CHOCOLATE CHOCOLATE CHIP MUFFINS
I was in search for some chocolate muffins and had the hardest time trying to find any! I did come across this recipe on allrecipe.com and thought I would bring it over here! I've only made them once for my husband to take to work...they were all gone by lunch! Let me know how you like and if you have an alterations!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease muffin cups or line with paper muffin liners.
- In medium bowl, Sift together flour, cocoa, sugar, baking powder, baking soda and salt. In large bowl stir in milk, egg, oil and vanilla. Mix dry ingredients to large bowl; beat well. Add chocolate chips and walnuts, stir well.
- Fill muffin cups 3/4 full. Poke almonds into tops of unbaked muffins. Sprinkle muffins with sugar.
- Bake for 20 to 25 minutes, or until toothpick inserted in center comes out clean.

- Heat oven to 400°F Grease bottoms only of 12 regular-size muffin cups with spray, or line with paper baking cups. In small bowl, mix all filling ingredients until smooth; set aside.
- In large bowl, beat milk, oil and egg with fork or wire whisk. Stir in remaining muffin ingredients just until flour is moistened. Divide batter evenly among muffin cups.
- Place about 1 rounded teaspoon filling on batter in each muffin cup. Top with remaining batter.
- Bake 20 to 25 minutes or until golden brown. Immediately remove from pan to cooling rack (may need to run knife around side of muffins to loosen). Cool 5 minutes. Serve warm or cool.

Steps:
- Coat 12 muffin cups with nonstick cooking spray.
- In a mixing bowl, add the flour, cocoa powder,sugar, baking soda, and salt; stir to combine.
- In another bowl, add the milk, oil, eggs, and vanilla; whisk until blended.
- Add the liquid ingredients and 1/2 cup chocolate chips to the dry ingredients.
- Stir just until dry ingredients are moistened; be careful not to overmix.
- Pour batter evenly into muffin cups.
- Sprinkle remaining chocolate chips evenly over muffin batter.
- Bake at 400 degrees for 20-22 minutes or until pick comes out clean.
- Place pan on a wire rack to cool for a few minutes before removing muffins from pan.

- Preheat oven to 400 degrees F. Spray 12 muffin liners with Pam/.
- In a double boiler or microwaveable bowl combine first three ingredients and melt over simmering water or in microwave. Cool to lukewarm.
- In a large bowl combine sour cream, sugar, syrup, egg and vanilla extract; mix well. Pour lukewarm chocolate mixture into egg mixture and blend well.
- In a medium bowl mix together flour, baking soda and salt. Add to chocolate mixture, blending well. Fold in chocolate chips. Add batter to prepared muffin liner. Bake for 20 minutes. Remove from pan immediately.
- Serve warm.

- Preheat oven to 375 degrees.
- In large bowl, sift together flour, baking powder and salt. Stir in cocoa, sugar and cinnamon.
- In medium bowl lightly beat the egg. Stir in the corn oil, milk and mint extract.
- Add the egg mixture to the flour mixture and stir in the chocolate chips. Stir just until the dry ingredients are moistened.
- Fill greased muffin tins.
- Bake for 18 minutes or until a tester comes out clean.
