Scrambled Eggs with Sausage and Cornbread image

A perfect way to use up leftovers. Just by adding a few peppers and onions, you have a hearty breakfast. You can add any type of meat or vegetables to this dish and make it your own. This was just my husband's favorite breakfast. Enjoy!

¼ cup vegetable oil
¼ pound bulk pork sausage
1 4x4-inch square prepared cornbread, crumbled
4 eggs
1 (10 ounce) package frozen bell pepper and onion mix, thawed
1 dash hot sauce, or to taste
salt and ground black pepper to taste

Steps:

  • Heat vegetable oil in a large skillet over medium heat; cook and stir sausage until browned and crumbly, about 8 minutes. Gently mix cornbread with sausage and cook until heated through, about 3 minutes. Stir eggs into sausage and cornbread, one at a time, cooking until eggs are scrambled and firm.
  • Stir bell pepper and onion mix into skillet; cook until heated through, stirring occasionally, about 5 minutes. Season with hot sauce, salt, and black pepper.

2 large potatoes, peeled and cubed
1/2 cup green pepper, chopped
1 small onion, chopped
2 tablespoons olive oil or 2 tablespoons vegetable oil
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon seasoning salt
8 eggs, lightly beaten
1/2 lb ham, cubed
1/4 cup water
1/4 cup salsa
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup cheddar cheese, shredded

Steps:

  • In a large skillet, saute the potatoes, green pepper, and onion in oil until tender.
  • Stir in onion powder, garlic powder, and seasoned salt.
  • In a bowl, combine the eggs, ham, water, salsa, salt, and pepper.
  • Add to the potato mixture.
  • Cook and stir until eggs are set.
  • Sprinkle with cheese.
  • Cook until cheese is melted.

6 large eggs, lightly beaten
2 packages (10 ounces each) frozen corn in butter sauce, thawed
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon pepper
1-1/2 cups cubed fully cooked ham
2 tablespoons butter
1 cup shredded cheddar cheese

Steps:

  • In a bowl, combine the first five ingredients; set aside. In a large skillet, cook ham in butter until heated through. Add egg mixture; cook and stir over medium heat until the eggs are completely set. Sprinkle with cheese. Cover and remove from the heat. Let stand for 3-5 minutes or until cheese is melted.

5 slices bacon
5 eggs, slightly beaten
1/3 cup milk
1/4 cup green pepper, chopped
1 small onion, chopped
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/8 teaspoon pepper
2 teaspoons Worcestershire sauce
1 1/2 cups corn, drained
cheese (optional)

Steps:

  • In fry pan, cook bacon until crisp.
  • Drain on paper towel, reserving 3 tablespoons drippings in fry pan.
  • Combine remaining ingredients and crumbled bacon.
  • Pour into fry pan.
  • Cook over low heat until eggs are set, stirring occasionally.
  • Sprinkle with cheese if using.

My grandmother used to make Jumbutt when we were young (I am sure I spelled it wrong). It is so easy, the amounts are very flexible and you can make a lot of substitutions based on taste -- pretty much goof-proof. We used hot dogs instead of sausage when we were kids. You can also use kielbasa.

  • Heat olive oil in a large skillet over medium heat, and cook and stir the sausage until browned and crumbly, about 5 minutes. Remove from skillet, drain off the excess fat, and set aside.
  • Place the potatoes, green peppers, and red peppers into the skillet, and cook, stirring occasionally, until the potatoes are browned and the peppers are softened, about 15 minutes. Return the sausage to the skillet, and pour the eggs over the top. Cook and stir 3 to 5 minutes until the eggs are set, and serve.
