2 pounds beef bottom round, trimmed of excess fat
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3/4 cup all-purpose flour
1/4 cup vegetable oil or bacon drippings
1 large onion, thinly sliced
2 cloves garlic, minced
2 stalks celery, chopped
1 tablespoon tomato paste
1 (14.5-ounce) can diced tomatoes
1 teaspoon smoked paprika
1 teaspoon dried oregano
1 tablespoon Worcestershire sauce
1 1/2 cups beef broth

Steps:

  • Preheat the oven to 325 degrees F.
  • Cut the meat with the grain into 1/2-inch thick slices and season on both sides with the salt and pepper. Place the flour into a pie pan. Dredge the pieces of meat on both sides in the flour mixture. Tenderize the meat using a needling device, until each slice is 1/4-inch thick. Dredge the slices on both sides once more and set aside.
  • Add enough of the bacon drippings or vegetable oil to just cover the bottom of a 4 to 5-quart Dutch oven set over medium-high heat. Once the oil begins to shimmer, add the steaks to the pan, being careful not to overcrowd. Cook until golden brown on both sides, approximately 2 minutes per side. Remove the steaks to a plate and repeat until all of the steaks have been browned.
  • Remove the last steaks from the pot and add the onions, garlic, and celery. Saute for 1 to 2 minutes. Add the tomato paste and stir to combine. Next add the tomatoes, paprika, oregano, Worcestershire sauce and beef broth and stir to combine. Return the meat to the pot, submerging it in the liquid. Cover the pot and place it in the oven on the middle rack. Cook for 1 1/2 to 2 hours or until the meat is tender and falling apart.

Steps:

  • Heat oil in large skillet.
  • Combine flour, salt and pepper.
  • Cut steak into 4 or 5 servings; dredge in flour mixture.
  • Brown on both sides in hot oil; remove to large baking dish.
  • Place vegetables over steak; pour tomatoes, tomato sauce, water and Worcestershire over all.
  • Cover and bake at 350 degrees for 1 1/2- 2 hours, or until meat is tender.
  • Serve with sauce spooned over the mashed potatoes.

Steps:

  • In a large plastic bag, combine 1/2 cup flour, 1 teaspoon salt, 1/2 teaspoon pepper and garlic salt. Add beef, a few pieces at a time, and shake to coat. Remove meat from bag and pound with a mallet to tenderize. , In a Dutch oven, brown meat in oil until no longer pink. Add the green pepper, celery and onions; cook and stir for 10 minutes. Add garlic; cook 1 minute longer. Stir in the tomatoes, broth, soy sauce and remaining salt and pepper. Cover and bake at 325° for 2 hours. , Remove from the oven and return to stovetop. In a small bowl, combine water and remaining flour until smooth; gradually stir into juices. Bring to a boil over medium heat. Cook and stir sauce for 2 minutes or until thickened.

½ cup flour
½ teaspoon paprika
½ teaspoon garlic powder
½ teaspoon pepper
2 tablespoons olive oil (or as needed)
2 onions (chopped)

1 can diced tomatoes with juice (28 ounces)
1 can beef broth (10 oz)
1 tablespoon Worcestershire sauce
1 tablespoon cornstarch (optional, see note below)

Steps:

  • Preheat oven to 350°F.
  • Using a meat mallet, pound meat to ½″ thickness.
  • Combine flour, paprika, garlic powder, pepper & salt to taste. Dredge meat in flour mixture.
  • Heat 1 tablespoon of olive oil over medium heat in a dutch oven. Brown steaks on each side (adding additional olive oil if needed). Set aside.
  • Place onion & carrot in the bottom of the pot. Top with browned steaks.
  • Add remaining ingredients except for cornstarch. Cover and cook for 2 ½-3 hours.

1 tablespoon vegetable oil
2 pounds cube steaks, pounded thin and cut into bite-sized pieces
1 ½ tablespoons all-purpose flour
1 medium onion, chopped
1 pound mushrooms, sliced
salt and pepper to taste
1 (1.2 ounce) package brown gravy mix
2 (14.5 ounce) cans stewed tomatoes
1 (12 ounce) package egg noodles

Steps:

  • Heat oil in a Dutch oven over medium heat. Dredge steak strips in flour. Working in batches, place strips in hot oil. Fry until browned on both sides. Remove to a warm platter. When all meat is browned, return meat to Dutch oven, and stir in onions, mushrooms, salt, pepper, gravy mix, and stewed tomatoes. Bring to a boil, then simmer about 30 to 45 minutes.
  • About 20 minutes before steak is finished, fill a large pot with water and bring to a boil. Add pasta, and cook until al dente, about 8 to 10 minutes; drain.

