CHICKEN ENCHILADAS

Steps:
- Combine chicken, onions and 3 cups of cheese. Mix well.
- Add one can of green enchilada sauce, cream, and diced chiles. Mix well.
- Fill each tortilla - place 3/4 cup of filling down the center of each tortilla; roll up and place, seam side down, in two 9x13-inch pans.
- After filling and rolling tortillas, pour the second can of sauce over the tortillas and spread evenly.
- Top with remaining cheese.
- Bake at 325 degrees for 25-35 minutes or until cheese is browned.
- Serve with sour cream, guacamole, or cilantro if desired.

Steps:
- Preheat oven to 400.
- In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain.
- Stir in the salsa, beans, dressing, sour cream, corn, taco seasoning and cumin.
- Spoon a generous layer of meat mixture on bottom of 2 quart baking dish. Sprinkle with 1/4 cup cheese.
- Cover the meat mixture with half of the torn up tortillas. Cover with half of the meat mixture, and 3/4 c cheese.
- Repeat this layer one more time with remaining tortillas and meat.
- The last & final layer should be the remaining 1 cup cheese.
- Cover with foil that has been sprayed with cooking spray and bake at 400° for 25 minutes, or until hot & bubbly.
- Let stand for 5 minutes before topping with lettuce, tomato and cilantro.

I got this recipe from a bridal shower I attended many years ago. It has always been a family favorite. I boil the chicken breasts as the meat stays so moist this way. Very simple and quite tasty. Prep time excludes cooking and cooling time for the chicken.

- Boil chicken breasts, cool, debone, and coarsely chop.
- Crush enough tortilla chips to cover bottom of a 9x13 pan.
- Layer chicken over the chips.
- Mix together onion, green chilies, soup, and milk.
- Pour over the chicken.
- Place Velveeta slices all over the top.
- Crush enough tortilla chips to cover the cheese.
- Bake at 350 degrees for 25 minutes.
- Garnish with salsa and sour cream.

- Preheat oven to 350 degrees F.
- In a medium bowl, combine soup and enchilada sauce.
- Spread 1 cup of soup mixture in the bottom of a 9x13-inch baking dish.
- In a large bowl, combine 1 cup of remaining soup mixture, chicken, and 1 cup of cheese.
- Place 1/4 cup chicken mixture in each tortilla, roll up and place seam side down in prepared baking dish.
- Pour remaining soup mixture over enchiladas and sprinkle with remaining cheese.

- Preheat oven to 350 degrees. Lightly grease a 8x11" baking dish.
- Pour 1/4 of the enchilada sauce on the bottom of the baking dish.
- Rip up 3 tortillas and cover the enchilada sauce layer. Top with half the chicken, 2/3 cup of cheese, 1/2 cup sour cream, and another fourth of the enchilada sauce. Repeat.
- Top the last layer of tortillas with the last of the enchilada sauce and the last 2/3 cup of cheese.
