DOUBLE CHOCOLATE BANANA MUFFINS



Double Chocolate Banana Muffins image

These double chocolate bananas muffins are ridiculously easy to make . . . and even easier to eat. Full of ripe bananas, brown sugar, cocoa powder, and dark chocolate chunks! Socially acceptable for breakfast, but decadent enough for dessert. ;)

6 tablespoons unsalted butter (melted)
3/4 cup dark brown sugar (packed )
1 large egg
1 teaspoon vanilla
1 cup mashed ripe bananas (about 3 large bananas)
1 cup all-purpose flour
1/2 cup cocoa powder
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon cinnamon (optional, but highly recommended for more flavor)
1/2 teaspoon salt
3/4 - 1 cup dark chocolate chunks (plus more for topping)

Steps:

  • Pre-heat oven to 425 degrees F and line a standard 12 cup non stick muffin tin with paper liners.
  • In a large bowl, whisk together sugar, butter, egg, and vanilla.
  • Whisk in mashed bananas.
  • Add in flour, cocoa powder, baking soda, baking powder, cinnamon, and salt. Use a spatula to mix. Don't over mix.
  • Gently stir in dark chocolate chunks.
  • Scoop evenly into prepared muffin tin. You should get 12 muffins.
  • Top with a few more chocolate chips.
  • Bake for 5 minutes at 425 degrees F and then lower heat to 350 degrees F (keep muffins in oven)
  • Bake an additional 12-14 minutes, or until a toothpick comes out *almost* clean. **Don't over bake and make sure you're not sticking a toothpick into a chocolate chip**
  • Remove from pan and enjoy!

1/4 tsp salt
2 Tbsp butter melted
3 Tbsp apple sauce
1/4 c skim milk
1 tsp vanilla

1/4 c unsweetened cocoa powder
1/2 c chopped walnut's optional
1/2 c splenda sugar blend,or 1 cup of granulated sugar

Steps:

  • 1. mash bananas,and set aside
  • 2. measure the flour,baking soda,baking powder,cocoa powder, and salt in to bowl.
  • 3. melt butter in a bowl. Add the Apple sauce,and Splenda blend. Whisk until combined well. Add the applesauce,banana,milk,and eggs.Whisk all together.
  • 4. Add the banana mixture to the flour mixture. Whisk well . Add the vanilla,nuts and chocolate chips. Stir in to combine.
  • 5. pour in to Canola Sprayed loaf pan. Bake at 350 degree's for 45 Minutes, or until pick comes out clean.

1 Tablespoon vanilla extract
3 Tablespoons light brown sugar

1/2 teaspoon salt
1 1/2 cups all-purpose flour ((white or white-whole wheat))
2 Tablespoons unsalted butter (, melted (or substitute applesauce))

Steps:

  • Grease a standard 9x5'' loaf pan (I also like to line the bottom of the pan with parchment paper to make sure the loaf doesn't stick).
  • Mash bananas in a mixing bowl. Add egg, vanilla, brown sugar, granulated sugar, and cinnamon and stir well to combine.
  • In a separate small bowl stir together flour, baking powder, baking soda and salt. Add to banana mixture and stir to combine.
  • Gently stir in melted butter. Bake at 350 degrees F. for 35-45 minutes or until a toothpick inserted into the center comes out clean.
  • Allow to cool in the pan for 5-10 few minutes before inverting onto a wire cooling rack.

3 bananas, mashed
1/2 cup of maple syrup
1 teaspoon vanilla extract
4 tablespoons coconut oil, melted
1 egg
2 tablespoons of cocoa powder
1 teaspoon of cinnamon
1 2/3 cup of white whole wheat flour
1/4 teaspoon of sea salt
1 teaspoon of baking soda
1/3 cup of mini chocolate chips

Steps:

  • Preheat oven to 350°F.
  • In a large bowl, add bananas. Using a fork mash up bananas until just very small lumps are left. Add maple syrup, vanilla extract, coconut oil and egg.
  • Using a fork mix until combined.
  • Add in cocoa powder, white whole wheat flour, salt, cinnamon and baking soda. Using a spatula, mix until wet and dry ingredients are completely combined!
  • Fold in the mini chocolate chips.
  • Line each muffin tin with a cupcake liner (or spray with pam so muffins don't stick to pan if not using liner).
  • Fill each muffin tin 3/4 of the way full.
  • Bake for 15-17 minutes. Serve.

1 C. Flour
1/2 C. Cocoa Powder
2 Tsp. Pumpkin Pie Spice
1 Tsp. Baking Soda
1/2 Tsp. Salt
1/2 C. Pumpkin Puree
1/2 C. + 2 Tbsp. Packed Brown Sugar/Sweetener Blend
1/4 C. Vegetable Oil
1/4 C. Unsweetened Apple Sauce
1/4 C. Unsweetened Almond Milk
2 Large Room Temperature Eggs
1 1/2 Tsp. Vanilla Extract
3/4 C. Semi-Sweet Chocolate Chips

Steps:

  • Preheat the oven to 350 degrees F. and lightly coat the inside of a 9x5" loaf pan with on-stick baking spray and set aside. In a medium bowl, whisk together the 1 C. flour, 1/2 C. cocoa powder, 2 Tsp. pumpkin pie spice, 1 Tsp. baking soda, and 1/2 Tsp. salt. In a large bowl, or the base of a stand mixer with the paddle attachment, beat together the 1/2 C. pumpkin puree, 1/2 C. + 2 Tbsp. packed brown sugar blend, 1/4 C. oil, 1/4 C. apple sauce, 1/4 C. almond milk, 2 eggs, and 1 1/2 Tsp. vanilla. Add the dry ingredients to the wet and mix until just combined. Fold in 1/2 C. of the chocolate chips and transfer the batter to the prepared loaf pan. Top with the remaining 1/4 C. chocolate chips and place in the oven to bake for 50-60 min or until an inserted toothpick comes out clean. Once done, remove from the oven and set aside to cool for about 20 minutes before turning out onto a wire rack to continue cooling. Once cool, slice into 8 pieces and enjoy!
