- In small bowl, mix softened butter, garlic, thyme, salt and pepper. Set aside.
- Spray 6-quart slow cooker insert with cooking spray. Pour beef-flavored broth into slow cooker. Rub beef roast all over with vegetable oil. Heat 12-inch skillet over medium-high heat. Cook 4 minutes on ribs side, then turn and cook 1 to 3 minutes each on other sides, until browned, holding roast upright in skillet with tongs if necessary.
- Transfer to slow cooker, ribs side down. Rub butter mixture on top and sides of roast. Cover and cook on Low heat setting 3 to 5 hours or until desired temperature in center. For medium-rare, cook 3 hours 30 minutes to 4 hours, or until meat thermometer inserted in center reads 135°F. Prime rib is a delicious, savory cut of beef valued by many as one of the best parts of the cow you can eat. Most assume they'll only ever be able to taste this expensive cut by paying top dollar in a restaurant.

- First, make several half inch deep holes in your meat across all sides of the roast with a sharp knife, spaced about two inches apart.
- Fill the holes with slivered pieces of garlic and rosemary leaves alternating between the two (this will likely require about 7 cloves of garlic and 3 sprigs of rosemary depending on how thinly you cut the garlic and how many leaves are on a sprig).
- Once the holes have been filled, mix together two tablespoons each of black pepper, kosher salt, paprika, and dried rosemary with a tablespoon of vegetable oil, rubbing or brushing it onto the meat on all sides.
- Once seasoned, allow the meat to rest at room temperature for half an hour.
- This lets the meat warm up slightly before it hits the heat, ensuring a more even cook and a juicier end product.
- While your roast warms up, now is a good time to light the grill.
- The properly cook prime rib using this method, you need to set up your grill for indirect cooking at a grill temperature of about 375 degrees Fahrenheit.
- For a charcoal grill, this would mean placing coals only on one side of the grill or using a heat diffuser, while keeping one area of a propane grill turned off.
- Additionally, add a grill safe baking pan underneath the space you plan to put the prime rib, as this will let you catch the drippings you'll use for making gravy later on.
- Once the grill and the meat have come up to temperature, you can begin cooking.
- Place your prime rib roast onto the grate in the cold spot you make earlier for indirect grilling.
- You can expect the roast to cook for around 12 minutes per pound of meat, meaning close to 3 and a half hours for a roast this size.
- Remember to periodically add a little bit of water to the baking pan catching the drippings to prevent them from burning.
- When the meat has reached the designated temperature, remove it from the grill and place it onto a cutting board or other flat surface.
- Tent loosely with aluminum foil and let it rest for at least 20 minutes if not an hour.
- During this resting period, the meat fibers will relax and reabsorb some of their lost juices, leading to a more tender and flavorful meat.
- Additionally, this extra time allows the residual heat inside the roast to distribute evenly, raising the temperature by about 5 degrees and ending the cooking process.
- As your meat rests, now is the perfect time to make some delicious gravy to go with it.
- Place the pan full of drippings onto the stove and heat it over medium heat.
- Add in a few tablespoons of flower, stirring it into the fat until it's completely coated.
- Cook the flower for about two minutes before adding in a cup of beef or chicken stock, whisking the mixture vigorously and scrapping the bottom of the pan to loosen any browned bits stuck to the bottom.
- Continue cooking the gravy until it reaches your desired thickness, adding salt and pepper to taste.
- You could also toss in a few fresh herbs to help make it extra flavorful. Once it's done, strain it through a fine mesh sieve into a container.
- Once both your meat and gravy are ready, it's time to eat.

Like many Nebraskans, the poet Erin Belieu's family members use any large gathering as a pretext for serving prime rib. Thanksgiving is no exception. When Ms. Belieu, a fourth-generation Nebraskan, was growing up in Omaha, her family served prime rib alongside the turkey - until they realized no one really liked the bird and dispensed with it altogether. Her grandfather was a cowboy, and the whole family was steeped in the state's ranching culture, even when they eventually moved to the city. - Preheat the oven to 375 degrees F (190 degrees C). Combine the salt, pepper and garlic powder in a small cup. Place the roast on a rack in a roasting pan so that the fatty side is up and the rib side is on the bottom. Rub the seasoning onto the roast.

HOLIDAY STANDING RIB ROAST
When it comes to the holidays, everyone has their favorite roast. For me, there can be only one: the standing beef rib roast. This pricy cut is often misidentified as "prime rib," and, sure, some of them are prime grade, but few are. If you can only find choice rather than prime, that's okay. Either way, it's an expensive hunk of meat, so you'll want to cook it right. Here's how I do it. Oh, and don't forget to serve with a hot, fresh Yorkshire pudding. Note: If you would rather not "dry-age" the roast (or you forgot to plan days ahead - happens to all of us), season the meat with kosher salt, using 2 teaspoons per bone, and place on the same wire rack and sheet pan set-up described below. Let sit, uncovered in the refrigerator for at least 12 hours, or up to 24 hours, before proceeding with the recipe. You don't need to add more salt before roasting, but you will still want to rub the roast with oil and pepper.

