GRILLED PIZZA WITH ITALIAN SAUSAGE



Grilled Pizza with Italian Sausage image

Yield 2 12-inch pizzas.

Number Of Ingredients 15

1/3 cup Crisco® Light Olive Oil
3 tablespoons balsamic vinegar
2 tablespoons minced garlic
1 tablespoon minced fresh rosemary
1/2 pound hot Italian sausage links
1 large sweet red pepper, halved
1/2 large red onion, cut into wedges
Salt and pepper to taste
2 prebaked Italian bread shell crusts (14 ounces each)
ADDITIONAL TOPPINGS:
1 cup (4 ounces) shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1 cup crumbled goat cheese
2 plum tomatoes, halved, seeded and chopped
1/2 cup chopped green onions

Steps:

  • Combine olive oil, vinegar, garlic and rosemary. Pour half of the marinade into a small bowl, cover and refrigerate. Brush the remaining marinade over the sausages, peppers and onions. Sprinkle with salt and pepper. Discard any remaining marinade., Coat the grill grate with nonstick spray before starting. Grill over medium heat until sausages are no longer pink, about 12 minutes, and vegetables are crisp-tender, about 8 minutes., Transfer sausages and vegetables to a cutting surface. Cut sausages into 1/2-in. pieces and peppers into thin strips. Sprinkle each pizza crust with half the mozzarella and Parmesan cheeses. Top each with half the sausage, peppers and onions. Top each crust with half the goat cheese, tomatoes and green onions. Drizzle with the refrigerated marinade., Place pizzas on baking sheets. Bake at 375° for 8-10 minutes or until cheese melts and crusts are brown.

1 can (8 ounces) pizza sauce
1-1/4 cups shredded pizza cheese blend
1 medium onion, sliced
1 medium green pepper, sliced
2 fully cooked Italian chicken sausage links, sliced
Grated Parmesan cheese, optional

Steps:

  • Preheat oven to 425°. Prepare pizza dough according to package directions. Press dough onto bottom and 1/2 in. up sides of a greased 13x9-in. baking pan., Spread with pizza sauce. Top with 1 cup cheese blend, onion, pepper and sausage; sprinkle with remaining cheese blend., Bake 17-20 minutes or until crust is golden brown. If desired, sprinkle with Parmesan cheese.

1/2 pound Italian hot sausage
1 large red onion, cut into 1/4-inch thick slices
2 large yellow pepper, cored, seeded and quartered
2 large red pepper, cored, seeded and quartered
Olive oil
Salt and pepper
1 recipe favorite pizza dough, rolled into 4 (6-inch) rounds
1/2 pound grated fontina cheese
1 cup sheep's milk ricotta
2 tablespoons extra-virgin olive oil
2 tablespoons chopped fresh oregano
Basil Vinaigrette, recipe follows
1/2 cup fresh basil leaves
1/4 cup white wine vinegar
1 tablespoon honey
Salt and freshly ground black pepper
1/2 cup olive oil

Steps:

  • Preheat a grill.
  • Grill the sausage on both sides until golden brown and cooked through, about 10 minutes per side. Brush onions and peppers with the oil and season with salt and pepper. Grill the onions and peppers until soft, about 3 to 4 minutes per side. Remove the sausage from the grill and slice into 1/4-inch thick slices. Remove the onions, separate into rings, and roughly chop. Remove the peppers and slice into 1/8-inch thick slices.
  • Heat grill to high. Brush dough with olive oil, season with salt and pepper and grill for 2 to 3 minutes or until golden brown. Turn over and grill for 1 to 2 minutes. Remove from the grill and place on a flat surface.
  • Divide the fontina cheese among the 4 pizza rounds. Divide the sausage, onions and peppers over the cheese. Place the pizza on the grill, close the cover and grill until the cheese has melted, about 3 to 4 minutes. To finish in the oven, preheat the oven to 450 degrees F. Place the pizza on sheet pans and bake until the cheese has melted, about 5 to 10 minutes.
  • Mix together the ricotta, extra-virgin olive oil, and oregano in a small bowl and season with salt and pepper, to taste. Remove the pizzas from the oven and drizzle with Basil Vinaigrette. Top with dollops of the ricotta cheese mixture and let rest for 5 minutes. Slice and serve.
  • Combine all ingredients and blend until smooth. Adjust seasoning with salt and pepper, to taste.

3 to 4 cups all-purpose flour, divided
1 package (1/4 ounce) quick-rise yeast
1 teaspoon sugar
1 cup warm water (120° to 130°)
1/4 cup olive oil
2 teaspoons salt
1 teaspoon dried basil
1/2 teaspoon pepper
1/2 cup shredded Parmesan cheese, divided
3 cups torn fresh spinach
1 can (15 ounces) pizza sauce
4 cups shredded mozzarella cheese, divided
1/2 pound bulk pork sausage, cooked and drained
1 medium onion, chopped
1/2 pound fresh mushrooms, sliced
1/2 medium sweet yellow pepper, chopped
1-1/2 teaspoons pizza seasoning or Italian seasoning
3 tablespoons minced fresh basil, optional

Steps:

  • Preheat oven to 450°. In a bowl, combine 1 cup flour, yeast and sugar. Add water; beat until smooth. Add the oil, salt, dried basil, pepper, 1/4 cup Parmesan cheese and 2 cups flour; beat until blended. Stir in enough remaining flour to form a soft dough. Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Cover and let rest 5 minutes., Meanwhile, place spinach in a microwave-safe bowl; cover and microwave on high 30 seconds or just until wilted. Uncover and set aside., Press dough into a greased 15x10x1-in. baking pan. Spread with pizza sauce; sprinkle with 2-1/2 cups mozzarella cheese, sausage, onion, spinach, mushrooms and yellow pepper. Top with remaining Parmesan and mozzarella cheeses. Sprinkle with pizza seasoning. Bake 20 minutes or until crust is golden brown. Sprinkle with fresh basil if desired. Cut into squares.

  • Meanwhile, cut 18x12-inch sheet of heavy-duty foil; place on large cookie sheet. Spray foil with cooking spray. Unroll dough onto foil. Starting at center, press out dough into 14x10-inch rectangle. Spray dough with cooking spray.
  • Turn dough rectangle over directly onto grill rack; peel off foil, and return foil to cookie sheet, sprayed side up. Cook uncovered on gas grill over medium-low heat or on charcoal grill 4 to 6 inches from medium-low coals 2 to 4 minutes or until bottom is golden brown. (Watch carefully to prevent burning.) With wide metal pancake turner, turn crust over. Cook 1 to 2 minutes longer or until bottom is set but not brown. Carefully remove from grill; place browned side up on foil. Close grill.
  • Top crust evenly with pizza sauce, basil, 1 3/4 cups of the cheese, turkey sausages and bell pepper. Top with remaining 1/4 cup cheese. Slide pizza from foil onto grill. Cover grill; cook 3 to 5 minutes longer or until crust is golden brown and cheese is melted. To serve, cut into 6 rows by 3 rows.
