SKILLET-BAKED EGGS AND ASPARAGUS

Skillet-Baked Eggs and Asparagus image

Asparagus and eggs have an affinity for each other. The voluptuous yolk softens and smoothes the grassy sharpness of the vegetable, while the asparagus brightens up the dull richness of the egg. The pair's most classic expression is asparagus hollandaise, but that is too fussy and time-consuming a preparation for a regular home-cooked breakfast. This dish combines the flavors in a time- and cook-friendly way.

Time 40m

Yield 4 servings

3/4 pounds asparagus, trimmed and cut into 1/2-inch pieces

1/3 cup heavy cream
2 tablespoons grated Parmesan
Salt
black pepper, to taste
Lemon wedges, for serving
Flaky sea salt for sprinkling

Time 30m

Yield 4 to 6 servings

Number Of Ingredients 9

1/2 bunch asparagus, trimmed and cut into large pieces
4 ounces oyster mushrooms, trimmed and torn
5 tablespoons extra-virgin olive oil
2 cloves garlic, grated
2 teaspoons fresh thyme
Kosher salt and freshly ground pepper
8 large eggs
1/2 baguette, sliced on the bias
Chopped fresh parsley, grated parmesan cheese and red pepper flakes, for topping

Steps:

  • Preheat a grill to medium high. Put the asparagus and mushrooms in separate bowls; toss each with 1 tablespoon olive oil, 1 garlic clove, 1 teaspoon thyme and a pinch each of salt and pepper. Remove to a large plate.
  • Heat a large cast-iron skillet on the grill; add the remaining 3 tablespoons olive oil. Crack the eggs into a bowl, then pour into the skillet; season with salt. SKILLET STRATA WITH ASPARAGUS AND BOURSIN

Skillet Strata With Asparagus and Boursin image

Strata is a baked bread and egg casserole served for breakfast or brunch. This a quick and easy version that could be prepared any time of day as a one-pot meal. The strata can be prepared in a single skillet by building it in steps. Sauté onions, add the bread, and finally the eggs and asparagus, which have been par-cooked in the microwave. The skillet is then slid into an oven to cook through. Tangy, herb-and-garlic-flavored Boursin cheese adds big flavor easily.

Provided by Cucina Casalingo

Categories     Breakfast

Time 30m

Yield 4 serving(s)

Number Of Ingredients 9

1 lb asparagus (tough ends snapped off, spears cut diagonally into 1-inch pieces)
6 large eggs
1 1/4 cups milk
ground black pepper
4 tablespoons unsalted butter
1 small onion, minced
table salt
4 slices hearty white bread, cut into 1-inch squares
3/4 cup boursin cheese, crumbled

Steps:

  • Adjust oven rack to middle position and heat oven to 400 degrees.
  • Toss asparagus with 2 tablespoons water in microwave-safe bowl.
  • Cover with plastic wrap and microwave on high power until crisp-tender, about 2 minutes. Drain.
  • Whisk eggs, milk, and 1/4 teaspoon pepper together in large bowl.
  • Melt butter in large nonstick ovensafe skillet over medium-high heat.
  • When butter foams, swirl to coat skillet and add onion and 1/2 teaspoon salt.
  • Cook until onion is soft, about 3 minutes.
  • Toast the bread so that it better absorbs the egg mixture and also deepens the bread's flavor.
  • Add bread and cook, stirring frequently, until bread and onion are lightly browned, about 3 minutes. Be careful not to brown the onions too quickly--they will continue to brown as they cook with the bread.
  • Off heat, stir in asparagus and egg mixture until well incorporated.
  • Scatter cheese on top and bake until top is puffed and edges have pulled away from sides of pan, 15 to 20 minutes.
  • Serve.

SCALLION ASPARAGUS EGG BAKE

Scallion Asparagus Egg Bake image

This is a wonderful dish to be served at a brunch. The sour cream in the eggs adds a real rich flavor, and the scallions add the perfect hint of onion. Please feel free to use any cheese or combo of cheeses that you, or your family prefers. Pepper jack or Swiss might be nice alternatives to the ones I listed below. I served this for our Mother's Day brunch this year and it went over real well!

BAKED EGGS WITH MUSHROOMS AND ASPARAGUS

Baked eggs with mushrooms and asparagus image

Baked eggs with mushrooms and asparagus makes such an easy, comforting breakfast/brunch.

Provided by Caroline's Cooking

Categories     Breakfast     Brunch

Time 25m

Number Of Ingredients 9

2 oz mushrooms (55g)
2 oz asparagus (55g, trimmed weight)
1 clove garlic (small)
1 tbsp olive oil
2 eggs
2 tbsp milk (or cream)
3 tbsp cheddar (grated, or a cheddar-parmesan blend)
1 pinch salt
1 pinch pepper

Steps:

  • Preheat oven to 400F/200C. Slice the mushrooms, cutting bigger slices in half, and cut the asparagus into bite-sized lengths. Cut the garlic into small dice and toss the mushrooms, asparagus and garlic in the oil in a small skillet.
  • Put the skillet with the vegetables in the pre-heated oven for approximately 10 minutes until the asparagus is just tender.
  • Create two little spaces in the skillet for the eggs and crack them in. Drizzle over the milk then sprinkle on the cheese along with a little salt and pepper.
  • Return to the oven and bake for approximately another 7-8 minutes (depending how well done you want the eggs and on your oven), but keep a close eye on it towards the end. Remember it will continue to cook a little in the hot skillet so you want to take it out slightly early. Serve in the skillet.
