4 eggs
4 tablespoons fat-free milk, divided
2 tablespoons shredded smoked cheddar cheese
2 teaspoons minced fresh parsley
1/4 teaspoon salt
1/8 teaspoon pepper
2 bacon strips

Steps:

  • Preheat oven to 325°. Coat four 4-oz. ramekins with cooking spray; break an egg into each dish. Spoon 1 tablespoon milk over each egg. Combine cheese, parsley, salt and pepper; sprinkle over tops., Bake, uncovered, 12-15 minutes or until whites are completely set and yolks begin to thicken but are not firm., Meanwhile, in a small skillet, cook bacon over medium heat until crisp. Remove to paper towels to drain. Crumble bacon and sprinkle over eggs.

1 slice bacon
1 teaspoon butter, melted
1 large egg
1/4 slice cheddar cheese (or your favorite)

Steps:

  • Preheat the oven to 350 degrees F.
  • If making one: Cook the bacon in a skillet over medium-high heat until browned but still flexible.
  • If making more than one: Lay out bacon on a foil and parchment-lined cookie sheet. Bake in the 350 degree F oven for 10 to 12 minutes. (You want the bacon to be cooked and flexible; not crispy.) Or cook in a skillet over medium-high heat until browned but still flexible.
  • Set up ramekins (4-ounce) or you can use a muffin tin. But if you are using the ramekins, place them on a cookie sheet. If you are using the muffin tin, put a little water in the unused muffin cups; this saves the cups from burning.
  • When bacon is done, wrap a slice around the inside of the ramekin or muffin cup.
  • Place a teaspoon of melted butter (or bacon grease) in the bottom of the ramekin or muffin cup.
  • Drop in the egg.
  • Bake in the preheated oven.
  • After about 10 to 15 minutes, place a 1/4 slice of cheese over the egg, and continue to bake until egg is cooked and the cheese is melted.

1/2 cup cut-up fresh asparagus spears (1/2 inch lengths)
1/2 cup finely chopped red peppers
2 Tbsp. chopped onions
1 cup KRAFT 2% Milk Cheddar Cheese, divided
6 eggs
1/8 tsp. ground red pepper (cayenne)
1/2 cup BREAKSTONE'S FREE or KNUDSEN FREE Fat Free Cottage Cheese

Steps:

  • Heat oven to 350ºF.
  • Arrange bread in single layer on bottom of 13x9-inch baking pan sprayed with cooking spray; top with bacon, vegetables and 1/2 cup cheddar.
  • Whisk eggs and ground pepper in medium bowl until blended. Stir in cottage cheese; pour over ingredients in pan.
  • Bake 25 min. or until center is set and no visible liquid remains. Top with remaining cheddar; bake 5 min. or until melted. Let stand 10 min. before serving.

I knew there had to be a way to make just a single serving from the dry mix, but didn't know what the ratio would be until I found it surfing the web. So for thoes of you who would like to know - here it is. I have also added the single serving of instant pudding as well. Cooking time is chill time for gelatin, the pudding is ready in 5 minutes.
