4 tomatoes, diced
2 onions, diced
1 green bell pepper, diced
1 red bell pepper, diced
1 yellow bell pepper, diced
1 orange bell pepper, diced
3 jalapeno peppers, diced
1 lime, juiced
¼ teaspoon garlic powder, or to taste
salt and ground black pepper to taste
1 bunch fresh cilantro, finely chopped

Steps:

  • Preheat a smoker grill to 250 degrees F (120 degrees C). Add wood chips according to manufacturer's directions.
  • Combine tomatoes, onions, bell peppers, and jalapeno peppers in an aluminum grill pan. Place on the grate of the preheated smoker grill; smoke for 3 hours.
  • Remove vegetables from the smoker and place in a blender. Blend to desired consistency. Mix in lime juice, garlic powder, salt, and pepper. Add fresh cilantro for decoration.

This salsa is so easy to throw together on days when you already have the smoker going. Tweak it to your preferred heat level by leaving some or all of the jalapeno seeds in for a spicier salsa! The longer you let the salsa sit, the better it becomes. I like to use hickory wood, but fruit woods also work great.

4 large Roma tomatoes, halved lengthwise
1 small red onion, quartered
1 jalapeno pepper, halved and seeded
4 cloves garlic, peeled
⅓ cup chopped cilantro
1 lime, juiced
1 pinch salt to taste

Steps:

  • Preheat the smoker to 225 degrees F (110 degrees C). Add wood chips according to manufacturer's directions.
  • Place tomatoes, onion, jalapeno pepper, and garlic inside a disposable foil pan and place on the smoker rack. Smoke vegetables for 90 minutes.
  • Transfer vegetables into the bowl of a food processor or blender. Add cilantro, lime juice, and salt. Pulse several times until vegetables are finely chopped; do not over-process. Serve at room temperature or refrigerate to let flavors meld.

5 pounds tomatoes
3 poblano peppers
2 jalapeños, finely chopped ~ wear gloves!
1 large white onion, chopped, 1½ cups
3 garlic cloves, finely chopped
1 cup apple cider vinegar
½ cup chopped cilantro
2 teaspoons dried oregano
½ teaspoon cumin
2 teaspoons kosher salt
1 - 2 tablespoons sugar

Steps:

  • Heat gas grill on high. If using charcoal, do not use lighter fluid or the tomatoes and peppers will pick up that taste!
  • Rinse tomatoes and peppers. Core tomatoes and score a small "X" in the blossom end. Place tomatoes and peppers on hot grill and close lid. Turn frequently until peppers are charred and blistered and pretty much black all over. Tomatoes should have some blackened spots and blistered enough to remove the skins. Remove from grill. Place peppers in a bowl and cover with plastic wrap to steam for several minutes. Let tomatoes cool a bit on a cutting board until you can handle.
  • Peel and chop the tomatoes and place in a large bowl, being sure to include all the juices. You should have 7 to 8 cups of chopped tomatoes and juices from 5 pounds of tomatoes. You need at least 7 cups for safe canning purposes.
  • Wearing gloves, peel poblano peppers, the blackened skins should come right off. Pull out stem and discard. Cut poblanos open and remove seeds. Finely chop peeled and seeded poblanos. You should have 1 cup, and no more than 1½ cups, again, for canning purposes.
  • Place fire roasted tomatoes and poblanos in a large pot and add the remaining ingredients, adding just 1 tablespoon of sugar to start. Bring to a boil and then turn down and simmer for 10 minutes.
  • Using an immersion blender or food processor, carefully purée the salsa to a smoother consistency. In a food processor and working in batches, pulse 8 - 10 times and when all finished, return to the pot. Taste for seasonings and if too vinegary, add another tablespoon or so of sugar. If too sweet, add a little more vinegar to balance. Bring blended salsa back to a boil and simmer a few more minutes.
  • Have sterilized pint jars and lids and screw caps ready (they should all be washed in very hot water). Use a canning funnel and ladle hot salsa into jars, leaving a ½-inch head space. Wipe rims clean with a damp cloth and carefully place lid on and screw cap in place. Process in a boiling water bath for 15 minutes, then place upright on counter for 24 hours (see recipe notes for link to USDA Canning Guidelines). You will hear popping sounds as the jars seal. If after 24 hours, any haven't sealed, put in refrigerator to use now.
  • Store jars of salsa in pantry and use within a year. Enjoy!

