SIMPLY PARMESAN CHICKEN
This is a favorite around our house; it's quick, easy and tastes great! This is a recipe that I came up with; measurements can be varied depending on your taste, i.e. if you want more cheese add more cheese, if you want less use less, you really can't hurt it. And you really can't mess it up as long as you use this recipe as a foundation.

- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl mix together the bread crumbs, Italian seasoning and Parmesan cheese. Dip chicken breasts in egg, then in bread crumb mixture to coat. Place coated chicken in a 9x13 inch baking dish.
- Bake in the preheated oven for 30 to 35 minutes or until juices run clear, turning over chicken 5 minutes before removing from oven.

QUICK BAKED CHICKEN PARMESAN
In this lighter version of chicken Parmesan I skip the pan-frying in oil and instead bake lightly-breaded chicken breasts in the oven, then top with sauce and cheese. My family's not big on lots of sauce and cheese, so I just use a little to flavor the dish. Feel free to add more if you like, but it's excellent as-is. Serve chicken over pasta with additional sauce.

- Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
- Whisk water and egg together in a bowl until smooth. Combine bread crumbs, 2 tablespoons Parmesan cheese, oregano, basil, thyme, and garlic powder in a separate bowl.
- Dip each chicken breast in egg mixture, allowing excess egg to drip back into bowl. Coat each chicken breast in bread crumb mixture, shaking off excess. Repeat dipping each coated chicken breast in the egg mixture and the bread crumb mixture for a double-coating and place in the prepared baking dish. Spray breaded chicken breasts with cooking spray.
- Bake in the preheated oven for 40 minutes. Pour spaghetti sauce over each chicken breast and top each with mozzarella cheese and remaining Parmesan cheese. Continue baking until chicken is no longer pink in the center and the cheeses are melted, about 15 minutes more. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

- Preheat the oven to 425 degrees. Line a rimmed baking sheet with aluminum foil.
- Slice the chicken breasts in half, butterfly style (see photos in the post for more details). If any part of the chicken is stil more than half an inch thick, pound them thin by placing the chicken between plastic wrap and using a rolling pin or meat mallet. Pound to 1/2 inch thickness.
- Lightly salt and pepper the chicken breasts on both sides.
- Add the flour to a plate. Whisk the eggs and milk in a shallow dish. Add the breadcrumbs to a shallow dish and stir in the parmesan cheese, basil, garlic powder, and oregano.
- Dip the chicken breasts in the flour, then the eggs, and then the seasoned bread crumbs. Place on the prepared pan. Repeat with all of the chicken.
- Lightly spray the chicken with cooking spray and bake for 20 to 25 minutes or until the chicken registers 165 degrees with an instant read thermometor.
- Remove the chicken from the oven, add a small amount of spaghetti sauce (about a tablespoon and a half) to the top of each piece of chicken, top with shredded mozzarella, and place under the broiler for about 3 minutes or until the cheese begins to very lightly brown.
