- In a small skillet, cook beef over medium heat until no longer pink; drain. Stir in water and taco seasoning. Bring to a boil; cook and stir for 2 minutes. Cool slightly., In a small bowl, mash avocados with onion, garlic and lemon juice. In a 3-qt. glass bowl, layer with beef, avocado mixture, lettuce, olives, tomatoes, cucumber, green onions, cheese, salsa and sour cream. Serve immediately with chips.

SLIM SIX-LAYER DIP

- Heat the oil in a skillet over medium heat. Add the garlic, beans and chili paste and heat until fragrant, about 3 minutes. Using a potato masher or fork, mash the beans. Remove from the heat, add 2 tablespoons water and mash until somewhat smooth. Spread in a 2-quart glass casserole dish.
- Scatter the cheese over the beans. Halve and pit the avocados; scoop out the flesh into a bowl and mash with 1 teaspoon salt and the lemon juice. Spread the avocado over the cheese.
- Reserve some scallions, cilantro and jalapeno for garnish. Pulse the yogurt with the remaining scallions, cilantro and jalapeno in a blender or food processor. Spread over the avocado. Top with the lettuce. Season the tomatoes with another teaspoon salt and scatter over the lettuce. Top with the reserved scallions, cilantro and jalapeno.

- In a medium bowl, blend the taco seasoning mix and refried beans. Spread the mixture onto a large serving platter.

- On a cutting board, smash the garlic cloves, sprinkle with 1 teaspoon of the salt, and, with the flat side of a large knife, mash and smear the mixture to a coarse paste. Put the garlic, beans, chili powder, water, and olive oil in the bowl of a food processor and blend until smooth. Spread in the bottom of a 2-quart casserole or gratin dish, or in individual sized dishes, as desired.
- Scatter the cheese over the beans. Halve and seed the avocados, then mash with the jalapeno and another teaspoon of salt in a small bowl. Spread a layer of the avocado over the cheese, and then scatter the lettuce on top.

- Mix refried beans with taco seasoning.
- Layer on the bottom of a serving dish, preferably clear glass.
- Make guacamole by scraping out the flesh from two avocados, mashing well and adding lemon juice, garlic powder, onion salt, and salt. Mix well.
- Layer guacamole on top of the refried beans.
- On top of guacamole, add a layer sour cream.
- Drain most of the juice from one jar of salsa, discard juice, then spread salsa on top of sour cream.
- Sprinkle cheese on top of salsa, then top with sliced scallions.

- In a small bowl mix the taco seasoning with the refried beans.
- Spread the bean mixture evenly on an 11 inch plate getting close to the edge.
- Carefully spread ¾ cup of the sour cream over the bean mixture.
- Add the salsa very gently over the sour cream. If your salsa is really runny, drain off some of the liquid first.
- Apply the guacamole mixture over the salsa. I put dollops of guacamole all over and then carefully spread them together so that the salsa doesn't come through.
- Around the edge spread the grated cheese.
- Top the cheese with sliced olives, diced tomatoes, and sliced green onions.
- With the remaining ¼ cup of sour cream, put it into a sandwich bag and clip off the corner. Squeeze the sour cream into a web pattern over the guacamole.
- Top with plastic spiders.

Remember the layered taco dip everybody loves? Well, here's a Mediterranean version for you! Very, very tasty! Prep time includes chilling. This dip took a bit of work... I first posted it at Gail's way back in the 90s, I think.

- First, strain the yogurt by putting cheesecloth or a paper coffee filter in the bottom of a strainer and pour in all the yogurt but 1/4 cup (reserve for later); let it strain for a couple of hours to thicken it up, or overnight (in the fridge) to make thicker "yogurt cheese" (I prefer it just for a couple of hours; you could also substitute sour cream for the yogurt, if you like).
- Combine the reserved 1/4 cup of un-strained yogurt with the prepared hummus, then spread mixture on the bottom of a 9 inch pie dish.
- Combine remaining strained yogurt and cumin and spread over the hummus layer.
- Toss together the garlic powder, salt, lemon/lime juice, chopped tomatoes, and avocado, then spread over the yogurt layer.
- Add a layer of the cucumbers and sprinkle with a bit of salt and pepper.
- Add a layer of feta, then finish it all off with olives.
- Let chill for an hour before serving with pita chips (artichoke hearts are a good addition to this recipe, as well.).

- In a small bowl mix taco seasoning with refried beans. For a different and yummy taste, mix your taco seasoning with your sour cream layer.
- Layer the dip in each cup. I found that using a small cereal spoon worked best for me as a spread each layer in the cup. Here is the order I did: beans/taco seasoning mix, sour cream, guacamole, salsa, shredded cheese, tomatoes, olives, and green onions.
- Store in the refrigerator until serving and serve with chips.
- I was able to make about 12 cups of dip. They were a huge hit!
- If you wanted to, you could use the same amount of ingredients and spread it out in a 9x11" pan to make one large seven layer dip. ???? It will still taste amazing!

- First, you want to cook the onion and the beef. Heat the olive oil in a skillet over medium heat. Once hot, add the onion saute for 2 minutes, then add the ground beef and half of the taco seasoning. (Save the rest of the taco seasoning, you will need it). Stir the meat to break it up and to evenly distribute the taco seasoning. Once the beef has browned, set it aside.
- Pour the refried beans into an 8 inch square baking dish (or similar). Spread into an even layer.
- In a small bowl, mix the cream cheese and the remaining taco seasoning together. Then spread over the refried beans.
