I never thought I could make my own Rustic Italian bread until I inherited this recipe. It's simple. You just need the ingredients, fork and a bowl. No fancy bread machine, or electric mixer. Just your hands.

2 cups of lukewarm water (you may not use all of it)
3 cups all-purpose flour, or (you can use Farina Tipo 00, Oat flour blend, or Wheat flour)
2 teaspoons granulated sugar
1 teaspoon salt
2 1/2 teaspoons of active dry yeast or a packet
1 Tablespoon of Olive Oil
1 Tablespoon of Sesame Seeds (optional for the top)

Steps:

  • Note: Preheat your oven to 375 degrees
  • There are 2 techniques that I will call out below that deal with where you add the sugar. There is one way where you add the sugar to the yeast and another where you add the sugar to the flour. I have used both ways and they both work for me.

The perfect size for one or two people when baked in two mini loaf pans. Eat one now and store one for later. Freezes very well. Tastes best when tightly wrapped and allowed to set overnight. I like to use walnut or coconut oil, but any neutral/mild tasting oil will do fine. There are variations listed below.

1 cup white flour
1 1/2 teaspoons baking powder
1 teaspoon salt
3/4 cup sugar
1 cup walnuts, chopped
1/4 cup walnuts, chopped (optional garnish)
1 egg
3/4 cup milk
2 teaspoons vanilla
2 tablespoons oil

Steps:

  • Preheat oven to 350°F - Spray two mini loaf pans or one 8x4 loaf pan.
  • Combine dry ingredients (except optional 1/4 cup nuts) in a med size bowl; set aside.
  • Crack the egg into a measuring cup and stir to break yolk.
  • Add milk up to the 3/4 cup mark; then add vanilla and oil.
  • Make a well in the flour mixture and pour wet ingredients into the dry ingredients.
  • Mix until combined. Don't over mix. If batter is very stiff add an additional tbsp milk.
  • Transfer batter to prepared pan(s).
  • Sprinkle on optional 1/4 cup chopped nuts and lightly press down so they adhere.
  • Bake for 38 minutes or until tested done.
  • Cool on a rack for 1/2 hour. While still warm, wrap well and let set overnight for best texture. Can be frozen.
  • Variations: Pecans/rum extract; Coconut/vanilla or coconut extract; Almonds/almond extract.

A warm, crusty rustic bread goes with just about any meal and it's so simple to make! Throw it together, let it rise, and you'll have a yummy bread that's ready for dinner in just a few hours' time. No bread pan needed!

3 cups warm water
2 ¼ tsp (1 pkg) active dry yeast
1 Tbsp sugar
6 cups (750 g) flour
3 tsp salt

Steps:

  • Mix water, yeast, and sugar in a large mixing bowl or stand mixer. Let sit for about 5 minutes until bubbly.
  • Add flour and salt. Mix until combined into a soft dough. (The dough should be slightly sticky to the touch, but not so that much comes off on your hands. If it's too sticky to handle, add ¼ cup flour at a time.)
  • Cover loosely with plastic wrap and kitchen towel. Let rise for 1-3 hours, if possible! I've run out of time before and let it rise for only 30-60 mins and it still works, but the longer, the better!
  • Preheat oven to 450°F and put a pizza stone or flipped-over cookie sheet in the oven to heat up.
  • Fill a baking dish with 2 inches of water and place on the bottom rack to create steam for an extra crispy crust.
  • Sprinkle flour on the counter, turn out the dough, fold on itself, divide in half and form it into 2 balls. Don't knead or handle it more than you need to. Add a little flour if it's too sticky.
  • Cut an X shape on the top of the balls with a sharp knife.
  • Place on a lightly floured pan, then place on top of the hot pizza stone or cookie sheet.
  • Bake for about 25-30 minutes or until golden brown and cooked through.

I love fresh bread, but complicated recipes that require 10 minutes of kneading aren't for me. This recipe couldn't be simpler. It's wonderful dipped in an olive oil dipping sauce, or also with fresh creamy chicken salad. It's adapted from a recipe in Flexible Fare by Sandra Rudloff. The prep time includes rising times.

