Number Of Ingredients 12

1 large fresh pineapple, about 3-1/2 pounds
2 tablespoons unsalted butter
3 tablespoons packed dark brown sugar
1 cup all-purpose flour
2/3 cup whole-wheat flour
1 tablespoon baking powder
1/8 teaspoon salt
1/4 cup sugar
3 tablespoons unsalted butter, melted and cooled
1 3/4 cup buttermilk
2 large eggs, lightly beaten
1/2 teaspoon vanilla extract

Steps:

  • 1. For the caramelized pineapple, remove the leaves of the pineapple and cut about 1/2 inch off the top and bottom. Cut away the skin, removing the dark brown "eyes." Cut the trimmed pineapple lengthwise into 4 sections. Remove the tough core and cut the flesh into 1/4-inch pieces.
  • 2. Melt the butter in a medium saucepan over medium-high heat. Add the brown sugar and cook, stirring, until dark and blended, about 2 minutes. Add the pineapple and cook until slightly softened, about 3 minutes. Makes about 2-1/2 cups. Keep tightly covered in the refrigerator until ready to use. Gently warm over low heat before serving.
  • 3. To prepare the waffles, preheat the waffle iron. Whisk both flours with the baking powder, salt and sugar in a large bowl. In a separate bowl, whisk together the butter, buttermilk, eggs and vanilla. Pour the liquid ingredients into the dry ingredients and stir until just combined.
  • 4. Lightly oil or spray the grids of the waffle iron. Spoon 1/2 to 2/3 cup batter into the iron, following manufacturer's instructions. Spread almost to the edges, close the lid and bake until browned and set. Serve hot with a spoonful of the caramelized pineapples on the side.

A good friend gave me this recipe and it produces a waffle that is more substantial. It's not super light and fluffy like other recipes. They are more like "Eggo" waffles (in terms of texture, not sweetness). Makes 16 (4 1/2" X 4") waffles. When preparing them for freezing, I undercook them slightly, so they don't burn in the toaster.

2 cups whole wheat flour
1/4 cup sugar
3 teaspoons baking powder
3/4 teaspoon salt
2 cups milk
3 eggs
1/3 cup vegetable oil
1 teaspoon vanilla extract

Steps:

  • Combine flour, sugar, baking powder and salt in a bowl.
  • Add milk, eggs and oil to the dry ingredients and mix until combined.
  • Use approximately 1/3 cup of batter per waffle.
  • Bake on waffle iron as per manufacturers instructions.
  • Note: My original posting of this recipe did not include salt. I didn't really miss having salt in this recipe, but I thought the first reviewer of this recipe probably had a point about blandness, so I amended the recipe to include 3/4 teaspoon of salt. Other comments have prompted me to add vanilla to the recipe, with wonderful results. Thanks for your comments!

Found in All*You Magazine many years ago. I love making this dish for our family - very simple and I can tweak it with different toppings so it always seems just a bit different.

1 whole fresh pineapple, cored (about 20 oz.)
4 tablespoons unsalted butter
1/4 cup light brown sugar, packed
6 scoops vanilla ice cream or 6 scoops frozen yogurt
1/4 cup toasted almond, slivered
1/4 cup toasted coconut
2 bananas, sliced
fresh whipped cream
1 dash cinnamon

Steps:

  • Slice pineapple into eight rings and cut each ring into 8 pieces.
  • Warm butter in a large skillet over medium high heat. When butter begins to foam, add the pineapple and brown sugar (this is when you'd add the bananas if using that option).
  • Cook, stirring frequently and make sure you are turning the pineapple chunks over while stirring. This should take about 4-5 minutes - just until the pineapple is brown and all the sugar is dissolved.
  • Remove from heat and place into a shallow serving bowls and let cool 2-3 minutes.
  • Place a scoop of ice cream/frozen yogurt on each serving and top with other toppings if desired. Or you can serve with just a dollop of freshly whipped cream and a sprinkle of cinnamon.
