1/2 cup low-fat buttermilk
1 tablespoon freshly grated ginger
2 jalapeño chilies, minced
2 cloves garlic, crushed
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
18 jumbo shrimp (about 1 1/4 pound), peeled and deveined, tails left on
2 ripe mangos, peeled, cut into 1-inch dice
1 small lime, cut into 6 wedges

Steps:

  • Pour buttermilk into medium bowl, and add ginger, chilies, garlic, salt and pepper. Whisk to combine. Add shrimp, and toss thoroughly with a wooden spoon to coat. Marinate 1 hour in refrigerator.
  • Soak 6 wooden skewers in water for 10 minutes. Thread 3 shrimp and 2 pieces of mango onto each skewer, alternating shrimp and mango.
  • Prepare a fire in the grill. When flames have subsided and coals are glowing, grill shrimp 4 to 6 minutes on each side, until shrimp is opaque. Serve each skewer with a wedge of lime.

I use jalapeno chillies for this dish because they have a delicate flavour. Try to get a variety of colours - red, green and yellow.

12 red jalapeno chiles
12 green jalapeno peppers
12 fresh basil leaves, finely shredded
4 cm piece fresh gingerroot, peeled and finely chopped
24 raw tiger shrimp
50 g butter
salt & freshly ground black pepper
lemon wedge, to serve

Steps:

  • Slit open the chillies from top to tail, taking care to leave the stalks intact. Scrape out the seeds. Divide the shredded basil and chopped ginger between the chillies and generously season the chiilies inside.
  • Shell the prawns, leaving the tail section intact. Place a whole prawn inside each chilli, leaving the tail poking out of the pointed end. Smear a little butter on top of each prawn, then squeeze the chillies together to enclose the prawns.
  • Thread 3 chillies, alternating colours, onto 2 short, parallel bamboo skewers so that the chillies look like the rungs of a ladder - you will need to soak the skewers for 20 minutes before using them. Repeat to make 8 ladders.
  • Cook the chillies over fairly hot coals for about 5 minutes, turning frequently until they are softened and a little charred, and the prawns are cooked through. Serve with wedges of lemon. Delicious.

20 large shrimp (about 1 pound), peeled and deveined (tails left intact; optional)
3 garlic cloves, minced
1/2 jalapeno chile (stem, ribs, and seeds removed), finely chopped
1 tablespoon fresh lime juice
3 tablespoons extra-virgin olive oil
Coarse salt and freshly ground pepper

Steps:

  • Toss together shrimp, garlic, jalapeno, lime juice, and 1 tablespoon oil; season with salt and pepper. Marinate in refrigerator for 45 minutes.
  • Heat remaining 2 tablespoons oil in a large skillet over medium-high heat. Remove shrimp from marinade, and add to skillet; cook through, about 2 minutes per side.

⅓ cup water
2 tablespoons soy sauce
2 tablespoons brown sugar
1 teaspoon honey
1 teaspoon grated fresh garlic
1 teaspoon grated fresh ginger
1 pound jumbo shrimp
½ fresh pineapple, cored and cut into 1 1/2-inch pieces

2 tablespoons minced fresh cilantro
1 tablespoon toasted sesame seeds

Steps:

  • Combine water, soy sauce, brown sugar, honey, garlic, and ginger in a small saucepan and bring to a boil over medium-high heat. Reduce heat to medium-low and simmer until sauce has reduced and thickened slightly, 8 to 10 minutes.
  • Preheat an outdoor grill for medium-high heat and lightly oil grate. Thread shrimp and pineapple alternately onto skewers and place on a platter.
  • Arrange skewers on the hot grate. Grill 2 to 3 minutes per side, or until shrimp is opaque and cooked through. Turn grill to low heat and brush sauce on both sides of skewers. Transfer to a serving platter and sprinkle with cilantro and sesame seeds.
