100g] 4ogs sugar
100g] 4ogs butter or margarine
150g] 6ogs plain flour
2 eggs
a half tsp of baking power
1 tsp vanilla extract
1 tsp of water
chocolate chips
Icing
icing sugar
food colouring
decorations

Steps:

  • Put sugar and butter into a bowl and mix until soft and creamy using a wooden spoon or a eleciric mixer.
  • Add flour and then add the eggs and then add the vanilla extract
  • Add a teaspoon of the baking powder and then add a teaspoon of water
  • Put in full tablespoons of the batter in the tin
  • Heat oven to 180 degees
  • takes 20 minutes to cook

1 cup white sugar
1 ¾ cups self-rising flour, divided
4 eggs, beaten, divided

Steps:

  • Preheat oven to 355 degrees F (180 degrees C). Grease 24 fairy cake cases (muffin cups) or line with paper liners.
  • Beat butter and sugar together in a large bowl with an electric mixer until light and fluffy. Add 1/2 of the flour and 1/2 of the eggs; whisk until smooth. Add remaining flour and eggs and whisk until batter is light and fluffy; spoon into prepared muffin cups.
  • Bake in the preheated oven until golden, 10 to 12 minutes.

Queen's Cake, a dense buttery pound cake studded with currants and bursting with citrus flavor, is one of Colonial Williamsburg's most popular desserts!

1 cup (2 sticks) salted butter, softened at room temperature
1 cup granulated sugar
5 large eggs, at room temperature
Zest from 1 orange
Zest from 1 lemon
2 cups plus 1 tablespoon all-purpose flour, divided
½ teaspoon baking powder
½ teaspoon cinnamon
¼ teaspoon salt
2 cups dried currants

Steps:

  • Grease and flour a 9 x 5-inch loaf pan. Set aside.
  • Preheat oven to 325 degrees F.
  • In a large bowl, cream together the butter and sugar. Add the eggs, one at a time, beating well after each addition. Add the lemon zest and orange zest. Mix well.
  • Sift together 2 cups of flour, baking powder, cinnamon and salt. Gradually add the flour mixture to the egg mixture.
  • Toss the currants with the remaining 1 tablespoon of flour. Fold the currants into the batter.
  • Transfer the batter to the prepared loaf pan. Bake for 1 hour, 20 minutes - 1 hour, 30 minutes or until a toothpick inserted in the center comes out clean. Tent with foil during the final 30 minutes if the top of the cake starts to get too brown while it's baking.
  • Cool in the pan for 10 minutes, and then transfer to a wire rack to finish cooling. Slice thinly and serve!

1 cup dates, pitted and chopped
¼ cup butter, softened
1 cup white sugar
1 egg
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
½ cup chopped walnuts
1 cup flaked coconut
⅔ cup packed brown sugar
6 tablespoons butter
¼ cup cream

Steps:

  • Pour boiling water over dates in a small bowl, and let stand until cool.
  • Measure flour, baking powder, soda, salt, and nuts into a small bowl. Stir to mix.
  • Cream 1/4 cup butter or margarine and white sugar together in a mixing bowl; beat in egg and vanilla. Add flour mixture to creamed mixture in three parts alternately with date mixture in two parts, beginning and ending with dry mixture. Spread batter into a greased 9 x 13 inch pan.
  • Bake at 350 degrees F (175 degrees C) for 30 to 40 minutes, or until an inserted wooden pick comes out clean.
  • To Make Topping: Mix coconut, brown sugar, 6 tablespoons butter and cream in a small saucepan over medium heat. Boil for three minutes. Spread over warm cake, and brown under broiler.

  • Preheat the oven to 200 degrees celsius. Then line two 12 hole cake tins with cake cases.
  • Put the butter and sugar in a mixing bowl. Sift the flour into the same bowl and crack the eggs into the mixture. Add the copped up glace cherries and then mix with electric whisk.
  • Divide into cake cases don't fill them up to full because they rise when they cook.Cook for 10 minutes then check them. Cook for another ten minutes or until done. Put on a wire rack to cool for 5 to 10 minutes before eating.
