MARIE'S TENDER SIRLOIN TIP ROAST
This is a detailed recipe on how to cook a sirloin tip roast. The most important thing to remember is to not overcook it or it will be tough. Very tasty served with garlic mashed potatoes and gravy.

Steps:
- Remove roast from refrigerator one hour before serving to bring meat to room temperature for more even cooking.
- Mix together rest of ingredients and rub over roast.
- Let set for one half hour.
- Preheat oven to 325°, place roast in pan and place on upper oven rack.
- Cook for 25 minutes per lb for medium or approximately 50 to 60 minutes.
- Use a meat thermometer to check doneness - should read 140° for medium.
- Remove from oven, cover with foil to keep warm and let rest for 15 minutes before carving.

This is a wonderful garlic-infused roast that has replaced my traditional pot roast recipe. Be sure to use a good-quality top sirloin roast for the most tenderness and flavor. I love using the traditional potatoes and carrots but also add the red pepper and mushrooms for more nutritional value. Use an amber beer or a medium slightly-darker beer, such as Yuengling® Black and Tan.

- Make small slits in the roast using a sharp knife; tuck slivered garlic into each slit. Rub minced garlic, paprika, salt, and ground black pepper over the entire roast. Set aside until roast comes to room temperature, 15 to 30 minutes.
- Preheat oven to 325 degrees F (165 degrees C).
- Arrange potatoes, carrots, and onions in an even layer in a 9x12-inch roasting pan. Dissolve beef bouillon cubes in hot water in a small bowl and pour over vegetables. Pour in beef broth and beer.
- Place roast on top of the vegetables, making sure it is not submerged in the broth mixture. Place bay leaf pieces around the roast.
- Bake roast in the preheated oven until internal temperature reaches 150 degrees F (66 degrees C) for medium, 45 to 60 minutes. Transfer roast to a platter; cover with aluminum foil, and allow to rest until internal temperature reaches 155 degrees (68 degrees C), about 10 minutes.
- Increase oven temperature to 425 degrees F (220 degrees C). Add red pepper and mushrooms to the roasting pan and return it to the oven. Bake until vegetables are tender and lightly browned, 15 to 20 minutes.
- Thinly slice the roast crosswise. Serve with vegetables; spoon pan juices over meat and vegetables.

- 1. PLEASE NOTE:The cooking times for the roast will depend on weather you want it, rare, medium or well done. I cooked this 8 pounder one for almost 3 hours, and it was perfect for us. PREHEAT OVEN TO 350 DEGREES F.
- 2. FYI :If you want your roast to be [rare] it should cook until the internal temperature is about 125 degrees F. about 1 1/2 to 2 hours. For a medium rare roast it should reach about 140 degrees F, and well done about 170 degrees. I prefer not to cook to the well done stage.
- 3. These are the seasonings and spices that I used to flavor the roast. You may use others of your choice if desired.
- 4. Spray the inside walls of a 6 quart or larger Dutch oven with non stick cooking spray. Peel & slice onions into 8ths,& add to bottom of pot.
- 5. Combine all the spices together in a small bowl, and sprinkle liberally over the roast. Then drizzle with the soy sauce and the Worcestershire sauce, allowing it to fall along the sides of the roast and into the bottom of the pot.
- 6. Now wrap Roast in bacon slices in the pattern of your choice.
- 7. Cover with lid and place in preheated 350 DEGREES F. oven and cook till desired length of time or internal temperature is reached. I cooked ours 2 hours and 35 minutes, and it was perfect for us.
- 8. Remove from oven. Remove lid, and allow roast to rest at least 10 minutes before attempting to carve.
- 9. Remove roast carefully from pot, and place on a large platter. I like to use an electric knife to carve roast.
- 10. Slice into desired thickness. Add the sliced onions, and drizzle some Au Jus over the Roast, and then serve extra on the side.
- 11. I got about 1 quart of Au Jus from this Roast.
- 12. Serve Roast with your favorite sides and accompainments.
- 13. I got the idea for this recipe from this cookbook called "CALLING ALL COOKS", with the yellow cover. I USED STEAK SEASONING INSTEAD OF SALT & PEPPER, and I added other spices, and it was also my idea to wrap the roast in bacon since it is a very lean piece of meat.

- Remove the beef from the fridge 1-2 hours ahead of time to let it approach room temperature for even cooking.
- Preheat oven to 450°F. Set aside a roasting pan with a wire rack. (If you don't have a rack, you can strew thick cut onion and carrots underneath the meat instead.)
- Pat dry the beef with paper towels to remove excess moisture. Then rub with oil on all sides followed by the salt, pepper and optional herbs. Optional: insert wireless thermometer (see note).
- Put the beef in the prepared roasting pan with optional carrots and onions. Then roast for 15 minutes at 450°F.
- Reduce heat to 325°F and continue cooking for 60-90 minutes more, or about 20 minutes per pound. It's done when the internal temperature reaches 125°F as measured with an instant or wireless thermometer.
- Optional: Halfway through cooking, baste the meat by spooning pan juices on top. (If there aren't many juices, add 1/2 cup of water or broth to the pan.)
- Remove the roast from the oven. Tent with aluminum foil to keep warm and rest for 15 minutes to let the juices redistribute through the meat.
- Slice thinly crosswise against the grain to serve. Save the pan juices for gravy or serve au jus.

- Cut slits into the roast and insert slices of garlic, placing the pieces evenly around the whole roast, Rub with 1 Tbsp mustard and sprinkle with thyme. Place onto a roasting rack and top roast with the slices of bacon. Roast at 325 degrees for 1 1/2 to 2 hours.

- Preheat oven to 250 degrees (F).
- In a small bowl, combine the Himalayan pink salt, garlic powder, dried thyme, dried rosemary, and ground black pepper.
- Remove the sirloin tip roast from its packaging and place on a plate or in a shallow bowl. Do not cut off the butcher's twine tied around the roast. Rub down the roast with the olive oil, followed by the garlic and herb rub (all sides).
- Warm the bacon fat in a 10-12" cast iron skillet over medium-high heat. When the pan is hot, place the roast in the skillet. Sear on all sides until browned and caramelized (about 4-6 minutes each side).
- Bake for about 15-18 minutes per pound, or until the internal temperature reaches 125-130 degrees (F), for medium-rare (or until the roast is at the desired temperature).
- Remove the roast from the baking dish and place it on a platter. Cover loosely with foil, and allow the roast to rest for at least 15-20 minutes before slicing.
- Combine the cold water and the arrowroot starch. Set aside.
- In a heavy bottomed pan, place the cooking juices from the roast, including the crispy brown bits (or if you cooked the roast in a cast iron skillet, just use that to make your gravy in).
- Stir in the beef broth and red wine.
- Use a wire whisk to gently scrape the browned bits off the bottom of the pan and bring to a boil.
- Whisk in the arrowroot starch mixture.
- Return the gravy to a boil, then reduce the heat to medium low and simmer for about 10 minutes to thicken the gravy. Whisk occasionally.
