2 tablespoons sesame seeds
1 1/2 tablespoons rice or white wine vinegar
1/2 teaspoon sesame oil
2 tablespoons honey
1 tsp Soy Sauce
1/4 teaspoon black pepper
1/3 cup mayonnaise
4 cups shredded cabbage
2 carrots, medium
2 scallions sliced

Steps:

  • Cut the cabbage very thinly. You could use a food processor as well for this, but I like cutting it myself. To do this, cut it into large chunks or slices so it is more manageable. Then slice very thin and transfer to a large mixing bowl.
  • Shred the carrots using the large side of a grater. Or use your food processor. Thinly slice the scallions. Place both in the same bowl with the cabbage.
  • Place sesame seeds in a pre-heated pan on low heat and stir constantly for a minute until slightly fragrant
  • In a small bowl, mix together vinegar, sesame oil, Soy sauce, mayonnaise, honey, pepper
  • In a large bowl, mix together cabbage, carrots, and scallions. Toss with dressing to coat evenly. Top with toasted sesame seeds

1 Tbsp rice vinegar ($0.12)
3 Tbsp soy sauce ($0.39)

1 tsp grated fresh ginger ($0.04)
1/2 Tbsp sesame seeds ($0.04)
6 cups shredded red cabbage ($1.09)
1 large carrot ($0.11)

1 cup frozen shelled edamame ($0.67)

Steps:

  • Prepare the dressing first to allow the flavors time to blend. Place the neutral oil, vinegar, soy sauce, toasted sesame oil, brown sugar, ginger, and sesame seeds in a jar or other small container with a lid, and shake until combined. Set the dressing aside.
  • Shred the cabbage as finely as possible. Use a large-holed cheese grater, mandolin, or food processor to shred the carrot. Finely dice the bell pepper, and slice the green onion. Cook the edamame according to the package directions (mine required microwaving for 5 minutes).
  • Place all the vegetables in a large bowl and pour about half the dressing over top. Toss the ingredients together until everything is combined and coated in dressing. Taste and add more dressing if desired (I used about 3/4 of the dressing). Serve immediately or refrigerate until you're ready to eat. Always stir the slaw just before serving to redistribute the dressing.