2 1/4 teaspoons active dry yeast (1 package)
2 cups warm water (105 - 115 degrees)
1 teaspoon sugar
1 teaspoon salt
5 cups bread flour
1 cup chopped walnuts

Steps:

  • In a large bowl, sprinkle yeast over 1/2 cup of warm water and let stand for 5 minutes.
  • Stir to dissolve yeast.
  • Add remaining 1 1/2 cups water, sugar, salt and bread flour.
  • Mix at low speed until flour is thoroughly incorporated.
  • Note: dough will be sticky, not smooth.
  • Place dough in a large oiled bowl and turn to coat all sides with oil.
  • Cover loosely with a towel and set in a warm place to rise until double in size, about 1 1/2 hours.
  • Punch dough down.
  • Transfer dough to a lightly floured work surface, add walnuts, and knead lightly to eliminate air bubbles.
  • Cut dough into 2 pieces.
  • With floured hands, shape each piece into a 12-inch log.
  • Place logs on a parchment paper lined baking sheet a few inches apart and cover loosely with a towel.
  • Let rise for 30 minutes.
  • Meanwhile place pizza stone on lowest rack in oven.
  • When dough begins last rise, preheat oven to 400.
  • Pull the parchment paper off the baking sheet and transfer to the pizza stone.
  • (Or just bake on the baking sheet if you don't have a pizza stone.) Bake bread for about 40 minutes, or until it sounds hollow when tapped.
  • Cool on a rack.

Using wet hands, incorporate the salt and yeast by reaching under the edges of the dough and gently pulling it up and away from the sides of the bowl, then folding the dough to rest on top of salt mixture. Give the bowl 1/4 turn and repeat, until you've pulled and folded the dough over all the salt and yeast to cover. Next, pinch the dough into several segments between your first finger and thumb. Then repeat the folding process to bring the dough back together to one piece. Repeat this segmenting and folding a couple more times until the salt is well distributed.   • In a large mixing bowl, whisk the flours, salt, and yeast together until mixed. Stir in the water until a chunky, thick dough forms. If needed, add a few more teaspoons of water, just enough to get the dough barely wet throughout. If the mixture is too wet however, add a few tablespoons of all-purpose flour. Cover the mixing bowl with a cloth or plastic wrap and let it rest overnight (about 12 hours) at room temperature.
  • In the morning, preheat the oven to 450°F (230°C) and place a 4 to 6-quart heavy covered pot (cast iron, enamel or ceramic) inside, until you reach the desired temperature, or ideally for 30 minutes.*
  • While the oven is pre-heating, add the walnuts and dried figs to the bread. Gently reshape the bread to make sure ingredients are spread evenly.
  • Once the oven is hot, remove the covered pot, and carefully line with parchment paper (be careful, it’s hot!). Gently scrape the dough from the bowl, shape onto a ball with your hands and place in the pot (the dough will look a little bit sticky and messy but it’s normal, just let it be). Gently sprinkle some flour on top, and place in the oven with the lid on for 30 minutes. Remove the lid, and bake for another 10-15 minutes to get the outside crust golden brown and crispy.   • *No need to grease the bowl.* Stir the first 6 ingredients together in a large bowl. Stir in the warm water. The dough will be pretty sticky– don’t be tempted to add more flour– you want a sticky dough. Gently shape into a ball as best you can. Cover tightly with plastic wrap or aluminum foil. Set on the counter at room temperature (honestly any normal room temperature is fine!) and allow to rise for 12-18 hours. The dough will double in size, stick to the sides of the bowl, and be covered in air bubbles.
  • Turn the dough out onto a lightly floured work surface and, using lightly floured hands, shape into a ball as best you can. Doesn’t have to be perfect! Transfer dough to a large piece of parchment paper. (Large enough to fit inside your pot and one that is safe under such high heat. I use this parchment and it’s never been an issue.)
  • Using a very sharp knife, gently score an X into the top. Cover dough lightly with plastic wrap and leave alone for 30 minutes.
  • During this 30 minutes, preheat the oven to 475°F (246°C). (Yes, very hot!) Place your dutch oven (with the lid) or heavy duty pot inside for 30 minutes so that it’s extremely hot before the dough is placed inside. After 30 minutes, remove the dutch oven from the oven and carefully place the dough inside by lifting it up with the parchment paper and sticking it all– the parchment paper included– inside the pot.
