LOW FAT ZUCCHINI BREAD RECIPE

Steps:
- Preheat oven to 350' Spray two 8x4 inch loaf pans with non-stick spray. Set aside.
- In a large bowl, combine flour, cocoa, baking powder, baking soda, cinnamon, and salt. set aside
- In a medium bowl, whisk together sugar, eggs, applesauce, vegetable oil and vanilla. Stir in Zucchini. Add wet ingredients to dry ingredients. Stir just until dry ingredients are moistened. Fold in chocolate chips. If making double recipe use a mixer)
- Spread batter evenly in prepared pans. Bake for 50 minutes (25 minutes for smaller loaves) or until toothpick inserted in center of loaf comes out clean. Cool for 5 minutes in pans and let cool on a wire rack before serving.

LOW SODIUM WHITE BREAD - MACHINE RECIPE
My weekly made low sodium homemade white sandwich bread that always turns out with bakery fresh bread flavor, soft on the inside and a flaky crust outside.

Steps:
- Whisk measured dry ingredients together except for yeast.
- Add water and oil into the bread pan. Add whisked dry ingredients except for yeast.
- Make a small divot on top of flour in the middle and add the yeast to the indentation.
- Add ½ slice of the Tablespoon of no salt butter on top of flour in two corners of the pan.
- Insert the bread pan into the bread machine, press or twist to lock pan in place. Close the lid.
- Use Basic bread, 1.5 lb loaf, medium crust cycle (3 hrs 15 minutes)
- When bread is done, remove the bread pan using oven mitts. Turn bread pan upside down and shake it to release the loaf.
- Let bread loaf cool on a wire rack for about 30 minutes before slicing.

LOW SODIUM ARTISAN BREAD
Steps:
- In a large bowl, whisk all the dry ingredients together. Stir in water until the mixture forms a shaggy but cohesive dough. Do not over-work the dough. The less you "work" it, the more little air pockets will form.
- Turn dough ball coating outside in olive oil and cover bowl with towel or grocery bag.
- Let dough sit at room temperature for anywhere from 8-24 hours. Dough should have bubbles visible and rise a bit. This does not seem to really rise that much so don't expect it to "double".
- When you decide the dough is ready, preheat oven to 450 degrees F. Put your Dutch oven, uncovered, (I put the lid on the shelf below) into the preheated oven for at least 30 minutes.
- As your Dutch oven preheats, turn dough onto a floured surface and with floured hands, form the dough into a uniform ball. Cover dough with previous bowl cover to keep moist and let rest as oven heats.
- After the 30 minutes are up, carefully remove Dutch oven. With floured hands, place the bread dough into it and cover. (I just slide rack out with pot and place dough in.)
- Bake for 30 minutes covered. Carefully remove cover and bake for about 5-10 minutes more, uncovered. Ovens are different so keep your eye on it for your desired golden brown.
- Remove bread to a cutting board and slice as needed with a bread knife.

LOW SODIUM FLATBREAD RECIPE
I'm a huge fan of quickly taking a few flatbreads out of the freezer to make some pizza for dinner. The frozen flatbreads at the grocery store are great and very convenient, but they are almost always very high in sodium. One flatbread could be as high as 1000mg of sodium! I mean, I could personally eat one entire flatbread pizza...the small ones of course.

- Start by sifting your flour into the bowl of a standing mixer. Now add the remaining ingredients in with the flour. Using a dough hook mix the dough on medium until it begins to come together. If the dough is sticking to the sides and bottom of the bowl, sprinkle in more flour (about 1 tbsp at a time) until the dough begins to pull from the sides and bottom of the bowl and form a ball of dough.
- On medium, knead the dough for about 5 minutes. If you're doing this by hand, knead the dough for 10 minutes.
- Remove the dough from the standing mixer and place into an oiled mixing bowl and cover tightly with plastic wrap. Place the dough somewhere warm and let rise until doubled, about an hour.
- Divide the dough into 6-8 pieces and let it rest, covered with plastic wrap or a clean kitchen towel for an additional 10 minutes. Click for a 10 Minute timer
- Now roll out each piece of dough into 6-8 inch oval shaped flatbreads. These can be circle if you'd like.
- Get a grill pan or a flat skillet HOT, and dry cook the dough for 1-2 minutes per side, or until they are puffed up and have some nice golden brown spots on them. You could also cook these right on a grill or a grill type pan. Click for a 10 Minute timer
- Let the flatbreads cool off before individually wrapping them in plastic wrap. Store in the freezer for up to 6 months!

LOW-SALT WHITE BREAD
This is a good recipe for low-salt white bread. Each loaf should make 16 slices, 105 calories per slice. I've found that in most recipes, you can decrease the sugar by 1/3 (i.e., 3 tablespoons would now be 2 tablespoons), the salt by 2/3 (1 tablespoon would be 1 teaspoon), and replace the shortening with vegetable oil. Each rising time will be 10-15 minutes shorter.

- Mix 3-1/2 cups of the flour, the sugar, salt, oil, and yeast in large bowl. Add warm water. Beat on low speed 1 minute, scraping bowl frequently. Beat on medium speed 1 minute, scraping bowl frequently. Stir in enough remaining flour, 1 cup at a time, to make dough easy to handle.
- Turn dough onto lightly floured surface. Knead about 10 minutes or until smooth and elastic. Place in greased bowl and turn greased side up. Cover and let rise in warm place 45 to 50 minutes or until double. (Dough is ready if indentation remains when touched.) If you don't have a warm, draft-free place, I find it works well to place covered bowl on a rack in the oven above a pan of warm water.
- Grease 2 loaf pans, 9x5x3 or 8-1/2x4-1/2x2-1/2 inches. Punch down dough and divide in half. Shape each half into loaf, place in pans. Brush loaves lightly with margarine if desired. Cover and let rise in warm place 35 to 40 minutes or until double.
- Place oven rack in low position so that tops of pans will be in center of oven. Heat oven to 425 degrees F (220 degrees C). Bake 25 to 30 minutes or until loaves are deep golden brown and sound hollow when tapped; remove from pans. Brush loaves with margarine if desired. Cool on wire rack.
