CHEESY HAM BROCCOLI CASSEROLE
Cheesy Ham Broccoli Casserole with eggs, a healthy, low carb recipe for a delicious brunch. It's light, but filling, jam-packed with fantastic flavours, the perfect recipe after an epic feast like Thanksgiving or Christmas. The leftover ham can be replaced with turkey, chicken or beef, or omitted, for a vegetarian version. This broccoli bake is my absolute favourite side dish.

Steps:
- Add the broccoli florets to a pan with salted water and bring to a boil.
- Cook for 3-4 minutes until the broccoli is slightly tender, then drain the water well.
- Butter an oven-proof dish, the add the cooked broccoli florets.
- Cut the ham into cubes, and add it to the broccoli.
- Top with the grated cheese.
- In a bowl, beat the eggs, add the milk, salt and pepper and give it a good stir.
- Pour it over the other ingredients.
- Bake in the preheated oven at 180 degrees Celsius (350 Fahrenheit) for 30-40 minutes or until the egg is cooked, and the cheese is melted.

HAM, POTATO AND BROCCOLI CASSEROLE
This is a great, easy to make, and nutritious casserole. You can add some macaroni pasta or try seasoning the potatoes before you bake. Put this dish in the freezer and bake whenever you're too lazy to cook! Can also be made with leftover cooked chicken.

- Preheat oven to 375 degrees F (190 degrees C).
- Spray a 9x13 inch baking dish with cooking spray. Cover bottom of dish with layer of French fries. Add a layer of broccoli, then sprinkle ham evenly over broccoli. In a small bowl mix together soup, milk and mayonnaise. Pour mixture evenly over ingredients in baking dish and sprinkle with cheese.
- Bake uncovered in preheated oven for 40 minutes.

- Cook broccoli until tender, drain.
- Preheat oven to 350F Grease 2 qt baking dish In a medium saucepan melt butter Stir in flour to make a roux.
- Whisk in milk Cook and stir until mixture thickens.
- Lower heat slightly.
- Stir in cheese and sour cream, until cheese is melted.
- Mix ham and cooked vegetables together and spread into baking dish Pour sauce over this Combine bread crumbs and 1 tablespoon melted butter.
- Sprinkle on top of casserole.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Bring a large pot of lightly salted water to a boil; cook the pasta in the boiling water, stirring occasionally, until tender but not mushy, about 10 minutes. Drain.
- Thaw the broccoli in a microwave oven until you can break it apart into small pieces.
- Heat the olive oil in a large skillet over medium heat; cook and stir the diced ham in the hot oil until the edges start to brown, about 10 minutes. Stir in the broccoli and cook and stir until any excess water has cooked away and the ham and broccoli are hot. Pour in the jar of Alfredo sauce and the milk; stir to blend, sprinkle with pepper, and add the cooked pasta. Stir everything together to coat the pasta with sauce and bring to a simmer.
- Spread the bubbling pasta mixture into the prepared baking dish, top with shredded Colby-Monterey jack cheese, and bake in the preheated oven until the casserole is hot and the cheese is melted and starting to brown, about 30 minutes.

- Cook broccoli until just tender, then drain well.
- Combine broccoli with ham and potatoes in shallow 1 1/2 quart baking dish.
- In a sauce pan, melt butter and blend in 1/4 cup of flour slowly.
- Gradually add 2 cups of milk and stir constantly. Stir mixture until thickened. (Stir with a wisk for about 10 minutes until very thick).
