Time 45m

Yield 4

Number Of Ingredients 9

4 large potatoes, peeled and cut into strips
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon ground black pepper
1 cup milk
1 egg
1 quart vegetable oil for frying
1 ½ pounds cod fillets

Steps:

  • Place potatoes in a medium-size bowl of cold water. In a separate medium-size mixing bowl, mix together flour, baking powder, salt, and pepper. Stir in the milk and egg; stir until the mixture is smooth. Let mixture stand for 20 minutes.
  • Preheat the oil in a large pot or electric skillet to 350 degrees F (175 degrees C).
  • Fry the potatoes in the hot oil until they are tender. Drain them on paper towels.
  • Dredge the fish in the batter, one piece at a time, and place them in the hot oil. Fry until the fish is golden brown. If necessary, increase the heat to maintain the 350 degrees F (175 degrees C) temperature. Drain well on paper towels.
  • Fry the potatoes again for 1 to 2 minutes for added crispness.

Yield 4

Number Of Ingredients 8

2 egg whites
2 tablespoons cool water
¾ cup yellow cornmeal
¾ cup all-purpose flour
1 teaspoon ground black pepper, or to taste
1 ½ cups vegetable oil, or more as needed
4 (6 ounce) fillets flounder
1 pinch salt to taste

Steps:

  • Stir egg whites and water together with a fork in a wide, shallow bowl. Mix cornmeal, flour, and pepper together with a fork on a plate.
  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C).
  • Dip each flounder fillet into the egg white mixture and press into the cornmeal mixture to coat completely. Gently toss between your hands so any cornmeal that hasn't stuck can fall away. Place fish onto a plate while preparing the rest of the fillets; do not stack.
  • Carefully put fish into the hot oil and cook until golden brown, 3 to 5 minutes per side. Drain fillets on a plate lined with paper towel; season with salt.

NEW ENGLAND BAKED HADDOCK

New England Baked Haddock image

New England baked haddock recipe is one of the most delicious fish dishes you will ever have, yet it is so simple! With only three ingredients and 5 minutes of hands-on time, you will have an elegant, crowd-pleasing meal.

Provided by Elizabeth Lindemann

Categories     Seafood

Time 20m

Number Of Ingredients 5

1-1.5 lbs. haddock (patted dry (or cod))
1 cup plain breadcrumbs (or seasoned, see note)
6 tablespoons salted butter (melted (see notes))
kosher salt and black pepper
lemon wedges and fresh parsley (for serving (optional))

Steps:

  • Preheat oven to 350 degrees.
  • Put a spoonful of the melted butter in a baking sheet or dish and spread to coat the bottom.
  • Combine the bread crumbs (1 cup) with the rest of the 6 tablespoons of melted butter.
  • Salt and pepper both sides of the fish liberally (I used about 1 teaspoon kosher salt and 1/4 teaspoon pepper), and lay in the buttered baking dish.
  • Spread bread crumbs - all of them - evenly over the top of the fish. I use my hands to sprinkle it on (it won't really stick like traditional breading - it's more like a topping).
  • Bake for 15 minutes, or until fish is cooked thoroughly (and flakes easily).
  • Serve with a squeeze of lemon juice and a garnish of fresh parsley, if desired.
