- Preheat oven to 425 degrees F (220 degrees C). Line 2 baking sheets with aluminum foil; spray with cooking spray.
- Mix oil, seafood seasoning, onion powder, hot sauce, and garlic powder together in a bowl.
- Cut potatoes into spirals using a spiralizer fitted with a large shredder blade; snip long spirals into smaller lengths.
- Place potatoes into a large bowl; drizzle with oil mixture. Toss until potatoes are evenly coated.
- Spread coated potatoes in a single layer onto the baking sheets, leaving 1/4-inch of space between potato spirals.
- Bake in the preheated oven until bottom of potatoes are browned, 8 to 9 minutes. Flip potatoes with a spatula. Bake until potatoes are browned and crisp on top, about 6 minutes.
- Sprinkle malt vinegar and sea salt over potatoes.

"SKINNY" FRIES
This recipe comes from The New American Diet Cookbook with some changes by me. The secret here is to soak the potatoes in ice water for 10 to 15 minutes while the oven is preheating.

Steps:
- Scrub the potatoes and cut lengthwise into 3 equal slices; cut each slice into thirds or fourths.
- As the potatoes are cut, place them in a dish of ice water.
- Preheat oven to 425 degrees.
- When oven is hot, drain off the water, remove potatoes and pat dry with a paper towel.
- Return the dried potatoes to the bowl, sprinkle with seasoning and drizzle with oil; evenly distribute the oil and seasoning with your hands.
- Place on a cookie sheet or jelly roll pan that has been sprayed with non-stick cooking spray and bake until golden brown and tender; approximately 30 minutes, turning frequently.
- Sprinkle with additional seasoning if desired or salt and pepper to taste.

- Combine the oil and crushed garlic in a small bowl.
- Preheat the oven to 425°F. Lightly coat a baking sheet with cooking spray.
- Cut the potato lengthwise into 1/4-inch thick slices; cut each slice into 1/4-inch thick strips. Place on the baking sheet and toss with the oil and garlic and use your hands to evenly coat. Season with salt and black pepper. Place on a single layer onto the greased baking sheet. Bake uncovered in the center of the oven until tender crisp and golden brown, about 10 minutes on each side. Baking time will vary depending on your baking sheet and your oven.
- Remove from the oven and top with parmesan and parsley, eat hot!

- Heat oven to 200C/180C fan/gas 6. Pour the oil onto a baking tray and put in the oven for 3 mins. Mix the cornmeal or polenta, paprika and garlic powder together and season. Toss the chips in the mix, then tip onto the tray. Shake well, then cook for 40 mins, shaking halfway through, until crisp and golden.

- Slice the potato lengthwise into 1/4 inch slices. The easiest way to do this is on a mandoline slicer. Cut each of those slices into 1/4 inch strips.
- Put the potato strips in a bowl and toss with about a tablespoon of olive oil, making sure get them all coated. You can add a little more oil if you like.
- Spread them out on a baking sheet in a single layer, they shouldn't be touching each other. I lined my sheet with a piece of parchment.

- Peel and rinse the potatoes, then cut them into sticks by cutting each potato into 4 or 5 vertical pieces, then cutting each piece into sticks. Put the potato sticks in a large bowl, cover with cold water and swish them around to get off the extra starch. Pour off the starchy water and add fresh water. Continue washing the potatoes until the water runs clear. Cover with water again and allow them to soak for 2 or 3 hours. (You can also stick them in the fridge and let them soak for up to 3 days.)
- When you're ready to make the fries, drain off the water and lay the potatoes sticks on baking sheets lined with paper towels. Blot them with more paper towels to dry them.
- Heat a few inches of oil in a heavy pot until a deep-fry thermometer registers 300 degrees F. In 3 or 4 batches, cook the potatoes until soft, about 1 minute per batch. They should not be brown at all at this point! You just want to start the cooking process. Remove each batch and drain them on new/dry paper towels.
- When all the potatoes have been fried once, turn up the heat until the oil reaches 400 degrees F. Start frying the potatoes in batches again, cooking until the fries are golden and crisp, 1 to 2 minutes. Remove from the oil and drain on paper towels.

- Add 2 quarts of water to a large saucepan. Add vinegar and 2 tablespoons of kosher salt. Add potatoes and bring to a boil over high heat. Boil for 10 minutes or till potatoes are tender but not falling apart. Drain and spread on paper towel-lined rimmed baking sheet. Allow to dry for five minutes.
- Heat oil to 400°in a large Dutch oven. Add about 1/3 of fries to oil (oil temperature will drop but try to keep at 360º or above). Cook for about a minute, using a spider strainer to gently stir the oil. Remove to a paper towel lined baking sheet. Repeat with the next third of potatoes after oil reheats to 400º, then again with the final third. Let potatoes to cool to room temperature then freeze potatoes overnight (you can fry again before then, but they'll be best when well frozen).
- Return oil to 400° over high heat. Fry half of potatoes until crisp and golden brown, about 3-4 minutes minutes, trying to keep oil around 360°. Let drain on a paper towel lined baking sheet. Salt while hot if desired. Serve immediately.
