GRILLED SWORDFISH RECIPE WITH A MEDITERRANEAN TWIST

Grilled Swordfish Recipe with a Mediterranean Twist image

Easy grilled swordfish recipe that utilizes a delicious Mediterranean marinade with cumin, fresh garlic cloves and more. But you don't even need to leave it in the marinade too long! Just a few minutes while your grill is heating!

Provided by Suzy Karadsheh

Categories     Fish and Seafood

Time 23m

Number Of Ingredients 10

6 to 12 garlic cloves, peeled
1/3 cup extra virgin olive oil
2 tbsp fresh lemon juice, more for later
1 tsp coriander
3/4 tsp cumin
1/2 to 1 tsp sweet Spanish paprika
3/4 tsp salt
1/2 tsp freshly ground black pepper
4 swordfish steaks, about 5 to 6 ounces each, from sustainable sources
Crushed red pepper, optional

Steps:

  • In a food processor, blend the garlic, lemon juice, olive oil, spices, salt and pepper for about three minutes or until well-combined forming a thick and smooth marinade.
  • Pat the swordfish steaks dry and place them in a pan (or a dish with sides to it) and apply the marinade generously on both sides and set aside for 15 minutes or so while you heat the grill.
  • Preheat a gas grill on high (be sure to oil the grates before using). When ready, grill the fish steaks on high heat for 5 to 6 minutes on one side, turn over once and grill on the other side for 3 minutes or so (the fish should flake easily, while maintain firmness. You will likely see a bit of pink on the inside, but it should cook through by the time it gets to the table).
  • Finish with a splash of fresh lemon juice and a sprinkle of crushed red pepper flakes if you like heat. Enjoy!

LEMON OREGANO SWORDFISH

Lemon Oregano Swordfish image

This Lemon Oregano Swordfish melts in your mouth with succulent flavors! Simply marinaded with fresh lemon juice, olive oil and oregano and either grilled or pan seared for a spectacular healthy meal.

Provided by Sherri Hagymas

Categories     Main Course

Time 55m

Number Of Ingredients 6

1/4 cup of olive oil (I used Colavita's Garlic Olive Oil as a wonderful addition)
Juice of half a lemon or 2 tablespoon of lemon juice.
1 teaspoon of oregano
2 cloves of garlic (minced)
1/3 teaspoon of black pepper
2 2 small swordfish steaks (or 1 large)

Steps:

  • Place all marinade ingredients in a glass dish or zip lock bag and mix to combine.
  • Rinse the swordfish in cold water and pat dry. Leave the skin on to hold it together while cooking.
  • Place the fish the marinade and be sure it is coated well.
  • Cover and refrigerate for 30-45 minutes. (longer is fine too)
  • If you are grilling, preheat your grill until approx. 400-450 degrees. Rub the grill grates with olive oil on a paper towel to keep the fish from sticking. (use tongs to hold the paper towels and not burn your hand)
  • If you are pan searing, heat a pan on medium high heat. The oil from the marinade will be enough to keep it from sticking.
  • Cook for about 7 minutes on the first side. Then flip and cook for an additional 6-7 minutes until the fish is just cooked through and white.
  • Remove from heat and let it rest 5-10 minutes minutes.
  • ENJOY!!

  • Preheat oven to 400F with rack on middle position. In a small pan, combine all Lemon Garlic Mixture ingredients and stir to fully combine. Set aside.
  • Use paper towels to pat-dry all excess moisture from the swordfish fillets. Evenly sprinkle both sides of fillets with pinches of kosher salt and freshly ground black pepper. Set aside.
  • In a large, oven-proof pan, heat the olive oil over medium high heat. Once oil is hot, add the swordfish fillets to pan and let cook until browned on one side, about 3 minutes (do not move fish around much.) Carefully flip fish fillets over to the other side, turn stove off, and immediately transfer pan into hot oven.
  • Let fish roast about 5-6 minutes or just until the top is golden and center is just cooked through. Take care not to overcook. A minute before fish is done cooking in oven, cook small pan of prepared lemon-garlic mixture over medium high heat, constantly stirring, just until melted and bubbly. Immediately turn heat off and pour mixture over the cooked fish. Be sure to pour on any juices from the swordfish pan as well.
