HONEY-GARLIC SHRIMP
While it may sound like a plain, generic item you see on a menu at the food court at the mall, honey-garlic shrimp is actually one of the most exciting and delicious garlic shrimp recipes I know. It's the perfect balance of sweet and savory while still packing a substantial garlic punch, plus it's extremely fast and simple to make. This recipe uses half the honey that typical recipes use and allows the natural sweetness of the shrimp to shine through. Serve over hot cooked rice or the starchy base of your choice such as noodles.

Steps:
- Make sure shrimp are fully thawed and well drained. Keep in the refrigerator while you make the marinade.
- Whisk garlic, honey, ginger, soy sauce, and fish sauce together in a bowl.
- Add shrimp and toss thoroughly with a spatula for 2 minutes until completely coated. Cover with plastic wrap and marinate in the refrigerator for 30 to 60 minutes; toss occasionally while marinating.
- Brush a large nonstick skillet with oil and heat over high heat until you begin to see small wisps of smoke. Use tongs to immediately transfer shrimp into the hot skillet in a single layer. Set excess marinade aside.
- Sear shrimp for 2 minutes, then flip over. Dump in marinade and cook for 1 minute. Turn off heat and flip shrimp once more; let sit for about 1 minute. The marinade in the pan will reduce down to a beautiful glaze just from the residual heat in the pan. Garnish with green onion.

SPICY-SWEET GLAZED SHRIMP

- Heat a grill or grill pan to high. Clean and lightly oil hot grill. Stir together chili sauce and honey. Assemble kebabs (using 2 long skewers for each, threading 1 skewer through head end of shrimp and 1 through tail end); season with salt and pepper.
- Grill until shrimp begin to turn opaque, 2 to 3 minutes. Flip, brush liberally with glaze, and cook until opaque throughout, 3 to 4 minutes. Brush with more glaze and serve.

- Combine the shrimp with the chili powder, cayenne, 1/4 teaspoon salt and a pinch of black pepper in a medium bowl. Toss until the shrimp is thoroughly seasoned. Set aside.
- Melt the butter in a skillet over medium heat. Add the garlic, sorghum, Worcestershire and 2 tablespoons water. Stir and saute to combine, 1 to 2 minutes. Add the shrimp and stir to coat in the pan sauce. Saute until the shrimp are opaque and just starting to curl, about 5 minutes. CHIPOTLE-GLAZED SHRIMP

- Preheat a grill or grill pan over medium-high heat.
- Skewer the shrimp onto 6 soaked wooden skewers, about 5 shrimp per skewer.
- Whisk together the adobo sauce, honey, olive oil, half of the scallions and the zest of the limes in a small bowl until well combined. Brush the shrimp with some of the glaze and place on the grill.
- Grill the shrimp for 2 minutes per side, brushing them with the glaze until they are slightly charred and just cooked through.
- Transfer to a platter and garnish with the remaining scallions and the lime wedges.
SPICY GLAZED SHRIMP

- Glaze: Place all ingredients in a bowl and place over boiling water until butter is melted. In a blender of a food processor, blend on high speed until the mixture becomes a smooth paste. Refrigerate overnight before use.
- For the shrimp: Make a small incision in the outside of the backside of the shrimp. Working with the shrimp's natural curvature, poke the tail of the shrimp up through the incision to expose the tail. Pull the tail completely through the whole so that the tail can easily serve as a toothpick.
- To assemble: Heat cooking oil in a large saute pan over high heat - cooking oil should coat the bottom of the pan. Add half the shrimp to the pan to cook. Move them around constantly so they will cook completely and evenly. Once the shrimp are fully cooked, add 2 heaping tablespoons of the glaze to the pan while moving the shrimp. Allow the glaze to evenly coat all the shrimp and lightly caramelize on the shrimp. Remove the shrimp from the pan. Wash the pan and repeat the process with the next 8 shrimp. Once all the shrimp have been cooked and glazed, garnish them individually with a basil leaf by sticking the leaf in through the incision made for the tail. Serve the shrimp warm or at room temperature.
CHIPOTLE GLAZED SHRIMP
SPICY! If you love spicy shrimp dishes, this one is for you. I serve it over rice, but you could have it any way you like. For those who don't like it really spicy, reduce the amount of chipotles. Would be great barbequed and basted with the sauce. Adapted from a magazine clipping. Easily cuts in half for smaller servings.

- In saucepan large enough to hold shrimp, heat olive oil over medium heat, and saute onion until softened, about 5 minutes.
- Add garlic, cumin, oregano and saute for 1 minute.
- Stir in water, vinegar, chiles, ketchup, orange juice and brown sugar.
- Bring to a boil, then lower heat and simmer for about 5 to 10 minutes, until slightly reduced and thickened.
- Cover sauce over very low simmer.
- Heat oil in large skillet.
- Lay shrimp in skillet, sprinkle with Old Bay if using, and saute shrimp until just done, only about 3 or 4 minutes.
- Add shrimp to sauce, and raise heat to high, cooking for about 1 minute, stirring gently until shrimp is coated with glaze.
- Serve over hot cooked rice.

- Place the shrimp in a large sealable plastic bag. In a small bowl, whisk together the olive oil, soy sauce, honey, balsamic vinegar, hoisin, garlic and pepper. Pour half of the mixture into the bag with the shrimp and set the remaining half aside. Seal the bag then shake it lightly so that the shrimp are thoroughly coated. Refrigerate the shrimp for 1 hour.
- Preheat a grill or grill pan to medium-high heat. Slide several shrimp onto each of the wooden skewers then place the skewers on the grill and cook the shrimp until pink throughout, 3 to 4 minutes per side. While the shrimp cook, transfer the remaining half of the honey-garlic mixture to a small saucepan set over medium-high heat. Bring the mixture to a boil, then reduce it to a simmer and cook it just until it has thickened into a glaze, about 5 minutes. Set the glaze aside.
- Remove the shrimp skewers from the grill or grill pan and brush them with the prepared glaze. Serve immediately.
