and add steak. Sear steak on both sides. Continue cooking until it reaches desired level of doneness. Medium-rare: 130F / 54C degrees (~3 minutes); Medium: 140F / 60C degrees (~6 minutes); Well-done: 160F / 71C degrees (~10 minutes).
  • Remove steak from heat, cover in foil to keep warm, and let rest for 5 to 10 minutes before slicing across the grain (i.e. perpendicular to the fibers).
