This Tamale Pie Recipe is so simple to make and is so delicious!

2 lbs ground beef
1 can corn (undrained (or you can use 2 cups of frozen corn and 1/4 cup of water))
2 boxes corn muffin mix (+ ingredients listed on the box)
16 oz salsa (14-16 oz)
1 cup Cheddar cheese (shredded)
*Feel free to add whatever else you like- olives (green onions, diced tomatoes etc.)

Steps:

  • Heat the oven to 375°F.
  • Brown the ground beef over medium-high heat. Rinse and drain.
  • Add the corn and salsa to the beef- mix until combined.
  • Pour the beef mixture into a 13 x 9 casserole pan.
  • Sprinkle with cheese.
  • In a separate bowl, mix the corn muffin mix according to the package directions. Spread the batter evenly on top of the beef mixture.
  • Bake for 25-30 minutes or until the topping is golden brown.

1 pound lean ground beef
1 yellow onion
2 cloves garlic, chopped
1 (14.5 ounce) can stewed tomatoes
1 (15 ounce) can creamed corn
½ cup milk
1 (6 ounce) can black olives, chopped
2 eggs
1 cup cornmeal
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large skillet, cook meat, onion and garlic until done. Drain fat.
  • Add tomatoes and creamed corn. Add milk, olives, eggs and cornmeal. Bring to a boil.
  • Pour into a greased 2 quart casserole dish. Bake at 350 degrees F (175 degrees C) for 25 minutes. Put the cheese on top for the last 5 minutes of baking.

1 (15.25 ounce) can whole kernel corn, drained

¼ cup vegetable oil
1 tablespoon chili powder
1 teaspoon ground cumin
1 cup milk
½ cup yellow cornmeal
2 eggs
1 (6 ounce) can black olives, drained

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Butter an 8-inch baking or casserole dish.
  • Heat a large skillet over medium-high heat. Cook and stir ground beef and onion in the hot skillet until beef is browned and crumbly, 5 to 7 minutes. Mix in corn, tomatoes, oil, chili powder, and cumin. Bring to a boil; remove from heat.
  • Combine milk, cornmeal, and eggs in a large bowl. Stir in meat mixture. Mix in olives. Pour into the prepared baking dish.
  • Bake in the preheated oven until golden and set, 50 to 60 minutes; mixture should not be mushy.

1 lb ground beef
1/2 sweet onion
1 hot cherry pepper
1 can(s) diced tomatoes, 14.5 oz
1 can(s) tomato paste, 6 oz
1 tsp garlic powder
1 tsp black pepper
2 Tbsp dried oregano
1 tsp cumin
1 1/3 c flour
3/4 c yellow corn meal
1/3 c cane sugar
2 tsp baking powder
1 c milk
1/4 c butter, melted
1 egg
1/3 c monterey jack cheese

Steps:

  • 1. Heat oven to 350 degrees. Clean and chop onion; clean and dice the hot pepper ( I use cherry hot poppers, but any type of hot pepper will work, depending on your tastes). This ingredient can be omitted. Brown the ground beef, onion and pepper in a medium skillet over medium high heat until nicely browned and meat is no longer pink. Drain excess fat and add to the beef the tomatoes, tomato paste and spices. Mix well and press into a buttered 11″ x 7″ baking dish. Set aside. Prepare the corn muffin batter: In a medium bowl, combine the flour, corn meal, sugar and baking powder. Add the milk, melted butter and egg. Mix well and spoon over the meat mixture. Top with shredded cheese. Bake at 350 degrees for 25 minutes or until topping is cooked through and lightly browned. 1 c chopped onion (1 onion)
1 c chopped green bell pepper (1 pepper)
15 oz can tomato sauce
1 can(s) whole kernel corn, drained
4 1/4 oz can chopped ripe olives
1 clove garlic
1 Tbsp sugar
2-3 tsp chili power
dash(es) pepper
1 can(s) black beans
1 1/2 c shredded cheddar cheese
TOPPING
3/4 c yellow cornmeal
1/2 tsp salt
2 c cold water
1 Tbsp butter or margerine

Steps:

  • 1. Cook meat, onion, and green pepper in a large skillet till meat is lightly browned and vegetables are tender. Stir in tomato sauce, corn, olives, garlic, sugar, the 1 teaspoon salt, chili powder, and pepper. Simmer 20 or 25 minutes, or until thick. Add beans and cheese; stir until cheese is melted. Turn into a greased 3 quart baking dish.
  • 2. Make cornmeal topper: In a saucepan; stir cornmeal and 1/2 teaspoon salt into cold water. Cook and stir till thick. Add butter; mix well. Spoon over hot meat mixture.
  • 3. Bake casserole in moderate oven (375) about 40 minutes, or until cornmeal topping is crusty and cooked through, unless you like it mushy. Serve with sour cream as garnish. Make this as spicy as you're in the mood for by substituting cayenne for chili powder.

Continue to whisk until the polenta begins to thicken, about 2 minutes. Add 1 teaspoon kosher salt. Reduce the heat so that the polenta bubbles slowly. Continue to cook, stirring occasionally, for 20 minutes. When done, spread a layer of polenta evenly in the bottom of each dish. Refrigerate for 30 minutes prior to baking. (This step can be done ahead; just refrigerate until ready to bake.)
  • Drain the diced tomatoes to remove excess liquid. Drain and rinse the beans. Chop ½ cup + 2 tablespoons cilantro.
  • In large bowl, mix together beans, tomatoes, ½ cup of the cilantro, 1 cup corn, ½ cup salsa, 2 teaspoons cumin, 1/4 teaspoon chipotle powder, 1 teaspoon oregano, and 1/2 teaspoon kosher salt.
