These great little fritters are a breakfast favorite.

Number Of Ingredients 9

½ cup milk
2 bananas, mashed
2 cups all-purpose flour
½ teaspoon salt
3 teaspoons baking powder
2 eggs, beaten
1 tablespoon margarine, melted
1 quart vegetable oil for frying
½ cup confectioners' sugar

Steps:

  • In a mixing bowl, combine the milk and bananas. Sift in the flour, salt, and baking powder. Thoroughly mix in the eggs and margarine.
  • Heat the oil in a large skillet to 365 degrees F (180 degrees C).
  • Carefully place spoonfuls of the mixture into the hot oil and fry until brown. Flip the fritter and continue to brown. Remove fritters from the oil and drain on paper towels. Dust the fritters with confectioners' sugar and serve while warm.

Easy Jamaican Banana Fritters image

These Banana Fritters are a delicious way to use up your ripe bananas. Fried to golden perfection, they are full of flavor and perfect for your breakfast meal.

3 ripe bananas
1 teaspoon vanilla extract
½ teaspoon cinnamon
¼ teaspoon nutmeg
3 Tablespoon brown sugar
Pinch of salt
1 cup all purpose flour
Oil for frying.

Steps:

  • Mash bananas with fork in bowl.
  • Add brown sugar, vanilla, extract, cinnamon, nutmeg and a pinch of salt. Sift in flour and stir with spoon until fully combined.
  • Add oil to a 10 inch skillet over medium-high heat. Once oil is hot, drop banana fritter batter in oil by the spoonful. Once one side is golden and bubbles appear on the top, flip fritter and cook until the other side is browned as well.
  • Remove fritters and drain on paper towels. Enjoy :)

Serve these simple, delicious fritters with fresh fruit and a dollop of Greek yogurt for a delicious breakfast.

6 ripe bananas
2 eggs, beaten
3/4 cup all-purpose flour
3 tablespoons vegetable oil

Steps:

  • In a large bowl, mash the bananas and blend in the eggs. Stir in the flour. Heat the oil in a large skillet over medium-high heat until hot. Drop spoonfuls (2 to 3 inches in diameter) of the batter into the hot oil. Reduce the heat to medium. When bubbles begin to appear, turn and cook the other side until golden brown. Repeat the process until all the batter is used up, keeping the cooked fritters in a warm oven. Serve them with maple syrup or honey.

3 eggs, beaten
3/4 cup milk
1/4 cup brown sugar
3 cups baking mix
3 ripe bananas, diced
2 cups canola oil, for frying
1 1/2 cups powdered sugar
1 1/2 teaspoons pumpkin pie spice

Steps:

  • For the fritters: In a large bowl, whisk the eggs with the milk and sugar until blended. Stir in the baking mix and bananas until just combined.
  • Heat the canola oil in a large, heavy-bottomed skillet over medium heat. Using a small ice cream scoop, drop the batter into the skillet. Fry in batches until golden brown and cooked through the center, 2 to 3 minutes per side. Remove from the oil and allow to drain on a wire cooling rack set over a baking sheet.
  • For the glaze: Whisk together the powdered sugar, 1/4 cup water and pumpkin pie spice.
  • While the fritters are still warm, pour the glaze over top. Allow the glaze to set up slightly before serving.
