BEST EVER MEATLOAF WITH BROWN GRAVY
This is very tasty and old-fashioned. Serve with mashed potatoes and gravy. Divide into two recipes.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, combine ground beef, bread crumbs, chili sauce, egg, salt, and freshly ground black pepper; mix well. Shape into an 8x4 inch loaf pan.
- Place loaf pan on a rack in an oven-roasting pan. Bake for 1 hour, or until done. Cook until internal temperature measures 160 degrees F (70 degrees C); the meat should be well done, with no trace of pink. Remove from oven, and allow to rest for 10 minutes before serving.
- While the meatloaf is resting, prepare the gravy. In a medium saucepan, melt butter or margarine over medium heat. Add mushrooms and onions; cook and stir until tender. Add beef broth; simmer for 5 minutes, stirring occasionally. Combine water and cornstarch in a small cup; stir into broth. Cook and stir for 1 minute, or until thickened.

- 1. Heat the oven to 350°F. Thoroughly mix the beef, bread crumbs and egg in a large bowl. Place the beef mixture into a 13 x 9 x 2-inch baking pan and shape firmly into an 8 x 4-inch loaf. 2. Bake for 30 minutes. Spread 1/2 can soup over the meatloaf. 3. Bake for 30 minutes or until the meatloaf is cooked through. Let the meatloaf stand for 10 minutes before slicing. 4. Heat 2 tablespoons pan drippings, remaining soup and water in a 1-quart saucepan over medium heat until the mixture is hot and bubbling. Serve the gravy with the meatloaf.

- Preheat the oven to 425°F.
- In a large bowl thoroughly combine the beef, pork, and veal.
- In a separate bowl, beat the eggs, and then stir in the milk and oats.
- Pour the egg mixture into the meat mixture and combine thoroughly.
- Add the remaining ingredients and combine again until fully incorporated.
- Form into a loaf in a roasting pan.
- Cover meatloaf with the slices of raw bacon and bake for 45 to 50 minutes.
- Remove to a platter and keep warm while making the mushroom gravy. (Note: Be sure to reserve 1/2 cup drippings for the gravy.).
- For the mushroom gravy: Pour the water into the meatloaf's roasting pan and stir and scrape with a wooden spoon or whisk to loosen the browned bits at the bottom.
- Pour the reserved meatloaf drippings into a 2-quart saucepan and warm over medium heat.
- Gradually stir in the flour until smooth. Add the sliced mushrooms and cook, stirring constantly, until mixture is slightly browned, 4 to 5 minutes.
- Slowly stir in the liquid from the roasting pan and cook, stirring, until thickened.
- Season with salt and pepper to taste.
