5 ingredient super simple potato salad, perfect for summer BBQs and kid friendly. Easy to make the day before.

800 gram desiree or other red skinned potatoes (chopped into bite sized pieces)
1 cup mayonnaise
3 tbsps chopped parsley
3 rashers of bacon (chopped into thin slivers)
4 spring onion (thinly chopped.)

Steps:

  • Steam the potatoes until bitethrough.
  • Drain. Cool rapidly by covering in cold water. When the water warms, replace it with cold water until the water stays cold.
  • Meanwhile, fry the bacon until crispy.
  • Add the bacon, mayonnaise, parsley and spring onion to the potatoes and mix until well combined.
  • Refrigerate until serving.

1 lb Simply Potatoes Traditional Mashed Potatoes
1 2/3 cups mayonnaise
1 1/2 cups peaches (finely chopped)
1 1/2 cups ham (finely chopped)
2 tablespoons white cheddar cheese (powdered)

Steps:

  • First microwave Simply Potatoes Traditional Mashed Potatoes on high for 3 minutes with plastic film peeled on the corner for ventilation.
  • Then peel off plastic film entirely and stir Simply Potatoes Traditional Mashed Potatoes thoroughly, then place back in microwave for 1 minute.
  • Take Simply Potatoes Traditional Mashed Potatoes and pour into a mixing bowl.
  • Add 1 2/3 cups of mayonnaise, 1 1/2 cups of finely chopped peaches, 1 1/2 cups of finely chopped ham and 2 tbsp of white cheddar cheese to mixing bowl. Stir until all ingredients are thoroughly mixed, then serve!

1 (15 1/4 ounce) can tropical fruit in juice, drained, reserving 2 Tbsp juice
1/2 cup mango habanero salsa
1/2 cup diced red bell pepper
1/4 cup snipped fresh cilantro or 1/4 cup fresh parsley

Steps:

  • Prepare the potatoes according to package instructions. Place in a large bowl; add the remaining ingredients plus reserved fruit juice. Gently toss to coat. Cover and refrigerate 1 hour to blend flavors.

8 medium potatoes, peeled and cut into 1/4-inch pieces (about 8 cups)
3 tablespoons applewood seasoning rub
1/2 cup canola oil
1 small onion, finely chopped
1 small green pepper, finely chopped
2 cups Miracle Whip
4 hard-boiled large eggs, chopped
1 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Sprinkle potatoes with applewood seasoning. In a large skillet, heat oil over medium heat. Add potatoes in batches; cook, stirring frequently, until potatoes are tender, 15-20 minutes.
