These are so quick and tasty. You can use strips of boneless chicken breast instead of the beef. Feel free to double the marinade. The flavor is so great for such a short marination time. You can can do them up ahead of time and have the meat sit longer if you wish.

3/4 lb top sirloin steak
2 tablespoons olive oil
1 tablespoon lime juice
1 garlic clove, finely minced
1/2 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon hot pepper flakes
1/2 teaspoon black pepper
1/2 teaspoon salt
8 flour tortillas (8 inch/20 cm)
1 -2 onion, we usually use approx. 1-2 depending on size (however much you like,enough to make a good mix with the peppers)
2 small sweet peppers, of your choice (green, red, or yellow)
salsa
sour cream
shredded cheese
chopped tomato

Steps:

  • Slice steak into thin strips.
  • In bowl, mix together 1 tablespoons olive oil, lime juice, garlic, chili powder, cumin, hot pepper flakes, black pepper & salt.
  • Add beef strips and stir to coat, set aside.
  • Wrap tortillas in foil and place in 350° oven for 5-10 minutes or until heated through.
  • Cut onions in half lengthwise and slice into strips, cut your peppers into strips.
  • In large non stick skillet over medium high heat, heat remaining tablespoons of olive oil.
  • Add onions & peppers stirring for 3-4 minutes, until softened; transfer to a bowl and set aside.
  • Add beef to skillet, cook, stirring for 3-4 minutes or until they lose their red color.
  • Return onions and peppers to skillet; stir for about one minute.
  • To serve, spoon a portion of the beef mixture down the centre of each tortilla, top with your desired toppings , fold bottom of tortilla up over filling, fold the sides in, overlapping.

1/4 cup white vinegar
4 garlic cloves, minced
1 teaspoon seasoned salt

1 medium onion, thinly sliced
1 medium green pepper, thinly sliced

Steps:

  • In a large bowl, combine the orange juice, vinegar, garlic and seasonings; add the beef. Turn to coat; set aside. In a skillet, saute onion and peppers in 1 tablespoon oil until crisp-tender; remove and set aside., Drain and discard marinade. In the same skillet, cook beef in remaining 1 tablespoon oil until it reaches desired doneness, 2-4 minutes. Return vegetables to pan; heat through. Spoon meat and vegetables onto tortillas. If desired, top with cheese and serve with picante sauce and sour cream.

Steps:

  • Brown the steak in oil.

2 teaspoons packed light brown sugar
1 teaspoon ground cumin
1 1/2 teaspoons chili powder
1/2 teaspoon ancho chile powder
1/2 teaspoon garlic powder
Kosher salt
1 1/2 pounds skirt steak
Juice of 3 limes, plus wedges for serving
3 tablespoons extra-virgin olive oil, plus more for the grill
4 bell peppers (red, orange and/or yellow), thinly sliced
2 red onions, thinly sliced
8 to 12 flour tortillas
Shredded cheddar cheese and chopped fresh cilantro, for topping

Steps:

  • Mix the paprika, brown sugar, cumin, chili powder, ancho powder, garlic powder and 1 teaspoon salt in a small bowl.
  • Put the steak in a large resealable plastic bag. Add the juice of 1 lime, 1 tablespoon olive oil and the spice mixture; seal the bag and rub the spices into the meat. Refrigerate 30 minutes to 2 hours.
  • Meanwhile, heat a large cast-iron skillet over medium-high heat. Toss the bell peppers and red onions with the remaining 2 tablespoons olive oil, the juice of the remaining 2 limes and 1 teaspoon salt in a large bowl. 2 lbs flank steak
2 large limes
1/4 cup + 2 tbsp olive oil
3 large garlic cloves, (grated)
1 tbsp chili powder
2 tsp ground cumin
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp cayenne pepper (optional)
2 tsp salt, (divided )
1/2 tsp paprika
2 large bell peppers, (sliced)
1 medium onion, (sliced)
8 small flour tortillas
Sour Cream

Steps:

  • Add flank steak to a large plastic ziplock bag. Add lime juice, 1/4 cup olive oil, chili powder, cumin, garlic powder, and cayenne to the bag as well. Zip up. Massage marinade into meat. Refrigerate for at least 2 hours and up to 8.
  • Preheat the grill to a high heat - about 450 degrees. Place a grill pan or sheet on one side of the grill. Once the steak has marinated, remove and sprinkle with 1 1/2 teaspoons of salt on both sides. Add the peppers and onions to a medium bowl. Toss with remaining 2 tablespoons olive oil. Season with remaining 1/2 teaspoon salt and a little bit of pepper.
  • Add the pepper to the grill. Cook for 3-4 minutes and then add steak on the uncovered side of the grill. Use tongs to toss the peppers. Close the grill. Let the steak cook for about 4 minutes. Use tongs to flip the steak over. Toss the peppers again. If they are charred enough, remove from the grill.
  • Cook the steak another 3-4 minutes or until it reaches your desired doneness. (For skirt steak you really want medium-rare to medium which is an internal temperature of 140-145 degrees. It will increase 5 degrees as it rests. Remove the steak and peppers from the grill. Let the steak rest for 10 minutes.
  • Use a sharp knife to cut the steak against the grain into thin slices. Serve in warm tortillas with your favorite toppings.

2 bell peppers
1/2 onion
2 large carrots
2 Tbs oil
1/2-1 tsp salt (enough to sprinkle over veggies and meat)
4 tsp chili powder
2 tsp cumin

cilantro, for garnish (optional)

Steps:

  • Slice your veggies into strips - carrots about 1/4″ wide, peppers and onions about between 1/4″ and 1/2″ wide.
  • Preheat oven to 400 (F).
  • Arrange everything on your sheet pan in a single layer (or two, depending on the size you have).
  • Drizzle oil evenly over everything.
  • Sprinkle salt evenly over everything.

1 1/4 lb. top sirloin steak
3 Tbsp. olive oil
Salt and freshly ground black pepper to taste
1 medium red onion, halved and thinly sliced
1 medium green bell pepper, halved and thinly sliced

1 tsp. ground cumin

Steps:

  • Preheat an indoor or outdoor grill to medium-high. Brush the steak with 1 Tbsp. of the oil; season with salt and pepper. Cook the steak to the desired doneness. Allow 2 to 3 minutes per side for rare, 3 to 4 minutes for medium-rare, and 4 to 5 minutes for medium. While the steak grills, place the remaining oil in a large, non-stick skillet and set over medium-high heat. Add the onion and bell peppers and cook 2 minutes. Mix in the chili powder, cumin, cayenne, salt and pepper and cook 1 to 2 minutes more, then reserve on low heat. When cooked, remove the steak from the grill and set on a cutting board. Cool a few minutes and then thinly slice and arrange on a small platter. Spoon the onion/bell pepper mixture into a serving bowl and place it, the sliced steak, and the remaining ingredients, each in separate serving dishes, on the table and allow diners to create their own fajitas. Instead of top sirloin, use any other tender beef steak in this recipe, such as strip loin or rib-eye.
