Beef and Pasta Salad image

My husband and I like zesty pasta salads and have tried many different types. This delightful dish can be eaten warm or cold, so it's a perfect meal anytime of year.

3 cups spiral pasta, cooked and drained
1 medium green pepper, julienned
1 cup halved cherry tomatoes
1/2 cup sliced ripe olives
1 pound beef top sirloin steak, cut into strips
2 tablespoons canola oil
1 bottle (8 ounces) Italian salad dressing
1-1/2 cups shredded provolone or part-skim mozzarella cheese

Steps:

  • In a large bowl, combine the pasta, green pepper, tomatoes and olives. In a large skillet, stir-fry sirloin in oil until cooked as desired; drain. , If serving salad hot, add dressing to skillet and bring to a boil. Pour over pasta mixture; toss to coat. Add cheese; serve immediately. , If serving salad cold, let beef cool for 15 minutes. Add the beef, dressing and cheese to pasta mixture; toss to coat. Chill for at least 1 hour.

This recipe was attached to some fresh chives I purchased at Publix (our local supermarket). Haven't made it yet, but it looks to be a light and refreshing main dish to make on a summer evening -- when all the kids come over I'm going to try it (with my husband as "grill master"). I like the fact that much of it can be pre-prepped. For our family, it will be a meal-in-one. All we'll need to add is a dessert. (Note: cooking time includes the time for cooling the steak.)

12 ounces beef top sirloin steaks, 1-inch thick
2 cups cherry tomatoes or 2 cups grape tomatoes, halved
1 medium red onion, peeled and very thinly sliced
1 medium red bell pepper, julienned
1 cup sliced mushrooms
1/4 cup chopped fresh chives
3 tablespoons chopped fresh parsley
1/4 cup Italian salad dressing
6 cups lettuce (or amount you want, iceberg, romaine, or your favorite lettuce.)

Steps:

  • Preheat grill to medium heat. Season steak with salt and pepper.
  • Grill steak to desired doneness (14-18 minutes for medium rare; 18-22 minutes for medium, depending on the thickness of your steak). Turn once and cool 10 minutes before slicing for the salad.
  • Thinly slice steak on the diagonal. Combine steak, tomatoes, onion, bell pepper, mushrooms, chives and parsley. Drizzle with dressing; toss to coat. Serve on the lettuce of your choice.

  • Season bison sirloin steaks with salt and pepper. Heat the 1 tablespoon oil over medium heat in a large heavy skillet. Cook bison sirloin steaks in hot oil for 16 to 18 minutes or until an instant-read thermometer registers 145 degrees F, turning once. Top each bison steak with 1 tablespoon of the pesto. Cover skillet and let stand for 3 minutes. Remove bison sirloin steaks from skillet and thinly slice.

2 cup(s) rotini pasta
8 ounce(s) bag sugar snap peas
1 cup(s) cherry tomatoes
1 large lemon-zested & juiced
2 tablespoon(s) olive oil
2 tablespoon(s) chopped fresh parsley
3 clove(s) garlic-minced
1/4 teaspoon(s) salt

1/2 - envelope packet dry italian dressing mix

Steps:

  • *Bring water to boil in pot. Add peas, boil 2-3 minutes. Drain. Rinse with cold water.
  • *Cut cherry tomatoes in half
  • *cook pasta according to package
  • *Combine peas, pasta & tomatoes in a large bowl. Toss gently.

10 ounce grilling steak (boneless prime rib)
½ teaspoon EACH: salt and pepper
1 teaspoon avocado oil
4 ounces arugula
1 cup cherry tomatoes (cut in half)
½ English cucumber (diced)
½ avocado (sliced)
¼ cup thinly sliced red onions
½ tablespoon EACH: grainy mustard, dijon mustard, and balsamic vinegar
2 tablespoons olive oil
A pinch of salt and pepper

Steps:

  • Take the steak out of your fridge and evenly coat both sides with the salt and pepper. Add all the salad ingredients to a salad bowl.
  • Heat a cast iron or heavy-bottomed pan over high heat. Drizzle the avocado oil over both sides of the steak. When the pan starts to smoke, add the steak and let it cook undisturbed for 2 minutes. Flip the steak over and let it cook for 2-3 minutes more. Transfer the steak to a cutting board and let it rest.
  • While the steak is resting, whisk the salad dressing ingredients in a small bowl. Thin the dressing with up to a tablespoon of water, as needed. Pour the dressing over the salad and toss.
  • Thinly slice the steak across the grain and serve it over the salad.

2 tablespoons lemon juice
2 teaspoons dried oregano
1 tablespoon Dijon mustard
2 teaspoons red wine vinegar

3 cups cooked small pasta shells
1 beef top sirloin steak (1 pound)
RUB:
1 tablespoon olive oil
3 garlic cloves, minced
2 teaspoons dried oregano
2 teaspoons pepper

SALAD:
2/3 cup diced cucumber
1/2 cup crumbled blue or feta cheese
1/4 cup sliced ripe olives
1/4 cup chopped red onion
1/4 cup minced fresh parsley
1 jar (2 ounces) diced pimientos, drained
Iceberg or romaine lettuce

  • Combine the first eight ingredients; set half of the dressing aside. Place pasta in a bowl; add remaining dressing. Toss to coat; cover and refrigerate. , Pierce steak with a fork. Combine rub ingredients; rub over steak. Cover and refrigerate for at least 15 minutes. Grill steak, uncovered, over medium heat for 9-10 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). 3 Tbsp Dijon mustard
2 Tbsp balsamic vinegar

1 tsp minced ginger
1/4 tsp salt
1/4 tsp black pepper
1/4 cup crumbled goat cheese

Steps:

  • Preheat broiler.
  • While the broiler preheats, bring 3 quarts water to a boil. Add pasta; cook 5.5 minutes. Add beans and cook 3 minutes or until pasta is done. Drain and rinse with cold water. Drain.
  • Sprinkly steak with garlic/pepper blend. Place on a broiler pan. Broil 3 inches from heat 10 minutes or until desired degree of doneness, turning after 5 minutes. Let stand 5 minutes. Cut steak diagonally across grain into thin slices.