¾ cup all-purpose flour
½ teaspoon sea salt
½ teaspoon black pepper
½ teaspoon granulated garlic, (or garlic powder)
2 tablespoons olive oil or avocado oil, (plus additional tablespoon if needed)
2 pounds cubed beef steak, (about 4 steaks)
1 small onion, (sliced pole to pole)
2 garlic cloves, (crushed and minced)
¼ cup red wine or red wine vinegar
1 tablespoon tomato paste
1 teaspoon smoked paprika, (sweet paprika may be substituted, or a combination of the two)
1 teaspoon oregano
1 teaspoon sea salt
¾ teaspoon black pepper
1- 15 oz. can diced fire roasted tomatoes
1- 15 oz. can crushed tomatoes
1 tablespoon worcestershire
1 ½ cup beef broth, (vegetable broth or water)

Steps:

  • Preheat oven to 325F degrees. Place oven rack on middle position.
  • In a shallow bowl or dinner-size plate, mix flour, salt, pepper and garlic.
  • Heat oil over medium-high heat in a large ovensafe dutch oven or heavy bottomed pot (one that has a lid).
  • Dredge each cube steak on both sides in the flour mixture, shaking off excess. Place steak in heated pan as you go. Brown the steaks on both sides, about 3 minutes per side (you don't want to cook them all the way through). Remove from pan and set aside on a large plate while preparing the sauce.
  • In the same pan you cooked the steaks, reduce heat to medium. Add just a little additional oil if necessary. Add sliced onion and cook until softened and golden but not burnt, about 3 minutes. Add minced garlic and cook additional 30 seconds.
  • Add ¼ cup of red wine and cook until wine evaporates, about 3 minutes.
  • Add tomato paste, smoked paprika, oregano, salt and pepper. Stir to combine.
  • Add diced and crushed tomatoes, worcestershire and beef broth. Stir and cook until mixture starts to simmer.
  • Add the cube steaks back into the pot and make sure to cover them with the tomato mixture.
  • Cover with lid, place in 325F degree oven and cook without checking for 1 hour 45 minutes.
  • After this time is up, check and cook, covered again, an additional 15-30 minutes or until most of moisture is evaporated and steaks are covered in reduced tomato mixture.

Steps:

  • Prepare your fire using either charcoal coals or wood. Eileen is using the charcoal coal method for her Dutch Oven Camp Cooking. Check out Eileen's article on Dutch Oven Camp Cooking for information and instructions on Dutch Oven cooking.

  • When the pan is hot (hold hand over the oven to see if it is hot). You are now ready to cook.
  • Ingredients for Swiss Steak. NOTE: I sometimes also add bell peppers and mushrooms to the recipe. Be creative!
  • Cut up meat into chunks. Depending on what you are serving with the meat, you may want to cube it into bite-size pieces. Season meat with garlic powder, salt, and pepper to taste. Note: You can also add cayenne pepper, steak seasonings, and any other spices that you want. Chop onion into large chunks.
  • Add meat and onions to the hot Dutch Oven, placing onions on top of the meat.
  • Place lid on the Dutch Oven for a few minutes. Place some hot coals on the lid to help heat up and cook the meat.
  • Remove lid and stir occasionally to evenly brown the meat.
  • Swiss Steak evenly browned on both sides and ready for the next step.
  • Once the meat has browned, add the stewed tomatoes and tomato sauce. NOTE: Worcestershire Sauce is a good addition to this dish, if you so desire.
  • Place the lid back on the Dutch Oven and let the mixture simmer for approximately 15 to 20 minutes. After 20 minutes, remove lid and check for tenderness. If the meat is not tender and falling off the fork when poked, place the lid back on the Dutch Oven and continue to cook for approximately another 10 to 15 minutes.
  • Variation: To add to this meal, you might add cubed or sliced potatoes to the Swiss Steak while cooking or served with already cooked noodles or rice.
  • Your Swiss Steak is now done. Serve to your family and enjoy!

1/2 cup flour
1/2 teaspoon salt

1/4 cup salad oil

10 ounces water
8 new potatoes, whole, unpared
6 carrots, quartered, pared

  • EARLY IN DAY: Cut round steak into 8 large pieces.
  • Mix flour with S&P and with edge of saucer, pound into steak.
  • In hot oil in Dutch oven, brown steak on both sides; add onions and brown a bit. Add soup and water. Cover; simmer about 30 minute or until meat begins to be tender.
  • Refrigerate.
  • TO SERVE: Heat meat to simmering point; add potatoes and carrots; simmer, covered about 25 minute Season to taste. Push frozen peas down into the juices. Cook, covered, about 10 min longer or just until vegetables are tender.
