8 cups 2% milk
1 cup pearl tapioca
1 cup plus 2 tablespoons sugar
1/8 teaspoon salt
4 large eggs
1-1/2 teaspoons vanilla extract
Optional: Sliced fresh strawberries and whipped cream

Steps:

  • In a 4- to 5-qt. slow cooker, combine the milk, tapioca, sugar and salt. Cover and cook on low for 4-5 hours., In a large bowl, beat the eggs; stir in a small amount of hot tapioca mixture. Return all to the slow cooker, stirring to combine. Cover and cook 30 minutes longer or until a thermometer reads 160°. Stir in vanilla., Serve with strawberries and whipped cream if desired.

Homemade Tapioca Pudding is a simple, creamy, delicious, and timeless dessert. And easier to make than you might think!

1 cup water
1/2 cup small pearl tapioca (not instant)
2 1/2 cups whole milk
1/4 teaspoon kosher salt
2 large eggs
1/2 cup granulated sugar
1 teaspoon vanilla extract

Steps:

  • Place the water and tapioca pearls in a 1 1/2 quart pot. Let stand for 30 minutes until the pearls are plump and have absorbed the water.
  • Turn on the heat to medium-high. Pour in the milk and salt; stir while bringing to a bare simmer.
  • Reduce the heat to very low, add in the sugar and cook, uncovered, stirring frequently (so the tapioca doesn't stick to the bottom of the pan), until the tapioca pearls have plumped and thickened, about 5 minutes.
  • In a separate bowl, beat the eggs. Slowly whisk in about 1/2 cup of the hot tapioca (this equalizes the temperature between the two mixtures to avoid curdling.)
  • Pour the egg mixture into the pot with the rest of the tapioca; increase heat to medium and stir for several minutes until you get a thick pudding consistency that coats the back of a wooden spoon. (Do not let mixture boil.)
  • Take off the heat and cool for 15 minutes.
  • Stir in the vanilla.
  • Serve either warm or cold and enjoy!

1/2 cup small pearl tapioca* ((not instant tapioca))
3 1/2 cups milk
½ cup heavy cream
1/4 teaspoon kosher salt
2 large eggs
1/2 cup granulated sugar
1 teaspoon vanilla extract

Steps:

  • Add milk, cream, sugar and salt to a saucepan over medium heat. Bring to a simmer, then stir in tapioca and reduce heat to low. Cook, stirring often, until mixture has slightly thickened, and the tapioca pearls have plumped and softened, about 45 minutes.
  • Add the eggs to a bowl and whisk to combine.
  • Add a spoonful of hot tapioca mixture to the beaten eggs, stirring well as you pour it in. Repeat with another few spoonfuls of hot tapioca, stirring after each. (This helps temper the eggs and bring them to a warm temperature without "scrambling" them.)
  • Add tempered egg mixture to the saucepan with tapioca and stir well to combine. Cook for 2-5 more minutes, just until thickened (keep in mind it will continue to thicken as it cools). Remove from heat and stir in vanilla.
  • Transfer to a serving bowl and place a piece of plastic wrap directly on the surface of the pudding (to keep it from forming a rubbery skin on the surface). Allow it to cool before serving. Serve either warm or chilled.

2 (14 ounce) cans coconut milk
¼ teaspoon salt
½ cup white sugar

  • Bring the tapioca, coconut milk, and salt to a boil in a saucepan over medium-high heat, stirring constantly. Reduce heat to medium-low, and simmer for 5 minutes. Stir in the sugar until dissolved.

3 1/2 ounces large pearl tapioca, approximately 1/2 cup
2 cups cold water
2 1/2 cups whole milk
1/2 cup heavy cream
1 egg yolk
1/3 cup sugar
1 lemon, zested
Pinch salt

Steps:

  • Place tapioca in a medium mixing bowl along with the water, cover, and let stand overnight.
  • Drain water from tapioca. Place the tapioca into a slow cooker along with the milk, heavy cream, and salt. Cook on high for 2 hours, stirring occasionally.
  • In a small bowl, whisk together the egg yolk and sugar. Temper small amounts of the tapioca into the egg mixture until you have added at least 1 cup. Then add this back into the remaining tapioca in the slow cooker. Add the lemon zest and stir to combine. Cook for an additional 15 minutes, stirring at least once. Transfer the pudding to a bowl and cover the surface with plastic wrap. Allow to cool at room temperature for 1 hour and then place in the refrigerator until thoroughly chilled.

