4 top sirloin steaks
1 packet Good Seasons Dry Italian Dressing mix
1/2 cup olive oil
1/2 cup balsamic vinegar
2 tablespoons extra-virgin olive oil
2 cloves garlic
28 ounces San Marzano D.O.P. tomatoes
6 fresh basil sprigs (plus additional for garnish)
1/2 teaspoon dried crushed red pepper
coarse kosher salt

Steps:

  • Whisk the marinade ingredients together in a small bowl.
  • Place the steaks in a resealable plastic bag.
  • Pour the marinade over the steaks. Refrigerate marinating steaks for at least 2 hours.
  • Remove marinating steaks from the refrigerator and let sit at room temperature for 30 minutes before grilling.
  • Heat grill to medium heat. Remove steaks from marinade and place on a hot grill.
  • Grill steaks for approximately 8 minutes on each side, turning only once. Internal temperature of the steak should reach 145 degrees for a medium steak (use a meat thermometer).
  • Heat olive oil in heavy large saucepan over medium heat, make sure the olive oil doesn't turn brown. Add garlic and sauté until a light golden brown, about 5 minutes.
  • Add tomatoes, basil sprigs, and dried crushed red pepper to a food processor and pulse a few times. Add tomato mixture to the garlic in the sauce pan.
  • Bring to a simmer. Reduce heat to low and simmer until mixture is reduced to a thick sauce consistency (about 3 cups), stirring occasionally, about 15 minutes.
  • Season sauce to taste with coarse kosher salt and freshly ground black pepper.
  • Top grilled steaks with tomato basil sauce. Garnish with shredded basil.

1 beef sirloin tip roast (5 to 6 pounds)
BEARNAISE SAUCE:
1/4 cup white wine vinegar
1/2 cup chopped green onions
1 tablespoon minced fresh tarragon or 1 teaspoon dried tarragon
1/4 teaspoon pepper
4 egg yolks
1 tablespoon cold water
1/4 teaspoon salt
1/8 teaspoon cayenne pepper

Steps:

  • Combine garlic salt and pepper; sprinkle over roast. Place on a rack in a shallow roasting pan. Bake, uncovered, at 325° for 2-1/2 to 3 hours or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Let stand for 10-15 minutes before slicing. , Meanwhile, in a saucepan, combine the vinegar, green onions, tarragon and pepper; bring to a boil. Strain, reserving liquid; discard green onions and tarragon. , In top of a double boiler or a metal bowl over simmering water, whisk egg yolks, water and vinegar mixture until blended; cook until mixture is just thick enough to coat a metal spoon and temperature reaches 160°, whisking constantly., Whisk in butter, 1 tablespoon at a time, until melted. Whisk in parsley. Keep warm. Cut roast into thin slices; serve with sauce.

4 tablespoons olive oil
1 onion, chopped
6 cloves garlic, sliced
3 (15 ounce) cans seasoned tomato sauce
3 (14.5 ounce) cans diced tomatoes with juice
6 cups water
8 (6 ounce) cans tomato paste
2 pounds sweet Italian sausage
2 pounds ground sirloin
4 tablespoons chopped fresh parsley, divided
1 cup grated Romano cheese
2 tablespoons dried oregano
salt and pepper to taste
1 pound pork meat, cubed
1 cup dry bread crumbs
3 tablespoons garlic powder
⅓ cup grated Parmesan cheese
2 eggs

Steps:

  • In large pot heat 2 tablespoons olive oil over low heat. Add chopped onion and two-thirds of sliced garlic. Saute 5 minutes. Add tomato sauce, diced tomatoes, water and tomato paste. Simmer.
  • Meanwhile, in large skillet, heat remaining 2 tablespoons of olive oil over medium heat. Saute remaining garlic 1 to 2 minutes. Add sausage and brown, about three minutes on each side. After browning, cover and reduce heat. Cook for 10 minutes, remove from heat, and cut sausages into halves. Add to tomato mixture.
  • Cook pork over medium heat in sausage skillet until brown. Add to tomato mixture. Add 3 tablespoons parsley, Romano, oregano, salt and pepper to tomato sauce. Continue to simmer over low heat.
  • Preheat oven to 375 degrees F (190 degrees C). Cover a cookie sheet with aluminum foil. In large bowl combine ground sirloin, bread crumbs, garlic powder, remaining parsley, parmesan and eggs. Form 1 inch balls and place on cookie sheet. Cook until golden brown, about 20 minutes. Add meatballs to sauce. Continue to cook sauce for 5 hours. Serve over fusilli or ravioli.

1/4 cup red wine vinegar
2 cloves garlic, grated
1 tablespoon chopped fresh rosemary
1 tablespoon chopped fresh parsley
1 tablespoon chopped fresh oregano
2 teaspoons honey
1/2 teaspoon red pepper flakes
Kosher salt and freshly ground pepper
1 2-pound top sirloin steak (1 1/2 to 2 inches thick)

Steps:

  • Whisk the olive oil, vinegar, garlic, rosemary, parsley, oregano, honey, red pepper flakes and 1/2 teaspoon each salt and pepper in a medium bowl. Transfer 3 tablespoons of the vinaigrette to a small bowl; cover and refrigerate until ready to serve.
  • Combine the remaining vinaigrette with the steak in a large resealable bag; turn the bag several times to coat the meat. Refrigerate at least 4 hours or overnight, turning the bag occasionally.
  • Preheat a grill to high. Transfer the steak to a plate or baking sheet, letting the excess marinade drip off; season the steak with salt and pepper. Let stand at room temperature, 30 minutes. Grill the steak until a thermometer inserted into the thickest side reaches 130 degrees F, 16 to 20 minutes for medium rare, flipping every 4 to 5 minutes. Transfer the meat to a cutting board and let rest 10 minutes. Thinly slice the meat against the grain; serve with the reserved vinaigrette.

1 garlic clove , roughly chopped
4 sirloin steaks , each about 140g/5oz
2 x 400g cans chopped tomatoes
2 tsp dried oregano
boiled new potatoes
handful rocket leaves

Steps:

  • Heat a heavy-based frying pan over a high heat, then add the olive oil and garlic. Season the meat; then, two at a time, quickly brown the steaks on both sides.
  • Put all 4 steaks in the pan, add the tomatoes, season with salt and pepper, then turn down the heat. Sprinkle the oregano over the meat and tomatoes, partially cover the pan, then simmer gently for 10 mins.
  • Lift the tender pieces of meat from the pan, cover with foil, then set aside. Increase the heat, then simmer the tomato sauce for about 10 mins, until it has reduced by half. Spoon the sauce over the steak and serve with new potatoes and a handful of rocket.

1 jar (4-1/2 ounces) sliced mushrooms, drained

1 teaspoon Worcestershire sauce

  • In a large resealable plastic bag, combine flour and mustard. Add beef, a few pieces at a time, and shake to coat. , In a large skillet, brown beef in butter. Add consomme and wine. 1/4 cup flour
2 tablespoons olive oil
1 cup sliced onion
1 (6 ounce) can contadina italian paste with Italian spices

  • Coat meat with flour. Heat oil in large skillet over medium-high heat.

3/4 teaspoon salt
1/2 teaspoon fresh ground black pepper
1 tablespoon all-purpose flour