- Remove any plastic wrap or butcher's paper from the roast. If any twine is tied around the roast (running in the direction of the ribs), leave it in place for now.
- Place the rib roast onto a rack set inside a half sheet pan, baking dish, etc. Airflow around the roast is key. Wrap in at least three layers of the cheesecloth, which will allow air flow while preventing the outer surface of the roast from hardening. Position the wrapped roast so that the ribs are facing downward and stash on the lower level of the refrigerator (set no lower than 34°F and no higher than 38°F) for 5 to 7 days. There's no need to change the cheesecloth during this time. Note: Although this isn't classical "dry aging," which involves a lot of complex enzymatic action, this drying will remove some of the moisture from the roast thus intensifying its flavor.
- When you're ready to cook, retrieve the roastYou can leave it on its rack and half sheet pan. from the refrigerator, remove and discard the cheesecloth, and rub roast with the oil. Remember to rub the bones with oil, as well. Once the roast is completely coated with oil, cover the roast with kosher salt, using about 2 teaspoons per bone, and the pepper. Let sit at room temperature for 1 hour.
- Place a probe thermometer into the center of the roast and set its alarm for 118°F. Set the roast on the lower middle rack in a cold oven and turn the oven to 250°F. Let roast until the meat hits its target temperature, about 3 hours for a 3-bone roast or up to about 4 hours for a 4-bone roast. (It is more important to keep an eye on the temperature than the time here; your times may vary depending on the exact weight and shape of the roast.)
- When the thermometer alarm goes off, remove the roast from the oven, transfer to a cutting board, cover with foil, and let rest while preparing the pudding. (The roast's internal temperature should rise up to around 130°F, then very slowly start to fall.) Pour off the drippings from the sheet pan into a heat-proof liquid measuring cup. Let the roast rest for 30 minutes. Hang on to the sheet pan and rack; you'll use it again later.
- After 30 minutes, return the roast to the rack and sheet pan, then return to the oven. Crank the oven upas high as it will go; ideally 550°F, but 500°F will also work, and cook until the exterior of the roast is browned, 10 to 15 minutes, depending on how hot you can get your oven to run.
- Return the roast to the board, carve, and serve with Yorkshire pudding. And no, you don't need to rest it again.

- Preheat the oven to 450 degrees F.
- In a small bowl combine the cayenne, rosemary, and garlic. Add enough olive oil until it becomes a loose paste. Schmear the roast with the rosemary-garlic paste and really massage it into the meat. Season generously with kosher salt.
- Put the onions, baby carrots, celery and mushrooms in the bottom of a roasting pan. Toss with a little olive oil and salt, to taste. Add the wine, 1 cup of chicken stock and the bay leaves. Put the roast on top of the veggies and put into the preheated oven until the roast is really brown and lovely, about 25 to 30 minutes. Reduce the heat to 350 degrees F for another 1 3/4 to 2 hours. Occasionally during the cooking time, spoon some of the juices over the meat. If the liquid level in the pan goes down too much, add the remaining 1 cup of stock. It also would be a great idea to rotate the roasting pan about halfway through the cooking process.
- Check the temperature of the meat by inserting an instant-read thermometer into the center of the roast. For medium-rare it should be 125 degrees F and 130 for medium. Remove the roast from the oven to a cutting board and let it rest for 15 to 20 minutes before carving.
- Taste the veggies in the pan juices and season with salt, to taste, if needed. Skim off any excess fat.
- Slice the roast and arrange on a serving platter. Serve with the veggies and the pan juices.

She got the recipe 40 years ago at a dinner party over conversation about how scarey it was to think about cooking a prime roast. Well, this is fool-proof and we have never used another recipe. - 1. Season roast with salt, pepper and paprika...keep bones in roast for extra flavor, or cut them off but tie them back before roasting...the bones impart terrific flavor...roast must be at least 5 lbs.

- For the roast: Preheat the oven to 450 degrees F.
- Season the roast evenly with 1 1/2 tablespoons salt and both peppers, rubbing it into the roast. Place the roast bone-side down in a rack in a roasting pan. Roast for 30 minutes.
- Lower the temperature to 350 degrees F. Toss the potatoes with the olive oil, rosemary and 1 1/2 teaspoons salt in a small bowl. Scatter the potatoes around the roast and continue to cook until a deep brown crust has formed around the outside of the roast and the internal temperature reads 120 degrees F, an additional 1 1/2 to 2 hours. Allow the meat to rest for 20 minutes before slicing.
- For the Salmoriglio: Warm a small skillet over medium heat. Add the olive oil and garlic and cook slowly until the garlic is golden brown and fragrant, about 3 minutes. Allow to cool. Whisk together the lemon zest and juice, rosemary, thyme and salt in a medium bowl. Drizzle in the olive oil and garlic and allow to sit at room temp for 10 minutes. Serve alongside the rib roast.
- If using with the Blistered Baby Pepper Salad, pour the salad over the roasted potatoes, toss with additional olive oil and serve with the roast.
- Heat a large skillet over high heat and add the oil, peppers and salt. Cook, stirring and tossing often, until the peppers begin to brown and soften, about 10 minutes. Pour the peppers into a large bowl and toss with the parsley, olives and capers.
