1 ½ pounds beef sirloin
1 (16 ounce) can mushrooms, with liquid
1 (8 ounce) can tomato sauce
salt to taste
freshly ground pepper, to taste
¾ cup red wine

Steps:

  • Cut beef into cubes. In a large skillet over medium/high heat, heat the olive oil and brown beef cubes with the garlic.
  • Add mushrooms with liquid, tomato sauce, salt, pepper and red wine. Cook for 30 minutes or until beef cubes are tender. Add a little more wine while cooking if desired.

1 (12 ounce) sirloin steak
salt and freshly ground black pepper to taste
2 tablespoons oil, or as needed
⅓ cup shiitake mushrooms, stems discarded, caps thickly sliced
½ shallot, sliced
1 clove garlic, peeled
⅓ cup dry white wine
⅓ cup beef broth
¼ cup butter, cubed
2 tablespoons chopped fresh tarragon

Steps:

  • Season steak with salt and pepper on both sides.
  • Heat a heavy skillet over high heat until a drop of water immediately sizzles and evaporates when flicked onto the skillet's surface. Pour in oil. Add steak and cook until it is beginning to firm and is hot and slightly pink in the center, about 4 minutes per side. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C).
  • Remove steak from skillet and set aside. Tent with foil to keep warm. Discard oil remaining in the skillet.
  • Reduce heat to medium-low and cook mushrooms, shallot, and garlic, stirring frequently, until softened, about 5 minutes. Pour in white wine and cook until slightly reduced. Pour in beef broth. Reduce heat to low and stir in butter, 1 cube at a time, stirring well after each addition. Stir in tarragon. Season with salt and pepper. Serve mushroom sauce over the steak.

3 pound roast cut of top sirloin steak, boneless
3 tablespoons olive oil, divided
1 teaspoon salt
1 teaspoon ground black pepper
4 large yellow onions, peeled and thinly sliced
3 large cloves garlic, finely chopped
1 small bunch flat parsley leaves, roughly chopped, about 1/4 cup
1 tablespoon extra virgin olive oil
2 tablespoons lemon juice
8 portobello mushroom caps
2 tablespoons flour
1/2 cup dry red wine
1 cup beef stock or broth

Steps:

  • Preheat oven to 425 degrees.
  • Rub steak with 1 tablespoon olive oil. Season beef with salt and pepper. In a large casserole on the stovetop, sear beef on both sides. To a heavy roasting pan add onions and 2 tablespoons olive oil and roast in oven for 20 minutes, to begin caramelizing onions. Place charred roast on top of onions and roast until internal temperature is 135 degrees (for medium rare), or higher, about 45 minutes. In final 15 minutes (internal temperature of beef should be approximately 120 degrees), mix garlic, parsley, extra virgin olive oil, and lemon juice. Brush mix on steak as roasting marinade and brush on mushroom caps. Add mushroom caps to roasting pan while the beef cooks for final 15 minutes.
  • Remove roast, place on carving board, and allow to rest. Place onions and mushroom caps on platter.
  • Pour excess fat from roasting pan, leaving 1 tablespoon. Add flour and cook on stovetop for 2 minutes. Add wine and reduce by half. Add broth and cook for 2 minutes.
  • Carve roast. Serve with onions, mushrooms and gravy.

1 lb boneless beef top sirloin steak, cut 1-inch thick

Steak Alfredo - a creamy combination of your favourite cut of steak plus fettuccine alfredo with mushrooms as well.

250 g fettuccine pasta
4 beef steaks (I used rump medallions approx 175g each (see my notes))
2 tbsp olive oil
500 g button mushrooms (sliced)
1 tbsp fresh rosemary leaves (finely chopped)
300 ml cream (pure cream - 35% milk fat with no thickeners)
30 g grated fresh parmesan (approx ½ cup (plus some extra to serve))
2 large garlic cloves (crushed)
2 tbsp butter
salt and pepper

Steps:

  • Cook pasta (250g) according to packet directions.
  • Meanwhile, generously season both sides of the steaks (4) with salt and pepper and fresh rosemary (1 tbsp of leaves - finely chopped).
  • In a large frying pan, heat the olive oil and fry the steaks on both sides until they are cooked to your liking. Then remove the steaks from the pan and set it aside and cover to keep warm.
  • Add sliced mushrooms (500g) to the pan and fry until golden. Then add butter (2 tbsp) and crushed garlic (2 cloves) to the mushrooms in the pan, and continue to fry for 30 seconds.
  • Add cream (300ml) to the mushroom mixture making sure to scrape up any flavour spots from the base of the pan, then add the grated fresh parmesan (30g/approx ½ cup) and mix to combine. Bring the cream mixture to a simmer, and simmer until it thickens slightly.
  • Add cooked fettuccine pasta to the cream mixture, turning to coat the pasta in the sauce.
  • Thinly slice the steaks and then add it to the creamy pasta to serve.

1 large or 2 small pork tenderloins , about 1 1/2 pounds
2 tablespoons butter, divided
2 tablespoons extra-virgin olive oil, divided
2 medium onions, thinly sliced
1 teaspoon sugar
8 ounces sliced mushrooms
1/3 cup all-purpose flour
1 teaspoon salt
1/4 teaspoon ground black pepper
1/2 cup dry white wine or Marsala wine
1/2 cup chicken broth

Steps:

  • Gather the ingredients.
  • Slice the pork crosswise, about 3/4- to 1-inch in thickness.
  • With the heel of your hand or a meat tenderizer, gently pound to make the medallions about 1/2-inch thick.
  • In a large skillet or sauté pan, melt 1 tablespoon of butter with 1 tablespoon of olive oil over medium-low heat.
  • Saute the onions, stirring frequently until softened. Add the sugar and continue cooking-stirring frequently-for about 15 minutes.
  • Add the mushrooms to the onion mixture, and continue cooking for about 5 minutes or until the mushrooms are tender and golden brown.
  • Remove the onions and mushrooms to a plate and set aside.
  • Sprinkle the pork with the salt and pepper; dredge in the flour. Add the remaining 1 tablespoon of butter and 1 tablespoon of oil to the skillet. ​
  • Pan sear the pork medallions over medium heat for about 3 to 4 minutes on each side, or until nicely browned.
  • Add the wine and broth to the skillet along with the onion and mushroom mixture. Simmer, uncovered, for 2 minutes.
  • Cover and reduce heat to low; cook for about 10 minutes longer.
  • Serve the pork tenderloin with hot cooked rice, potatoes, or pasta.