1/2 cup/4 ounces tapioca (seed or Asian pearl tapioca)
3 cups water (divided)
1/8 teaspoon salt
1 (13.5 ounces) can coconut milk (or "lite" coconut milk)
Garnish: table syrup (or maple syrup to serve)
Optional: 1 fresh mango (sliced)

Steps:

  • Gather the ingredients.
  • In a medium bowl, cover tapioca with 1 cup water.
  • Let soak for 15 to 20 minutes or until the granules expand slightly. Avoid over-soaking or the tapioca will not be able to hold its shape.
  • Pour off excess water.
  • In a pot with a lid, combine tapioca, salt, and the remaining 2 cups water. Bring to a boil over high heat.
  • Reduce the heat to medium-low and simmer for 10 to 15 minutes. Stir occasionally, adding a little more water if necessary to prevent tapioca from bubbling and "spitting."
  • When the tapioca turns soft and a little gooey, turn off the heat and place the lid on tight. Let it sit at least 10 minutes. The residual heat inside the tapioca will finish turning all of the seeds soft and translucent.
  • Remove the lid and allow the tapioca to cool on the stovetop.
  • Cover it again and refrigerate until it's cold; it will thicken and gel together.
  • To serve, scoop about 1/4 cup or more of the cold tapioca per person and place in serving glasses or bowls.
  • Pour 1/4 to 1/3 cup coconut milk over each portion and stir to mix. This pudding should be on the runny side and you will have to stir it well to distribute the tapioca.
  • Add a little syrup to each portion (about 1 tablespoon or to taste). Each person can add more according to their preferred sweetness.
  • Add slices of fresh mango or any tropical fresh fruit, if desired.

1/3 cup (60 g/2 oz) small pearl tapioca
2 2/3 cups (640 ml) coconut milk (or substitute some of it with whole milk or coconut cream)
1/3 cup (60 g/2 oz) granulated sugar
¼ teaspoon salt
½ teaspoon pure vanilla extract
Sliced fresh fruit such as mango (, melon, pineapple, lychee)
Coconut chips (, optional)

Steps:

  • Place tapioca and coconut milk in a medium saucepan and let soak for 30 minutes.
  • Add sugar and salt to the tapioca mixture, and heat over medium heat until it reaches a simmer. Reduce heat to low and let simmer very gently for 15 minutes until tapioca pearls are transparent and the mixture has thickened. Be sure to stir frequently so that the tapioca doesn't stick to the bottom. Once done, remove from heat and stir in vanilla.
  • Pour into cups and place in the refrigerator until completely chilled, at least 3 hours. The pudding will thicken after refrigeration.
  • Serve with sliced fresh fruit/fruit puree and coconut chips if desired.
  • Tapioca is best the same day it's made, but will keep for up to 3 days in the fridge.

This is from my Nana's recipe box, her recipe for tapioca pudding. I have no idea where she originally found the recipe, but it's simple and tastes great. If you have an Asian grocery store near you, try finding the multicoloured pearls, they add a bit of fun colour to a traditional pudding. Great served either warm or chilled, with cooking time of around 30-40 minutes. Complete comfort food item!

1/2 cup tapioca
3 cups 2% low-fat milk (if pearls are soaked overnight, use 2-1/2 cups milk)
1/4 teaspoon salt
1/2 cup sugar
2 eggs
1/2 teaspoon vanilla

Steps:

  • I recommend soaking the tapioca pearls in 2 cups of water the night before as it reduces some of the excess starch and means less cooking time.
  • In a 1-1/2 quart saucepan, combine the tapioca pearls, the milk, and salt. Stir frequently on medium-high heat until the mixture comes to a boil. Reduce heat to minimum and simmer 5 minutes. Add the sugar in gradually, stirring constantly.
  • In a separate bowl, beat the 2 eggs. A little at a time, add some of the tapioca mixture to the eggs and continue stirring. This is "tempering" the eggs and will bring them up to temperature gently, preventing the eggs from scrambling.
  • Add the tempered egg mixture to the tapioca. Gently bring the mixture back up to near-boiling. Reduce heat to minimum and simmer, stirring constantly, until desired consistency is reached. Pearls should be translucent and gelatinous.
  • Allow tapioca to cool 15 minutes before adding the vanilla. Serve warm or chill until serving time.
