SIMPLE SICILIAN BEEF STEW
Served here with polenta, this meal is equally lovely with garlicky mashed potatoes or crusty bread for mopping. Bring the meat to room temperature, about 30 minutes, before cooking.

- Preheat a large Dutch oven over medium-high heat and oven to 300 degrees F with racks in lower third and upper third of oven.
- Pat meat dry and season with salt and pepper. Add some olive oil to the pan, 1 turn of the pan, melt about a tablespoon of butter into oil and when it foams, add about a third of the meat. Brown evenly on all sides and remove, then repeat with more oil and butter as needed and removing meat to platter or tray as you work. Add remaining oil and butter and when butter foams add the onions, fennel and garlic, bay, citrus and rosemary. Partially cover and soften about 10 minutes. Add tomato paste, then stir and add wine. Reduce 2 to 3 minutes, then add beef, stock, semi-dried or sundried tomatoes, olives and chile flakes or paste. Cover and place in oven for about 2 hours until very tender.
- Arrange the Roma tomatoes on a small baking sheet, dress with EVOO, thyme, salt and pepper and slow roast them along with the meat, for 2 hours.
- Serve beef on a platter topped with tomatoes or in shallow bowls atop Polenta or potatoes.
- Heat water and milk in a saucepan to a low boil, then whisk in cornmeal and season with salt and pepper. Cook 35 to 40 minutes, whisking occasionally, until thickened and creamy to taste. Stir in butter to serve.
INCREDIBLE SICILIAN AUBERGINE STEW WITH COUSCOUS
This is a fantastic dish from southern Italy that the Sicilians are super proud of - and so they should be - it's a complete joy to eat. The trick is not to cut the aubergine chunks too small or they will take on too much oil and become heavy, instead of having the lovely creamy flavour and texture we're aiming for. Jam-packed with veg, this recipe adds up to two of your 5-a-day, and using wholewheat couscous, instead of the regular stuff, will help keep you fuller for longer because it's higher in fibre. Brilliant!

- Trim and cut the aubergine into large chunks. Heat a couple of lugs of olive oil in a large pan over a medium heat, add the aubergine, oregano and a little sea salt, then toss to coat.
- Turn the heat up to high and cook for 4 to 5 minutes, giving the pan a shake every now and then.
- While that's ticking away, peel and finely chop the onion and garlic. Pick and chop the parsley leaves and finely chop the stalks, then roughly chop the tomatoes.
- When the aubergine is golden all over, add the onion, garlic and parsley stalks, then cook for a further 2 minutes - if the aubergine gets too dry, add a little more oil to the pan.
- Drain and add the capers, destone and add the olives, then drizzle over the vinegar.
- When all the vinegar has evaporated, add the tomatoes and simmer for around 15 minutes, or until the aubergine is tender.
- Put the couscous into a bowl, add a pinch of salt and just cover with boiling water, then pop a plate on top and leave to fluff up.
- Lightly toast the almonds in a dry pan over a medium heat for 1 to 2 minutes, or until golden, keeping them moving.
- Use a fork to fluff up the couscous and stir through half the chopped parsley.
- Season the stew to taste, then drizzle with extra virgin olive oil.
- Serve the stew with the couscous and sprinkle with the almonds and remaining parsley.

- Layer the potatoes, carrots, onion and celery in a 5-qt. slow cooker. Place flour in a large shallow dish. Add stew meat; turn to coat evenly. In a large skillet, brown meat in oil in batches. SICILIAN-STYLE FISH STEW RECIPE

- Heat 1 tbsp olive oil in 5-quart Dutch oven (like this one) over medium heat. Add onions, celery, and a little salt and pepper (about 1/2 tsp each). Cook, stirring regularly, until softened (about 4 minutes). Add thyme, red pepper flakes and garlic and cook briefly until fragrant (about 30 more seconds).
- Now, stir in the white wine and reserved tomato juice from can. Bring to a simmer, and cook until the liquid is reduced by about 1/2. Add the tomatoes, vegetable broth, raisins, and capers. Cook for 15-20 minutes over medium heat until flavors combine.
- Pat the fish dry and season lightly with salt and pepper. Insert the fish pieces into the cooking liquid, and give everything a gentle stir so that the fish pieces are nicely covered in the cooking liquid. Bring to a simmer and cook for another 5 minutes. Remove the Dutch oven from the heat and cover. Let sit off heat for another 4-5 minutes so that the fish will finish cooking. Fish should be flaky when gently pulled apart with a paring knife. Finally, stir in the chopped parsley.
- Ladle the hot fish stew into serving bowls, top each with a few toasted pine nuts, if you like. Serve with your favorite crusty bread! Enjoy!

- Season beef with salt and pepper. Heat a large skillet over medium-high. Add 1 tablespoon oil and half of beef, in a single layer; cook, turning a few times, until browned all over, 5 to 7 minutes. - Heat the oil in a dutch oven or large saute pan over medium-high heat. Pat the beef pieces dry with paper towels and season generously with salt & pepper. When the oil is hot sear the beef pieces (in batches, don't overcrowd the pan) until well browned on all sides, about 6 minutes total per batch. Transfer the seared beef to a 5 quart slow cooker and set aside.
- Keep the pan over medium-high heat, add the shallots and garlic and cook while stirring until fragrant, about 1 minute. Add the red wine and cook, while scraping the bottom of the pan to release and stuck on bits, until most of the wine has evaporated, about 4 minutes.
- Take the pan off the heat and stir in the tomatoes, red pepper flakes, fennel, and rosemary. Pour the tomato mixture into the slow cooker over the beef. Cover the slow cooker and cook on LOW for 8 hours or until beef is tender.
- When stew is done cooking stir in the green olives and season with salt & pepper to taste. Stew can be served by itself or goes great with mashed potatoes..
