PEPPERONI PIZZA PASTA BAKE

2 cups of pasta (I weighed mine dry as that was what the nutrition info on box was for, pic below)
1 cup reduced fat pasta sauce
1/2 cup pizza sauce
1/2 Tbsp italian seasoning
Pepperoni slices (I used 40 slices, 112g, pic below)
1 cup reduced fat shredded mozzarella

Steps:

  • Boil pasta according to package, drain and add to a bowl.
  • Preheat oven to 350F, spray a 9x13 casserole dish.
  • In your bowl mix pasta, pasta sauce, pizza sauce, and seasoning.
  • Cut half of your pepperoni in small pieces and mix into your pasta, add in 1/2 cup of mozzarella.
  • Pour out into your casserole dish and pat down evenly.
  • Top with remaining cheese and then pepperoni slices, finish with a little extra italian seasoning.
  • Cover with foil and bake in oven for 20 minutes, remove foil and continue baking 15 more minutes.
  • Cut into 6 equal servings (about 7oz each) each serving is 7 smart points on blue & green, 4SP on purple if using whole wheat pasta, 4-7PP depending on your 0PP foods, (6 points plus- old program)

1 small onion, thin sliced
1/3 C turkey pepperoni, sliced in half
1/2 small tomato, sliced and slices cut in half
1 C pizza sauce
1 small green pepper, thin sliced
2 C mozzarella cheese, shredded
2 oz cream cheese
6 oz shell pasta, cooked until tender
1 tbsp olive oil
1 tbsp fresh oregano
1 tsp crushed red pepper

Steps:

  • In a medium saute pan, saute onion and pepper in the olive oil until tender.
  • In a small sauce pan, heat the pizza sauce. Stir in the cream cheese until melted.
  • Combine the pizza sauce and cooked pasta and place in the bottom of a 1 1/2 qt casserole dish.
  • Layer with 1 C of the mozzarella cheese, then add the pepperoni, green peppers and onion in a layer.
  • Add a layer of half of the remaining mozzarella cheese and top with the tomatoes.
  • Layer on the rest of the mozzarella cheese and then sprinkle with fresh oregano and crushed red pepper.
  • Turn on your broiler to high and place the pasta dish on the bottom rack of the oven. Allow to broil until the cheese is melted.

3/4 lb lean Italian turkey sausage, casings removed
1 large onion, chopped (1 cup)
1 lb fresh mushrooms, sliced (6 cups)
1 can (14.5 oz) Muir Glen™ organic diced tomatoes, undrained
1 jar (25.5 oz) Muir Glen™ organic Italian herb pasta sauce
1/2 teaspoon dried basil leaves
1 package (6 oz) sliced turkey pepperoni
1 bag (8 oz) shredded reduced-fat Italian cheese blend (2 cups)

Steps:

  • Heat oven to 350°F. In 5-quart Dutch oven, cook pasta as directed on package, omitting salt. Drain; return to Dutch oven.
  • Meanwhile, in 12-inch nonstick skillet, crumble sausage. Cook over medium heat 5 to 7 minutes, stirring occasionally, until no longer pink; drain if necessary.
  • Add onion and mushrooms to sausage in skillet; cook 7 to 8 minutes, stirring frequently, or until vegetables are tender. Stir in tomatoes; heat to boiling. Reduce heat; simmer uncovered 3 to 4 minutes or until slightly thickened. Stir in pasta sauce and basil. Heat just to boiling.
  • Add sausage mixture, pepperoni and 1 1/2 cups of the cheese to pasta in Dutch oven; stir until well mixed. Spread in ungreased 13x9-inch (3-quart) glass baking dish. Spray sheet of foil with cooking spray; cover baking dish with foil, sprayed side down.
  • Bake 30 minutes or until bubbly and thoroughly heated. Remove foil; sprinkle with remaining 1/2 cup cheese. Bake uncovered 5 to 10 minutes longer or until cheese is melted.

12 ounces uncooked whole wheat penne pasta
1 pound lean ground chicken
1 small onion, finely chopped
1 teaspoon garlic powder, divided
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon pepper
1 can (14-1/2 ounces) diced tomatoes, undrained
3 ounces reduced-fat cream cheese
1/2 cup reduced-fat sour cream
1 cup shredded part-skim mozzarella cheese, divided
Optional: Minced fresh parsley and crushed red pepper flakes

Steps:

  • Preheat oven to 400°. Cook pasta according to package directions for al dente. Drain, reserving 1/3 cup pasta water; return all to pot., Meanwhile, in a large skillet, cook and crumble chicken with onion, 1/2 teaspoon garlic powder and remaining seasonings over medium-high heat until no longer pink, 5-7 minutes. Stir in tomatoes; bring to a boil. Add to pasta; toss to combine. Transfer to a 13x9-in. baking dish coated with cooking spray., Mix cream cheese, sour cream, 1/2 cup mozzarella cheese and remaining garlic powder. Drop mixture by tablespoonfuls over pasta. Sprinkle with remaining mozzarella cheese., Bake, uncovered, until cheese is melted, 8-10 minutes. If desired, sprinkle with parsley and pepper flakes.

3 tablespoons olive oil
Large onion, chopped
2 cloves garlic, chopped
3 28-ounce cans whole tomatoes, drained and chopped
2 teaspoons dried basil
1/2-1 teaspoon crushed red pepper flakes
1 teaspoon salt
1 cup chicken broth
1 pound penne pasta
10 ounces Havarti cheese, shredded
1/3 cup grated Parmesan
1/2 cup sliced black olives
Fresh basil, chopped, for garnish (optional)

Steps:

  • Heat olive oil in a large pot. Saute onion and garlic till onion is translucent.
  • Add tomatoes, basil, crushed red pepper flakes, and salt. Stir well. Add broth and bring to a simmer. Cook till liquid is reduced.
  • Check for seasonings and add more pepper flakes and salt if needed.
  • Cook pasta in well-salted water according to package instructions.
  • Drain well and mix into tomato sauce.
  • Add Havarti and toss till well combined.
  • Pour into a large, greased baking dish. Sprinkle with Parmesan, then olives.
  • Bake at 350º for about 20 minutes, till hot and bubbly. Sprinkle with basil if desired.

1/4 cup quick-cooking rolled oats
4 teaspoons snipped fresh oregano
1/8 teaspoon salt
1/8 teaspoon black pepper
1 pound ground turkey breast
4 thin slices provolone cheese (2 ounces)
1/2 cup Muir Glen™ pasta sauce
4 whole wheat hamburger buns, split and toasted

Steps:

  • In a medium bowl, combine egg product, oats, 2 teaspoons of the oregano, the salt, and pepper. Add ground turkey breast; mix well. Shape turkey mixture into four 3/4-inch-thick patties.
  • For a charcoal grill, place patties on the rack of an uncovered grill directly over medium coals. Grill for 14 to 18 minutes or until no longer pink (165°F), turning once halfway through grilling and topping each burger with a cheese slice for the last minute of grilling. (For a gas grill, preheat grill. Reduce heat to medium. Place burgers on grill rack over heat. Cover and grill as above.)
  • Meanwhile, in a small saucepan, cook pasta sauce until heated through.
  • Place burgers on bun bottoms. Top burgers with pasta sauce, the remaining 2 teaspoons oregano, and the bun tops.