10 cups chopped cored peeled tomatoes (about 25 medium)
5 cups chopped seeded green bell peppers (about 4 large)
5 cups chopped onions (about 6 to 8 medium)
2-1/2 cups chopped seeded chili peppers, such as hot banana, Hungarian wax, serrano or jalapeño (about 13 medium)
1-1/4 cups cider vinegar
3 cloves garlic, finely chopped
2 Tbsp finely chopped cilantro
1 Tbsp salt
1 tsp hot pepper sauce, optional

Steps:

  • Prepare boiling water canner. Heat jars in simmering water until ready for use. Do not boil. Wash lids in warm soapy water and set aside with bands
  • Combine tomatoes, green peppers, onions, chili peppers, vinegar, garlic, cilantro, salt and hot pepper sauce, if using, in a large stainless steel saucepan. Bring to a boil over medium-high heat, stirring constantly. Reduce heat and boil gently, stirring frequently, until slightly thickened, about 10 minutes.
  • Ladle hot salsa into hot jars, leaving 1/2 inch headspace. Remove air bubbles. Wipe jar rim. Center lid on jar and apply band, adjust to fingertip tight. Place jar in boiling water canner. Repeat until all jars are filled.
  • Process both pint and half pint jars for 15 minutes, adjusting for altitude. Turn off heat, remove lid, let jars stand 5 minutes. Remove jars and cool 12-24 hours. Check lids for seal, they should not flex when center is pressed.

  • Use a damp paper towel to wipe the dried chiles clean before toasting. In a heavy, dry skilled (such as cast iron) toast the chiles in batches until pliable. Place them in a shallow bowl and pour the boiling water over them, then weigh them down with a plate. Let soak for 10 minutes.

  • Preparation is super simple for this cook. We will first peel and cut the onions in half since they are the densest and we will want the smoke to be able to penetrate them. We will also want to cut the top off the garlic clove and drizzle some olive oil on top so it will essentially bake into it giving it some extra flavor. Then just husk the corn, wash all the rest of the veggies and that’s it! (I told you this was super simple.)
  • We will place all the veggies on the smoker over indirect heat with wood chips (any kind you like) at 225-250 for at least 1 hour and up to 2 hours depending on how much smoke flavor you would like. Remember that the longer the salsa sits, the more smoke flavor it will develop. So if you plan on making some to eat for later in the week, I would limit it to about 1 hour, but if you plan on eating it all right after it comes off the grill, go ahead and let all that smokey goodness soak in for a full 2 hours!
  • This is probably the most time-consuming part and it still only took me 15 minutes! Once we pull the veggies off the smoker, you'll want to cut the corn off the cob and put the kernels into a bowl. Next, peel the skin off the tomatoes and garlic. For the rest of the veggies, we want to just quarter them so they will mix better when we blend them. Next, depending on how much heat you want, you can de-seed the jalapenos, or if you like it extra spicy, you can leave the seeds in there.
  • Now we just throw all the veggies (except the corn) into a blender or a food processor with one bunch of cilantro and let it pulse until it gets to your preferred thickness. You will notice that a lot of water may come off the tomatoes and it will be a bit more liquidy than what you purchase at the grocery store or get at your favorite Mexican restaurant. So if you don’t like that, simply pour into a strainer and let the excess water drain out and voilà you have a chunkier salsa

  • Begin by preheating your smoker to 225ºF. While the smoker is preheating, prep the veggies. Slice the onion in half, then one half into quarters, and remove the outer skin. Slice the top off the garlic, and drizzle with a little extra virgin olive oil. (Leave the skin on for now.) Cut the peppers in half lengthwise, and remove the seeds and membranes. Leave some of the seeds intact for a spicier salsa. Cut the tomatoes into thick wedges. (I quartered mine.)
  • Place the veggies directly on the grill grate or in a grilling basket. I used a cast iron skillet for the tomatoes. (Don’t freak out, it’s okay in a well-seasoned pan.) Grill for 60-90 minutes, then remove and allow to cool.
  • Rough chop the veggies when cool enough to touch, and remove the garlic cloves from the skin. Place the peppers, onions, garlic, and cilantro into the bowl of a food processor, and pulse until finely chopped. Add the tomatoes, and pulse until the desired consistency is reached. I like to leave my salsa slightly chunky, but you can make yours smoother if that’s what you like.
  • Remove the salsa from the food processor, and place in a bowl. Add the salt, pepper, and juice of one lime. Stir to fully incorporate the seasoning. Cover and refrigerate for at least two hours before serving to let the flavors fully combine. Bring to room temperature when serving.
