7 medium tomatoes, chopped fine
1 small red onion, chopped fine
2 jalapeno peppers, chopped fine
2 yellow hot peppers, chopped fine
8 ounces chopped canned green chilies
1 bunch cilantro, leaves picked off stem and chopped fine (adjust to taste)
1 (8 ounce) can tomato sauce
1 tablespoon garlic salt

Steps:

  • Use a food chopper to chop everything up fine.
  • Serve immediately or keep for a day in the refrigerator.

This is real salsa. Don't let the jalapeños scare you off it adds the perfect amount of heat. (If you like fire roasted salsas simply add 7 oz. can of chipotle peppers. It's optional.)

1 tomatillo
6 roma tomatoes
7 fresh jalapenos
1 poblano pepper
4 fresh garlic cloves, minced
2 tablespoons cilantro
1 (14 ounce) can whole canned tomatoes
1 tablespoon salt
1 teaspoon black pepper
juice of1 to 2 lime (use 1 add more if necessary)
1 small white onion
1 teaspoon cumin

Steps:

  • Boil romas until the skins start to pop, or are easily removed.
  • Chop onion, jalapeños, set aside.
  • Roast poblano on grill or burner ( for a hint of smokiness).
  • In a large blender add canned tomatoes first then all other ingredients.
  • Pulse blend to desired consistency.

Here in texas we have a ton of different recipes for salsa, this is my recipe for the salsa that I like the best. Its a creation of several different recipes. Hope you enjoy it !!!

1 can diced tomato
1 small onion
1 hot jalapeno pepper
2 teaspoons tomato sauce
2 teaspoons garlic salt
1 teaspoon black pepper
1/2 teaspoon cumin
1/2 teaspoon chili powder

Steps:

  • Chop jalapeno and onion in food processor until chopped but not pureed.
  • Add diced tomatoes, garlic salt, black pepper, cumin, and chili powder and blend for a few seconds more.
  • I like a lot of garlic so you might want to add more for your taste.
  • Serve with tortilla chips or on baked potatoes for a low fat alternative to butter.

10 medium garden tomatoes, (approx. size of tennis ball)
1 large sweet onion
1 jalapeno, seeded
20 fresh garlic cloves
1/3 bunch cilantro
1/2 - 1 tsp cumin
salt to taste
fresh lime juice

Steps:

  • 1. To remove the skin easily, make a small slit in the tomato, maybe an inch or so. Drop them in boiling water for 1-2 minutes or until you see skin draw apart where the slit was made. Remove tomatoes from water and place in ice water to stop the cooking process.
  • 2. In a food processor, add all the other ingredients except tomatoes and pulse until you get them the consistency that you want them. I did not want large chunks so I let the processor run until they were pureed.
  • 3. Add tomatoes to the mixture and pulse until all is combined. I think a little chunkier with the tomatoes is better but it is all a matter of choice. Add salt and lime juice to your liking. Chill and serve with chips!

  • Drain the canned tomatoes in a colander placed over a large bowl, allowing the juice to collect in the bowl below. Set aside.
  • Add the quartered onion, the smashed clove of garlic, the jalapeño, the cilantro (1/2 cup), the lime juice and zest, the kosher salt (1/2 teaspoon), and the sugar, if using (1/4 teaspoon) to a food processor. Press on for about 10 seconds, or until all the ingredients are very finely chopped.
  • Pulse until 5-10 times, until your desired consistency (I like a few chunks, but not too many!). If it's thick, you can a little bit of the reserved tomato juice until the desired thickness (use any remainder for another purpose or discard).
