1 1/2 tablespoons butter
1 1/2 tablespoons olive oil
2 garlic cloves, minced
1 pinch dry crushed red pepper
2 bunches swiss chard, stems trimmed, leaves cut into 1/2-inch-wide pieces
1/2 lemon, juice of
salt

Steps:

  • Melt butter and oil in heavy large pan over medium-low heat. Add garlic and crushed red pepper.
  • Sauté until fragrant, about 1 minute.
  • Add swiss chard; stir to coat.
  • Cover and cook until tender (stirring occasionally) about 8 minutes.
  • Squeeze juice from 1/2 lemon onto chard.
  • Season to taste with salt.
  • Enjoy!

3 pounds red Swiss chard
1 tablespoon olive oil
4 thinly sliced garlic cloves
2 teaspoons sugar
1 tablespoon red-wine vinegar
Coarse salt and ground pepper

Steps:

  • Rinse Swiss chard well. Trim tough ends; slice stalks about 3/4 inch thick. Slice leaves about 1 inch thick.
  • In a Dutch oven over medium heat, warm olive oil. Cook garlic until fragrant, 1 to 2 minutes.
  • Stir in stalks; cook, stirring, until slightly soft, 5 to 6 minutes. Add half the leaves; sprinkle with 1 teaspoon sugar. Cover; cook until wilted, about 4 minutes. Add remaining leaves; sprinkle with another teaspoon sugar. Cover; cook, tossing occasionally, until leaves are tender, 8 to 10 minutes.
  • Uncover; cook until liquid has evaporated, about 2 minutes. Stir in red-wine vinegar; season with coarse salt and ground pepper.

  • Add the oil to a large saute pan with the garlic and red pepper flakes. Cook over medium heat until the garlic turns golden. Remove the garlic and discard. 2 medium onions, halved lengthwise and thinly sliced

  • Cut stems and center ribs from chard, discarding any tough portions, then cut stems and ribs crosswise into 2-inch pieces. Stack chard leaves and roll up lengthwise into cylinders. Cut cylinders crosswise to make 1-inch-wide strips.
  • Heat oil and butter in a large heavy pot over medium heat until foam subsides, then cook onions and garlic with 1/2 teaspoon salt and 1/4 teaspoon pepper, covered, stirring occasionally, until onions begin to soften, about 8 minutes. 2 lbs swiss chard, cleaned and coarsely chopped
3 tablespoons olive oil
2 garlic cloves, minced
1 teaspoon salt, to taste
1 teaspoon pepper, to taste
1 lemon, juice of

Steps:

  • Wash chard by gently submersing in cool water several times.
  • Remove the stems from leaves and chop stems into 1 inch pieces. Set aside. Stack the washed leaves and roll them in to a long scroll. Using a sharp knife, cut the scroll in quarters.
  • Heat a skillet or heavy dutch oven over medium-high heat, add the olive oil and chopped stems and saute for 5 minutes.
  • Add the garlic and saute for an additional 15-20 seconds.
  • Add the wet chard leaves, one handful at a time, stirring after each addition.
  • After all the leaves have been added, immediately cover the pan with a tight fitting lid and continue cooking over high heat for about 2 or 3 minutes. Uncover and cook just until most of the liquid has evaporated (another 1 minute or so).
  • Squeeze a couple of wedges of fresh lemon over prepared chard, season to taste with salt and pepper and serve immediately.

1 large bunch swiss chard or rainbow chard
1 Tablespoon extra-virgin olive oil (divided)
1 Tablespoon salted butter
1 medium onion (chopped)
2 cloves garlic (finely chopped)
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper (or more to taste)
2 Tablespoons water
1 Tablespoon balsamic vinegar (optional)

Steps:

  • Clean the swiss chard thoroughly by rinsing well with cold water to remove any dirt or grit. Separating the leaves from the stems and chop the stems into small pieces, while cutting the leaves into roughly 1- to 2-inch pieces.
  • Heat the oil and butter in a large pan over medium-high heat. Add the swiss chard stems, chopped onion, garlic, salt, and pepper. Cook, stirring frequently, until the onions and swiss chard stems have softened and the onions start to slightly brown, about 6-7 minutes.
  • Add the swiss chard leaves and the water, then cover and continue to cook for 2-3 minutes until the leaves have wilted. Remove the lid and continue to cook for another 2-3 minutes, stirring occasionally, until everything is tender. Stir in the balsamic vinegar.

1 bunch (12 ounces) Swiss chard or rainbow chard
2 garlic cloves
2 tablespoons olive oil
1/4 teaspoon kosher salt
1 pinch red pepper flakes
Fresh ground black pepper
2 tablespoons shredded Parmesan cheese (optional)
2 tablespoons toasted pine nuts (optional)

Steps:

  • Wash and dry the chard leaves. Remove the stems and roughly chop the chard (follow the instructions in How to Cut Kale). If you'd like, thinly slice the tender part of the stems and add that to the mix (discard the large tough parts of the stems; or you can discard the stems entirely).
  • Smash and peel the garlic cloves.
  • Add the olive oil to a large skillet and heat it over medium-high heat. Add the smashed garlic and chard and cook for 4 minutes, stirring frequently until wilted and bright green.
  • Remove from the heat and add the kosher salt, red pepper flakes. and several grinds of fresh ground pepper.
  • Discard the garlic cloves and serve immediately. If desired, serve with shredded Parmesan and toasted pine nuts.
