Fried buffalo chicken tenders are amazing with homemade buffalo wings sauce. Coat with flour and egg and fry the chicken crunchy and crispy.

2 chicken breasts
1 cup flour
2 large eggs beaten
1 teaspoon hot sauce
1/8 teaspoon paprika
1/8 teaspoon garlic powder
1/8 teaspoon baking powder
1/2 teaspoons salt
3/4 teaspoon pepper
Oil for frying

Steps:

  • Start this recipe by cutting the chicken breasts and cut into long strips
  • Then take a bowl and add the eggs, the hot sauce, and whisk to combine. Take another bowl and add the flour, and spices to a second bowl
  • Take a piece of chicken and cover it with the flour mixture. Then transfer the chicken to the egg mix and then transfer it back into the flour mixture
  • Carefully shake excess flour from the chicken and put it on a plate. Repeat for all the pieces of chicken
  • Take a cast-iron skillet and heat about 3 inches of oil to medium-high
  • Fry the chicken tender in the skillet in small batches until golden brown. This takes about 5 minutes
  • Take out of the pan and put it on a paper towel to drain excess oil
  • Serve the buffalo chicken tenders immediately with buffalo wing sauce

1/2 teaspoon paprika
1/4 teaspoon cayenne pepper
1 lb chicken tenders, boneless, skinless
1/2 cup reduced-fat sour cream
2 tablespoons blue cheese, crumbled
celery rib

Steps:

  • Combine hot sauce, paprika and red pepper; brush on chicken. Place chicken in baking dish. Cover; marinate in the refrigerator for 30 minutes.
  • Bake, uncovered, at 375° for 15 minutes or until chicken is no longer pink.
  • Meanwhile, combine sour cream and cheese; chill.
  • To serve, place tenders on plate. Surround with celery sticks and place the bowl of dip in the middle.

2 (8 ounce) packages cream cheese
10 ounces of chunky blue cheese dressing
1/2 cup monterey jack cheese, shredded
1/2 cup cheddar cheese, shredded
3 cups cooked chicken, shredded
12 ounces hot sauce, use your favorite from sriracha to chipotle hot to sweet

Steps:

  • Melt cream cheese and blue cheese dressing in a pot over low heat.
  • Place that in a large casserole.
  • Add shredded Monterey Jack cheese, shredded cheddar, shredded chicken, and hot sauce.
  • Give a good stir.
  • Bake at 375 degrees for about 15 minutes until its hot a bubbly.
  • Serve with chips, cucumber slices, pepper sticks, celery.

4 boneless skinless chicken breasts, trimmed of fat, cut into 12 strips
1/2 cup hot sauce
3 cups Simply Potatoes® Shredded Hash Browns, more if needed
6 slices bacon, cooked crisp and crumbled
1 cup blue cheese, crumbles

Steps:

  • Trim chicken breasts of any fat and cut each into 3 strips cutting lengthwise. Place into ziploc baggie and add hot sauce. Seal it tightly closed removing air, squish it around to coat all and place into fridge to marinate for several hours, overnight, or just simply use now.
  • Preheat oven to 375 degrees. Place potatoes into shallow bowl. Line baking sheet with parchment paper. With tongs or by hand, remove strips letting any excess hot sauce drip away, one at a time, roll into potatoes to coat, and place onto prepared baking sheet. When all are nicely coated, patting on to coat well, pop into oven and bake until done, about 20-25 minutes depending on how thick your chicken strips are. Remove from oven, top with crumbled bacon and blue cheese and bake 1-3 minutes longer until blue cheese is just starting to melt.
  • Can be served with extra hot sauce, celery sticks, and Ranch or Blue Cheese Salad Dressing for dipping if desired.

These Baked Buffalo Chicken Fingers are perfect for an easy, tasty dinner, or an appetizer for a crowd. They're quick, crispy, and taste delicious dipped into bleu cheese with chopped celery and carrots on the side!

1 pound chicken tenderloins
1/4 cup butter, (melted)
1/2 cup buffalo wing sauce
1 cup panko style breadcrumbs
1/3 cup all purpose flour
1/2 teaspoon garlic salt
1/2 teaspoon paprika
pepper to taste

Steps:

  • Preheat oven to 400 degrees. Line a large cookie sheet with aluminum foil. Place a raised wire rack (like a cookie cooling rack) on top of the cookie sheet and spray with cooking spray. The rack will allow your chicken fingers to cook without getting mushy, and the spray will keep them from sticking to the rack!
  • Melt butter in a bowl in the microwave, then combine with the buffalo wing sauce and mix well. Remove 2 Tablespoons of the sauce and set aside to reserve for topping the chicken fingers later.
  • Place the panko breadcrumbs in a shallow bowl. In another separate shallow bowl, stir together the flour, garlic salt, paprika, and pepper to taste.
  • Dredge the chicken tenderloins in the flour, then dip into the buffalo sauce mixture. Next dip into the panko breadcrumbs and coat well, pressing the panko into the chicken. Place each tenderloin on to the prepared wire rack.
  • Spray the tops of the chicken with oil or cooking spray, then bake in the preheated oven for 8-10 minutes. Flip the chicken fingers and bake for an additional 8-10 minutes until golden and cooked through. Remove from the oven, and drizzle a small amount of the reserved buffalo sauce over the tops of each chicken finger, about 1 teaspoon each. Serve with bleu cheese dip, celery, and carrots. Enjoy!
